Ingredients :
12 KITKAT fingers, 30 g unsalted melted butter, 250 g of 20% or 40% MG white cheese, 50 g sugar, zest and juice of ½ lemon untreated, 3 sheets of gelatin, 100 ml very cold liquid cream, 1 sachet vanilla sugar.
Preparation steps :
1. In a small blender, mix 7 KITKAT fingers to obtain a fine and irregular powder. Mix with the melted butter and pour into the bottom of an oiled cake pan (if possible made of silicone). Lay 4 KITKAT fingers on top, to make 2 parallel lines, and cut the last bar to make the link. Put in freezer 15 minutes.
2. In a bowl of cold water, soften the gelatin sheets for a few minutes. In a salad bowl, whip the white cheese with sugar and lemon zest. Heat the lemon juice 30 seconds in microwave (maximum power).
3. Drain the gelatin leaves by pressing them in your hands. Place them in the hot lemon juice and they will melt instantly. Let cool for 1 minute and add to the white cheese.
4. Whip the very cold cream, adding the vanilla sugar after one minute. Then very delicately add whipped cream to the cheese preparation.
5. Pour into the cake pan on top fo the KITKAT fingers. Tap the cake pan and smooth out the top with a spatula.
6. Put in the refrigerator for at least 4 hours. Remove from pan delicately, and serve in slices.
