October 2015 - November 2015 (2 months) I was in Tokyo basically for holiday, visiting some friends and exploring new food and wine format.
Amazing country and super quality food. Great experience, good to improve my outlook on this business.
Start up and roll out Tuscany Restaurant pilot in Shanghai at Food Business Consultancy
March 2015 - October 2015 (8 months) Setting up a new business model format as CUCINA ITALIANA TOSCANA, completely develop by me and
my brother company in Italy. The format The idea is to bring the customer to visit a small corner of Tuscany, a SHOWCASE of unique products, wine, cucina pura, rare materials, contact with the flavours, direct knowledge of suppliers, familiar environment, a MADE IN TUSCANY of excellences with quality, design, innovation, tradition and social. A unique meeting point. Tuscany by you. During these 6 months I was
in charge of: setting up completely the location, design the kitchen equipment layout, work with architect designer to setup the environment, importing decorations from Italy, hiring Italian executive chef in Italy, hiring kitchen team and waiters here in Shanghai, hiring the restaurant manager, creating the menu (dinner, lunch, all day), fixing HACCP standard rules, make the selection of food and wine suppliers according to our standard, training the staff, making marketing actions on wechat and social western media, define the right POS solution, defining sales reports and budget analyse.

January 2014 - January 2015 (1 year 1 month) Il Falconiere it is part of the prestigious association of Relais & Cha#teaux. I was working for 1 year project,
setting up the new opening as F & B manager and marketing executive.
