The Old Guard
It's always interesting meeting bartenders who entered the profession during what occasionally can be called the Dark Ages (40's-80's). In this period of unironic bowties, bartenders poured juice flavored concoctions with a heavy syrup drip. The most important characteristic for the bartender was personality (I note that as the touch of death for any craft: you want to hear the worst music? Listen to the band with the loudest front man. Worst haircut? Sit for the barber who is afraid to shut the fuck up). The trade secrets had been lost and few wanted to do the work to revive them. These statutes will visit your bar now, and they will share tawdry stories and clumsy recipes. You will pay them homage for their years in the trenches....
