this croissants took me like 10h, but they are definitely worth it 🥐🖤
mix
50ml of cold water
65ml of cold milk
12,5g of fresh yeast
33g of sugar
then add 250g of flour and 20g of soft butter and hnead until a smooth ball forms.
leave it aline for 30 minutes, roll out and let it test for 10h!!! in the fridge
on a baking paper flat out a rectangle from 125g of butter and set it in the fridge
take out your dough from the fridge and roll it so that in the middle you can place the flat butter and cover it with the rest of the dough.

cut out 8 triangles, roll into a croissant shape and let it rest for 2h in a cold oven with a bowl of hot water under the tray.
paint them with an egg wash and bake for 25 minutes in a 170°C oven 🖤🖤🖤

i still try to figure out how tumblr works, but i think this recipe is worth sharing. it makes around 8 buns and the filling can vary. i made 4 apple pie inspired and 4 classic cottage cheese buns.
ingredients:
dough:
• 500g of all purpose flour • 25g of soft butter •20g of fresh yeast • 250 ml of warm milk • 3 egg yolks and 1 whole egg • 1tbsp of sugar • pinch of salt
cottage cheese filling:
• 250g of cottage cheese (from a block) • 1 egg yolk • 2 tbsp of vanilla pudding powder
apple pie filling:
• 2 diced apples • cinamon • 1tbsp of sugar
• 1tbsp of butter • a splash of water
crumble:
• 1 tbsp each of sugar, flour and soft butter
tutorial:
1. take a spoon out of your flour, mix it with sugar, crumbled yeast and milk. let it rest for 10 minutes, then combine all the dough ingredients and knead for a while until a soft non sticky ball forms. if you need it add more flour and maaaaybe a bit of oil if it’s too sticky. let it rest under a tea towel for an hour.
2. in the meantime blend all the cheese filling ingredients together and boil the apple filling ingredients, then blend them too.
3. combine the crumble ingredients together with your fingers and preheat the oven to 180° celcius.
4. on a baking sheet (or two) place the dough divided into 8 equal balls, flatten them like little pizzas with high edges and put the filling in the middle. cover with crumble and bake for 30 minutes.
