I know a lot of people like to refer to her as Birdetta since they see Birdo as her deadname but I think this has actually been retconned. In the current main universe of Mario games she always introduces herself as Birdo and she's never shown to have a problem with being referred to as such.
Though often ignored or handled poorly, her trans identity is still very much a part of her character and she uses she/her pronouns (at least in Nintendo of America). Basically you can call her either Birdo, Birdetta or (as pictured above) "Mama" and it'll be fine.

Comparison of Daisy's in-game models from Mario Party 3 (2000), Super Mario Party (2018), and Mario Party Superstars (2021). I know her tan just came back in Mario Golf: Super Rush, but seeing it in this game as well means its most likely here to stay and I'm just so happy about it. 💛🧡💛
