Chicken Crack Pie and Dry Ranch Dressing Mix
Chicken Crack is a very tasty recipe and can be used in a lot of different dishes. For example it can be used to make sandwiches, put over noodles or add tater tots over the top in a casserole dish and have a great tater tot casserole. I’m sure there are many other ways to serve it up too! I was going to make biscuit dough and use that as my crust but remembered that I had some crescent roll…

Melt in Your Mouth Chicken & Potato bake
I took some chicken out of the freezer and was contemplating what to fix for Supper. Melt in your mouth chicken came to mind but I didn’t have enough chicken thawed to feed everyone. I decided to take the melt in your mouth chicken recipe that I have and added diced potatoes and green beans to it and made a good recipe even better! and plenty to feed all of us.

Pasta Sauce
I made this sauce mostly from home grown tomatoes. My sauce wasn’t as thick as I like so I added some tomato paste that I purchased from the store. I basically use this sauce for all my tomato based recipes and just change up the seasonings I add to it. Next gardening season I hope to explore making tomato paste and growing a more sauce related tomato. I also plan on harvesting and making my own…

Easy Stir Fry
This recipe is easy to make and good to eat! I made it tonight using beef sirloin steak. It can easily be made with chicken or pork. I have even done it with ground beef. I used a ready-made sauce, Bachan’s Japanese Barbecue Sauce. This sauce has a great flavor and can be used with about any meats.  I buy it at Costco. You could just use soy or teriyaki sauce, whichever flavors you prefer. I…

Garlic and Onion Seasoning
I started mixing my own seasoning blends about 5 years ago. After my heart attack, I had to watch my salt intake. Most all spice blends you buy in the store are loaded with Salt! This is pretty much my daily seasoning for most of my recipes. I will mix this up about once a month. It’s easy and simple to mix up. You can also use it as a base for other seasoning blends. If I need a lemon pepper…

I have been wanting to try this recipe for a while now. I always forget to get the dry ingredients is calls for, dry ranch dressing mix and au jus gravy mix. I decided to try making it with ingredients I always have on hand, ranch dressing and better than bouillon roasted beef base. This roast turned out better than I expected. It tastes amazing!   Crockpot Mississippi Pot…

Pork Chop Gravy
This is the process I use to make gravy after frying pork chops. You may need to add a bit more flour to your grease, if your roux is to thin. you want it to look thick. Constant stirring is a must to avoid lumps. If your gravy seems to thick, just whisk in a bit more milk, until you have the consistency you want. Pork Chop Gravy skillet ½ cup oil (I used the grease left in my skillet, after…

Venison & Noodles
This recipe turned out really good! I believe it could be made in a crockpot as well. I will test my theory soon. Chicken Cordon Bleu Casserole
This is an adventure for me! When I cook a meal for my family, I look to see what I have to use and make a decision from there. I have gotten into the habit of just putting things together and not using recipes. I do look up recipes and get ideas. I feel that cooking and creating meals is an art.  So, in doing this, I am taking notes and measuring out ingredients to be able to share my recipes.…

Mantel Rock Nature Preserve
Mantel Rock Nature Preserve
So…. we headed out of Mount Vernon around 11 this morning for one of our adventures. Took us about 2 hours to get to Mantel Rock Nature Preserve. We crossed the river on the ferry at Cave in Rock. Had to wait there a little while for our turn to cross, there was lot of traffic going through there. Once we got there and started walking the trail, it was great! Lots of things to see! We made it to…
