Going nuts for Coconut !
After years of using butter for just about everything, I’ve traded it all in for the delicious taste of coconut oils. 
A lot of people ask the question ‘well why is coconut oil so much better or than regular butters or other oils?’ or ‘isn't oil super fatty, I thought we don't want to consume high fat diets, fats are bad!’. While fats do get a bad rep, as I'm sure everyone had herd of the dreaded trans fatty acids we consume in fast foods and else where in our diets, saturated fats like coconut oil can be healthy! 
Coconut oil unlike other butters, margins, and vegetable oils contains high amounts of MEDIUM CHAIN TRIGLYCERIDES . medium chain triglycerides are what we call good fatty acids! These fats are easily broken down by our liver and small intestine where they are then turned into KETONE body which are readily used by are body to quickly produce high amounts of energy!  
On the contrary most other oils and butter contain high amounts of trans fatty acids and long chain triglycerides. Long chain fatty acids are harder for our body to break down because they require large amounts of energy and special enzymes to dissemble them! These are the fats that rather than using for fuel our body store them :( 
So next time you're in the kitchen try using some coconut oil as a substitute for oils when making veggies or margarine when making your favourite cookies!!

For a nice clean eat (with no sugar added) try this berry crumble with fresh berries, honey, and topped with almond flour, coconut oil, and vanilla! Bake at 375 for 20 minutes and enjoy!
