A tasty vegetarian panini with squishy portabella mushrooms, tasty pesto sauce, and melted mozzarella cheese pressed between two pieces of crusty ciabatta bread.
Ingredients: 2 large portabella mushroom caps, sliced. 4 slices of ciabatta bread. 1/4 cup pesto sauce. 1/2 cup shredded mozzarella cheese. 1 tablespoon olive oil.
Instructions: Preheat a panini press or grill pan over medium heat. Brush olive oil on both sides of the mushroom slices. Grill the mushroom slices for 3-4 minutes per side until tender. Spread pesto sauce on one side of each ciabatta slice. Layer grilled mushroom slices on two slices of bread. Sprinkle shredded mozzarella cheese over the mushrooms. Top with the remaining bread slices to form sandwiches. Place the sandwiches in the panini press or grill pan and cook for 4-5 minutes until golden and the cheese is melted. Remove from heat, slice in half, and serve hot.

This Lentil Hummus is a delicious and nutritious twist on traditional hummus. Made with protein-packed lentils, it's perfect for snacking or as a healthy dip for parties.
Ingredients: 1 cup dried lentils, rinsed and drained. 2 1/2 cups water. 3 cloves garlic, minced. 1/4 cup tahini. 1/4 cup fresh lemon juice. 2 tablespoons extra virgin olive oil. 1 teaspoon ground cumin. 1/2 teaspoon paprika. Salt and pepper to taste. Chopped fresh parsley, for garnish.
Instructions: In a medium saucepan, combine lentils and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until lentils are tender and most of the liquid is absorbed. Drain any remaining liquid from the lentils and let them cool slightly. In a food processor, combine the cooked lentils, minced garlic, tahini, lemon juice, olive oil, ground cumin, and paprika. Blend until smooth and creamy. Season the lentil hummus with salt and pepper to taste. Adjust the seasoning as needed. Transfer the hummus to a serving dish, drizzle with a little extra olive oil, and garnish with chopped fresh parsley. Serve with pita bread, vegetables, or crackers. Enjoy!

Put almond flour, coconut flour, melted coconut oil, maple syrup or agave nectar, chopped pistachios, orange zest, vanilla extract, and a pinch of salt in a bowl. Mix the ingredients together. Mix until you get a dough. Take a tablespoon of dough and roll it into balls. Then, use your palm to gently flatten the balls to make cookies. Put the cookies on the baking sheet that has been prepared. Put it in the oven for 10 to 12 minutes, or until the edges turn golden brown. Take it out of the oven and let it cool for 5 minutes on the baking sheet. Then, move it to a wire rack to finish cooling. Have fun with these tasty Pistachio Cranberry Orange Cookies!
