One cheese that doesn't receive the credit it deserves is Caciocavallo Silano. This ancient, pasta filata-style, bulbous dangler dates back to at least the Roman empire. It can be made with raw cow's or sheep's milk, but I've only seen the bovine version in the states. The flavor is milky, slightly tangy, and wildly approachable. This was the best snack EVER. Seared halloumi, from Washington's Lost Peacock Creamery, slathered in this Angry Fish Raspberry and Vanilla Bean jam. It was a textural gala with the squeak of the goat's cheese and the pop of the raspberry seeds. Not featured is the slightly effervescent Vinho Verde that washed it down and rounded it all out with its crisp, citrusy nuance. Have you guys tried Angry Fish jams?
