Self Care During Exams
Hello lovely Mawrters! Here are a few food themed self care tips to get you through the end of the semester!
1. Remember to eat!  It’s hard to stay focused when you are hungry and you gotta keep your body fueled.
2. Try to keep a regular meal schedule.  Allow your meals to be a time of relaxation and a break from work. Use it as a chance to enjoy some time with friends.
3. Grab fruit, carrot sticks, cereal, and other healthy snacks to go to snack on while you work.
4. Feel free to reward yourself with a cookie or some other treat when you check something off your ‘Done is Good’ list!
5. We believe in you.  You got this.  Done is good, good is extra. Good luck everyone!

Take your brunch to the next level by making this easy and delicious BLT!
Cut whatever length of baguette you want and toast it.
Add bacon
Add arugula
Add tomatoes
Add red onions
Drizzle olive oil onto both sides
Add herbs de provence to both sides
Enjoy!

Pho Night Noodle Stir-fry
Pho (pronounced ‘fuh’) night is the best night at Erdman because there are noodles to make stir fry! The trick to this dish is getting more broth than you think you might need and allowing it to simmer down, creating a thicker sauce and allowing the flavors to cook into the noodles.
Main Ingredients:
1 bowl full of noodles
About 2-3 ladle-fulls of broth (I prefer vegetable, feel free to use any of them)
Green onions
Shredded carrots
Red onions
Edamame
Anything else you want in it!
Steps:
First, saute the red onions on high heat in olive oil until they start to brown or get soft
Add carrots, edamame and any other vegetables
Pour some of the broth into the pan and allow it to simmer (This will cook the carrots and other vegetables)
Add a splash of soy sauce and a little sesame oil
Allow  to simmer until the carrots are soft
Add noodles and the rest of the broth and stir
Add more soy sauce
(Optional) Add a splash of orange sauce or schezuan sauce for a kick
Add a dash of sesame seeds, garlic powder, and ginger
Continue to stir, allowing the sauce to simmer until there is little liquid left.
Serve and enjoy!

Next Level Guacamole
Now that guacamole is back at Haffner, its time to take it to the next level
Mix equal parts guacamole and Pico de Gallo
Add a dash of cumin
(Optional) add some red pepper flakes to add a spicy kick
Mix and enjoy!

Wow, this is a great blog! It's been on my mind for a while now, I'll be sad to miss the good food when I'm gone. Would you happen to know the recipe for strawberry shortcakes that Erdman has occasionally? They're really good! ^_^
I do not work in either of the dining halls, so I have no idea what their actually recipes are. This blog only exists to provide alternatives to what they typically serve by mostly basing the ingredients off what can usually be found regularly in the salad, sandwich, and pasta bars. I’m sure if you look online you would be able to find a good shortbread recipe and acquire the strawberries & syrup and the whipped cream at most stores. However, if you are ever in Erdman for brunch and are craving a strawberry shortcake, you could try putting a buttermilk biscuit in a bowl and covering it with the strawberries and syrup that’s next to the yogurt. Instead of whipped cream you could try using ice cream. It may not be as good, since the syrup is not the same thickness and the biscuits don’t have the same flavor as shortbread, but it is an alternative option.

In response to the person who asked about the strawberry shortcake--it's Sara Lee pound cake. It comes in foil tins and we literally dump it out onto a cutting board and slice it. The strawberry topping is just sweetened strawberries.

Gluten-free french toast!
Have you been missing out on french toast because Erdman only serves the glutenous kind? Here's your 10-minute solution! Can be made dairy free by using soy milk and substituting oil for animal butter. Ingredients: Your favorite gluten free bread from the gluten free room One whole egg One scant half mug of milk Cinnamon Butter or oil for the pan (if desired) a few drops of vanilla Cook on 1200 watt heat. Melt butter or pour small amount of oil into pan. Place bread in pan, fry on either side until golden brown. While bread is browning, beat one egg in a soup bowl. Beat milk in until the bowl in almost full. Add a few drops of vanilla if desired. Once bread is golden brown, add egg/milk mixture on top. Make sure that the bread gets egg/milk mixture on both sides by turning the bread frequently until the mixture solidifies a bit, then turn only occasionally to dry the bread. Top with cinnamon and/or syrup as desired!

Blueberry-banana spinach smoothie.
This is packed with nutrients--a great addition to the day for an energy boost. 
Grab your metal blender cup. Grab a few ice cubes.  Peel a banana and  break it up into pieces, adding it into the cup.  Put in one generous spoonful of plain yogurt, and two spoonfuls of blueberries from the dessert bar.  
Head to the salad bar and put in a generous tong-ful of spinach, and some sunflower seeds (if you want).  Blend until smooth.

Fancy lunch sandwich.
Take two slices of whole wheat.  Head to the salad bar and spread one slice of the bread with hummus and add some gorgonzola from the salad bar.  Layer with cucumbers, spinach, and even beets if you are feeling ~risky~.
