baking always feels like magic. i tap into the same motions that my ancestors did, from my great grandmother to some of the first humans to figure out how to harness yeast and salt and wheat. feeling it stretch and fold under my palms, knowing intrinsically when its had enough kneading. it feels so spiritual.
