Pork Rancheros
Growing up, we had a lot of huevos rancheros in our kitchen. My grandma would make some for us in the morning with her homemade tortillas, mm! Too bad that’s now behind me- I mean it’s delicious but boy those tortillas can rack up, and I’ve eaten so much eggs in my life I think I’m actually getting sick of it!  i decided to try and do something unique and different for those early mornings. 
Pork Rancheros!

This is a super simple recipe that will get you just want you need to spice up your breakfast! 
[Ingredients] [Servings 3-4]
1 white onion
2 roma tomatoes 
1 serrano pepper 
1 bunch cilantro 
1/2 pound of pork ribs country style
1 Avocado
salt + pepper ((TT))
garlic powder (optional)
cayenne pepper ((TT))
paprika ((TT))
1. Heat a pot to medium heat and cut the onions and roma tomatoes into a medium dice, then chop up the serrano pepper and cilantro. Set aside the tomatoes, pepper, and cilantro. 
2. Put the onions into the pot and cook until translucent (2-3 minutes), add the serrano pepper and let it cook for about a minute. Then add the tomatoes with the salt, pepper, garlic power, and, cayenne pepper, and paprika (I suggest a tsp for each or to taste). Let that cook for about 5 minutes. 
3. While it’s cooking, cut the pork into a small dice, once the five minutes are up add the pork, mix, and cover. Let it simmer for about 10 minutes (or until pork is cooked through). 
4. Now while THAT’S cooking, cut up the avocado into a medium dice. 
5. Once the pork is done, turn off the heat, add the cilantro, stir then serve with topped avocado! Mm, Delicious!

Seared Sockeye Salmon Ghee w/ Baked Almond Asparagus
Seared Sockeye... a delicious special dinner when you have the money. Unless...you don’t like seafood. (Which I actually don’t particularly like myself but I do like salmon.) Salmon is a typically nice fatty fish, and sockeye even more so. Normally I only like wild caught, personally I think you can see more of the nice red color, and how fresh it feels and smells. I know not all farm raised is bad, but I’m just the kind of person that wouldn’t want to risk it too much. Besides, I typically can just taste the difference of how fresh wild caught is. 
Not only is asparagus nice and healthy, a green veggie is good with a nice fatty fish. I just love the flavor of it, when cooked right, asparagus can really melt in your mouth. The melting of asparagus with fish is just perfect! Plus with that buttery flavory ghee it’s just a flavor burster.

This is a really easy recipe, it doesn’t require much out of you really, and you can make it look like an expensive dish. Here are the ingredients you will need.  -- 
Servings [4] 
1 Pound of Sockeye Salmon cut into 4th’s 
Fresh lemon juice
Coconut/Extra Virgin Olive Oul
1 Pound of Asparagus 
Shaved Almond Pieces 
Salt + Pepper (TT) 
Ghee 
1. In a pot heat up to 2 Gallons of water or enough water for asparagus to submerge until it comes to a boil and preheat oven to 350F.
2. Blanch asparagus for five minutes until ‘al dente’ and remove from water, shake off excess water before placing onto a baking sheet, sprinkle coconut/olive oil, salt, and pepper onto asparagus then slip into oven for 5 minutes.
3. While asparagus is cooking, bring a pan to medium heat and put in 1 tbsp of coconut/olive oil onto pan. Sprinkle lemon juice, salt and pepper onto both sides of the salmon before placing onto the pan, simmer both sides for 3-4 minutes, until white juices are cleared and becomes flakey. 
4. Take out asparagus once 5 minute mark is reacher and sprinkle on almonds, put in oven for another 5 minutes then take out.

5. Once the fish is cooked, take out all pieces and put aside onto a plate, heat about 2 tbsp of ghee on the pan and squeeze lemon juice and deglaze the pan for about 1 minute. 
6. Finally put your salmon on a lone plate, put a bit of the ghee glaze on the salmon and asparagus on top, and you got yourself a delicious healthy dinner!

Now that is certainly what I call, easy, healthy eating! Just look at that colorful beauty. Not only does it taste great, it looks great.
