What's everyone having for dinner
My daughter discovered Lemon8 a few weeks ago and texts me recipes nonstop. Long story short, I'll be sharing as often as my memory allows. Here's what's for dinner on this rainy Kentucky Thursday.
Stuffed Shells
Ingredients:
Jumbo Shells
Your choice of pasta sauce
Ricotta cheese
Shredded mozzarella cheese
Salt
Pepper
Parsley flakes
2 eggs, beaten
Parmesan cheese
Let's cook:
Preheat oven to 350. Get some water boiling on the stove. Once it's come to a full boil, add the shells. Cook uncovered for 15 minutes. Meanwhile, let's make the filling. Measurements aren't my thing but I'm gonna try. Beat two large eggs in a mixing bowl. Add salt and pepper to your liking. Add 1 tablespoon of parsley flakes. Use about half of the ricotta cheese. Add 2 handfuls of mozzarella. Finally add about one handful of Parmesan. Mix well. Cover and either sit aside or refrigerate until shells are done cooking. Once they're ready, drain the shells. Add as much filling to each as you prefer. Place in glass pan or on baking sheet. Pour sauce and more Parmesan as s you choose over top.
Cook for 30 minutes.
