Round two with the crepes went much better😂 now I know what the consistency is supposed to be. Tried out a apple and sweet potato filling, which was good, but a berry or citrus based one would be better suited to summer. Not quite perfect, but loads better that round 1.

SouthWestern Wraps Bowl Here we have a sweet potato hash, cilantro & lime brown rice, chipotle chickpeas with salsa, both romaine lettuce and toasted corn tortillas for wraps, a dash of hot sauce, and a lime cauliflower cream sauce😅 A minted cole slaw probably would have helped amp down the heat because I maybe got carried away with the chipotle and jalapeño peppers😏 To make this super easy on your wallet, I recommend growing your own herbs and as many of the ingredients as possible. I grew my own tomatoes for the salsa and traded herbs (and a future portion of my squash crop) for the romaine lettuce, three peppers, and cauliflower- so Herban Gardening and Trading 😉 made this super easy and fresh😋 #veganfood #veganfoodie #veganeats #vegan #chickpeas #vegangarden #southwesternwrapbowl #vegansouthwestern #buddahbowl #veganbuddahbowl #southwesternbuddahbowl

I don't think anyone can honestly guess how much I love chickpeas. Sometimes I'll get really creative and make filets or sausages with them, other times (like last night), I'll just toss them in with a red gravy I'm making and call it a day😃 I like them because they're easy to work with and easily take on whatever flavors you want them too... without getting "too much like flesh". Some quick chickpea benefits: full of iron, calcium, and fiber. Helps control diabetes and reduces cholesterol while still loading you up with plenty of protein. And, coming in with the dried versions, it's super affordable when compared to the cruel "alternatives" available in most grocery stores and markets. #chickpeas #vegan #veganeats #veganfood #veganfoodie

This is probably one of my favorite/easiest sandwiches ever- #chickpea salad with Romaine lettuce and spinach on toasted bread. Chickpea salad is super easy- you mash chickpeas, mix with some #JustMayo (or other vegan mayo), dill, salt, pepper, nooch, and a little #OldBaySeasoning. Some dill pickles work too and the OBS really adds a touch of seafood flavor so if you're out of nori, you can totally have a subtle tuna vibe without having harmed anyone at all. Some people like lemon juice to help cut the creaminess of the mayo, but I think it's quite good as is since I'm drinking limeade so another citrus flavor isn't needed. You can also swap ingredients and add in a touch of soy sauce with whatever spices you like to make it more chicken-like. #vegandinner #vegan #veganfood #vegansandwich #crueltyfree #crueltyfreefood

What vegans eat.... for breakfast! Chickpea and vegetable frittata, potatoes o'brien, Tempeh faking' bacon, and fresh blood oranges💕 a side of iced green tea and breakfast is ready. One of my friends recently shared an awesome pic of a fried zucchini po boy they recently had, so I decided to try making a similar style sandwich using things I already had on hand. After washing and cutting the zucchini into easy to handle planks, I dredged them in a water, (vegan) hot sauce, mustard, and warm water mixture before breading them in an easy Cajun-style flour mix before baking at 350*f, 10 minutes each side or until the breading was golden brown. Dress with an easy remoulade, cole slaw and pickles on a bit of toasted bread and you're solid. #veganfoodie #vegan #veganpoboy #veganfood
