Noticed how Luffy keeps saying “I’m going to meet/see Sanji” before the Luffy vs Sanji confrontation in WCI. Only after the confrontation does he say “I’m going to get Sanji back”. Which reveals things from both Luffy and Sanji’s side because:

Luffy doesn’t force his nakama to travel with him. He wants to see Sanji because he wants confirmation, instead of speculating whether Sanji was forced/had something going on (what Nami, Chopper and Brook think), or made a decision on his own part (what Zoro thinks). No, after what happened with Sabo, Luffy doesn’t presume anything about his friends’ happiness anymore. He wants to ask Sanji himself, and he’s made it clear that he’d let Sanji go if the marriage is really what Sanji WANTS.

SANJI DOES NOT WANT TO GET MARRIED. Even if Pudding never betrays him and he joins the Charlottes like intended, he will NEVER be happy. What he told Pudding, and what he convinces himself to believe, is all done just so he wouldn’t be dragging an “innocent” girl into his misery. He did all he could to serve Pudding because he thinks that if he could make her happy, if he could make someone happy, then his life would still have value after abandoning his dream and his family.

Sanji vs Luffy is confirmation for Luffy about Sanji’s intentions. He sees that Sanji is hurting. Sanji wants to go back with them. That’s why he starts saying he will “take Sanji back” from then on. The fight was the turning point upon which Luffy’s mission changed from “meet Sanji” to “rescue Sanji”.
