Non-cooking update. Over my 10-day vacation, I did about 25% of what was planned and 75% relaxed. I walked at sunset, snuggled kitties, did a treasure hunt with @jforstie that took us to All The Parks (including Kubota Garden, location of the world’s fattest squirrel, and Discovery Park), got great kitchen gifts from @gatoarrogante and @dan_yell.e and great slippies from @jforstie, and had a great weekend with @ty_dolla_cosine walking in the rain and eating @mollymoonicecream! I know you’ll all be shocked, but I made a pie. An eggnog custard pie! With freshly grated nutmeg. NOMNOMNOMNOMNOMNOMNOM It was good for Christmas, but obvi won’t be on regular rotation. It’s lighter than a cheesecake, and maybe I wanted a heavy, dense cheesecake? But super tasty. I made mine with an almond milk eggnog but I don’t think that caused any issues. Still used cow’s cream for incorporating the whipped cream. So glad to use the last of my sweet, spiced pie dough from Thanksgiving! Maybe next time I’d decorate with some cranberry sauce or something. But for now, this served its purpose. Ok, so the lemon-saffron pistachio traybake was HULLUH GÜD, but I forgot to take a pic when fresh outta the oven so these are leftovers. #SorryNotSorry Then theres me just, ya know, BROWSING the squash section, just snickering to myself/admiring the audacity of these squashes. Then I made some miso chocolate chip cookies that, guess what, don’t taste any different! (The dough tasted caramel-y/miso-y, and fresh out of the oven they tasted caramel-y/miso-y, but not a day later. 🤷🏻‍♀️) And then I made my first eve GOOD mac’n’cheese with a roux, a lil unexpected cheddah, leftover mexican shreds, cream, pepper, and nutmeg. I never understood the whole “breadcrumbs on top” thing, but i wanted to make it more legit. Lemme tell you what, get you some garlic croutons, a baggie, a rolling pin, and take out your anger on em! Baby’s first tart! Ombre rosette ginger pear custard tart in my 9” tart pan. (Slightly amended from @nytcooking recipe.) Should have lined it with parchment to prevent leaks from the custard, but it is lightly spiced with vanilla and ginger and a little treat. Not heavy at all or too strong in flavor. (I STILL have one extra pie crust to use from the pie dough debacle from Thanksgiving.) And I just made a shit ton of sweet and spicy and savory-salty pecans. Must. Not. Eat. All. The. To continue #squashapalooza2020, I roasted red kuri squash and butternut squash and mixed half of each to make this @nytcooking spiced squash pie with candied ginger and baby’s first Swiss meringue! (Think like pumpkin pie but better IMO.) The meringue added too much sweetness, but I needed to fill up the crust as the pie custard didn’t rise as much as I thought it would. Swiss meringue is made by slowly adding sugar while vigorously whisking egg whites in a double boiler until 160° and then beating til fluffy. Then tonight my sweet tooth succumbed to some gluten-free chocolate chip cookies. I just like the crispy chewy cookie that you get with almond flour better than all-purpose flour. “WUT MOMTHER?!?” —Cats, a series I sometimes feel@like they’re teenagers ans I’m just so tickled by them but they’re so surly and think I’m too uncool to be seen with but then I’ll have one snuggle on my lap for an hour and feel the world is right and OMG I NEED TO GET OUT MORE. Also, Nala has gotten lörge since living with me. I’m working on fattening up Lily, so there’s really no answer to slimming Nala down if food must always be present. Three very different recipes this week: (1) @nytcooking Houseman’s Roasted Kabocha Squash salad with pickled currants, sumac, fennel seed, cilantro, lime, and feta. So. Many. Flavors! (2) Then baked squash seeds (because duh I cooked all the squash this week) some plain and some with chili powder and berbere spice (look it up!). A lil thicker than pumpkin but still good. Must remember to keep in an airtight container in the future or they absorb the moisture from the environment and don’t stay crisp. (3) And last but not least, @eatingwell mag’s double pumpkin cream roll with pecans and crystallized ginger. It was good but not knock your socks off. Not sure if worth the trouble but it was still tasty. Not sure what to alter tho! And then, as inspired by @xastris, shots of my #shitshowkitchen! This is AFTER some clean-up also. Love looks like three different pet-safe heaty pads, most surfaces covered in blankets and pillows for old bones and discovering in fact no that new food does NOT sit well in the tummy, gifting a beautiful draecena you scored for $20 bc they won’t leave it alone and you discovered it’s poisonous, getting up early for water faucet streaming and wet food feedings, trying every damn expensive wet food under the sun just to get this one to eat enough calories without getting sick, getting stuck on the couch when she’s on your lap and you don’t want to move her, late night and early morning snuggles, learning new ways to wake her without startling her as she loses her heating, and (this week) having her howl while you gently clean and apply ointment and attempt (and fail) at wrapping the hot spot on her paw. Lily is the last remaining survivor of my trio that I’ve had since January 2003 (she came to me at 3 months old, so I’m celebrating her 18th birthday this month!). Shalon and Clancy in June 2001 and left in March 2017 and May 2020, respectively. I haven’t done many kitty updates lately, but Lily is getting smol and Nala is YUUUGE. Trying get a cat with IBS/cancer to eat more while getting the other one to slim down has NOT been easy. I do what I can! So grateful that Lily is still with me. After her (sort of?) diagnosis in July, I am shocked and grateful she’s still acting fairly healthy and not in pain. At 18 years old she is ornery and demanding but also my snuggle buddy. At 10, Nala is learning to snuggle more too. My genius butt made this barbacoa beef in the Instapot, but you can’t see it under all the damn taco toppings. Just trust it was worth it. I still have a full pound in the freezer for next week. YUSSSS. Also, @nytcooking berry clafoutis for breakfast (I know, I’m a broken record but it’s soooo easy and good!) and pumpkin cookies with orange zest and brown butter maple frosting from @nytcooking (I added the 🍁 syrup).
