Pork Tonkatsu - KETO DIET

Ingredients;
2 cups watermelon, cut into cubes
2 cups cherry tomatoes, halved
2 cups baby arugula
¼ cup parsley leaves
¼ cup extra-virgin olive oil
2 tablespoons Dijon mustard
1 tablespoon fresh lemon juice
4 lemon wedges
Black pepper and salt, to taste
2 large eggs
2 cups panko breadcrumbs
4 (4-ounce) boneless pork chops, 1/8-inch-thick
6 tablespoons vegetable oil

Preparation;
Step 1: Toss watermelon, tomatoes, arugula, and parsley in a bowl.
Step 2: Add olive oil, lemon juice, 1 tablespoon mustard, salt, and black pepper to the salad.
Step 3: Mix well and refrigerate the salad until pork chops are ready.
Step 4: Beat eggs with 1 tablespoon mustard in a shallow bowl.
Step 5: Mix panko with black pepper and salt.
Step 6: Rub the pork chops with black pepper and salt, then dip them in the eggs.
Step 7: Finally, coat the pork chops with the panko mixture.
Step 8: Set a suitable large skillet over medium heat and add cooking oil to heat.
Step 9: Cook the pork chops in batches for 2 minutes per side until golden- brown.
Step 10: Serve warm with the salad.

Cheesy Turkey Meatloaf - Keto Diet

Ingredients;
2 pounds ground turkey
1 cup milk
1 cup Italian seasoned bread crumbs
2 large eggs
1 teaspoon salt
¼ teaspoon pepper
¾ pound Colby cheese, cut into cubes
½ cup ketchup

Preparation;
Step 1: At 400ºF, preheat the oven.
Step 2: Add turkey, eggs, breadcrumbs, black pepper, salt, and milk to a bowl.
Step 3: Stir in cheese cubes, mix and spread the mixture in a loaf pan.
Step4: Top the meatloaf mixture with ketchup.
Step 5: Bake the turkey meatloaf for 1 hour in the preheated oven.
Step 6: Slice and serve.
