A quick and flavorful chicken curry made effortlessly in a pressure cooker. Perfect for a weeknight dinner with a kick of spice!
Ingredients: 1.5 lbs chicken thighs, boneless and skinless. 1 cup diced onions. 1 cup chopped tomatoes. 1/2 cup plain yogurt. 2 tablespoons vegetable oil. 1 tablespoon ginger-garlic paste. 1 teaspoon cumin powder. 1 teaspoon coriander powder. 1/2 teaspoon turmeric powder. 1 teaspoon chili powder adjust to taste. 1/2 teaspoon garam masala. Salt to taste. Fresh cilantro for garnish.
Instructions: Heat vegetable oil in the pressure cooker on saut mode. Add diced onions and saut until golden brown. Stir in ginger-garlic paste and saut for 1-2 minutes. Add chicken thighs and brown them on all sides. Mix in cumin powder, coriander powder, turmeric powder, chili powder, and salt. Add chopped tomatoes and cook until they release their juices. Turn off saut mode, stir in plain yogurt, and close the pressure cooker lid. Cook on high pressure for 8 minutes. Allow natural pressure release for 5 minutes, then manually release any remaining pressure. Sprinkle garam masala and garnish with fresh cilantro before serving.

Ingredients: 1 cup pretzels, crushed. 1/2 cup unsalted butter, melted. 1/4 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 1 cup all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1 cup mini marshmallows. 1/4 cup semi-sweet chocolate chips. Sea salt, for sprinkling.
Instructions: Warm the oven up to 175F 350C. A 9x9-inch baking pan should be greased. Crush the pretzels and mix them with the melted butter and sugar in a bowl until everything is well mixed. It will be smooth after you add the egg and vanilla extract. Sift the flour, baking powder, and salt together in a different bowl. Slowly add the dry ingredients to the wet ones while mixing them together until dough forms. Add the chocolate chips and mini marshmallows and mix them in. Spread the dough out evenly in the baking pan that has been prepared. Put it in the oven and bake for 20 to 25 minutes, or until the edges turn golden brown. As soon as you take it out of the oven, sprinkle sea salt on top. Let cool all the way down before cutting into bars. Have fun!

In a large bowl, cream together vegan butter and sugar until light and fluffy. Mix in applesauce, almond milk, and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in dried cranberries, vegan white chocolate chips if using, and chopped macadamia nuts if using. Pour the batter into the prepared loaf pan and spread it evenly. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
