Snowy days are hard! I am stuck in my condo, trying to keep my healthy routine and resisting the urge to cheat. This morning I made my #BobsRedMill high fiber oat bran oatmeal with blueberries and banana. This is technically only 1 serving prepared, but I broke it down into 3 mason jars so I can try to trick myself into thinking I'm eating more! One way that's helped me lose weight is having a salad BEFORE every dinner. I serve it alone, and finish it and wash the dish before eating my dinner. The salad is simple- 2 handfuls of baby spinach salad, 1/2 cut up cucumber, red wine vinegar, and some salt, pepper, and crushed red pepper. About 50 calories and helps me control my dinner portions. Wanted to track my #fitbit Charge HR calories to see if they would match up with the treadmill. 304 calories from Fitbit, 334 from the treadmill- not a bad comparison considering I didn't enter my weight into the treadmill and didn't use the heart rate monitor on it, either. What a great blizzard day pretending to be a chef! Sweet Potato Spinach and Onion Quiche! Super easy to make, too. 3 small sweet potatoes sliced as the "crust" and then a mixed of 4 eggs, 3oz low fat shredded mozzarella, 2 cups cooked spinach, 1/2 jar fried onions, and some crushed garlic. Beet chips! I took my #wholefoods organic beets, peeled and rinsed them, sliced them with my cheese slicer, then baked them in the oven at 375 degrees for about 20 minutes (flipped them halfway). The only thing I added was some Olive oil spray and some salt and pepper! So good!! #yum #health #beets #stainedhands #90caloriesperbeet
