I usually like to have the first day more or less planned, at least in terms of a couple spots to see, just to kinda get my head around the new city, so to speak. Other than that, I keep notes on spots I what I want to do, open hours, best times to go, etc. I usually take cities in by neighborhood or similar each day, and just keep in mind what on my list in that area as I wander around.
