I have to say I love the exotic couscous or quinoa but they don’t even begin to compare to pearl barley that, for some reason, isn’t very popular these days (apart from central and eastern Europe). Check out the recipe for my PEPPERY BARLEY STEW :)

Vegan Fried Courgette's Flowers
This recipe may be not totally healthy or cheap (is cheap for who has a garden and grows courgettes, or any other edible flower  wit that shape) but is simple and tasty (and vegan of course) and give you the chance to finish some leftovers of cooked vegetables! Let's start:
courgettes' flowers
white flour
salt
water
olive and seeds oil
leftovers of tomatoes/aubergins/veggies in general
Wash the flowers very well and remove the pistil without breaking them

This should be the result (since you have to stuff 'em, they need not to break and open):

Crumble and press the leftovers till you have this mixture:

Stuff the flowers with a spoon of the misture, and close them the best you can.

For the batter: mix the white flour with the water, olive oil (a teaspoon) and a pinch of salt. Mix it with a whisp.

Put the flowers in the batter, each one alone, and then fry them in very hot seeds oil

What's very interesting is that you can stuff them with anything you want, they are yummy as hell, typycal italian and not your everyday recipe!

Sorry for so long away! APPLE-COCOA-COCONUT vegan cake
Ok! Ingredients:
Coconut flour 
White flour
Seeds oil
An apple
Sugar
Baking powder
water
cocoa powder
(cinnamon if you like)
A tiny bit of margarine
So, grate the apple in a bowl,

add 1/2 cup of seeds oil, cocoa powder, baking powder, 1 cup of sugar, half of water and a generous half cup of coconut flour

Mix everything with your whisk (it'll look more watery after you do it

Start adding white flour until it's creamy and solid like this:

Tiny bit of margarine...spread it on the mold, add a little flour

Pour the mixture into the wold and bake it for around 25 minutes at 185° (celsius)

soy or rice milk
white flour
cane sugar
cinnamon
margarine
baking powder
Mix the milk and the flour in a bowl, add the sugar and the cinnamon. I have no rght doses because I made it without a recipe...the mixture should be pretty liquid and without lumps. Taste it to decide if the sugar it's enough, if the cinnamon it's not too much....add the baking powdre (sorry, you have to guess the dose).
Put a pittle piece of margarine in a hot frying pan, then pour a cookware of mixture in the pan and make the shape of a pancake. Make it cook as it was an omelette, cook it both sides...
Then stuff it with maple syrup, or ice cream (as I did....yum!) and eat vegan!!

Lia's Nipples - cheap vegan muffins
This recipe is freaking simple! And very fast! I thank my workmate for the name -_-

Ingredients:
1 cup sugar
1/3 cup of blueberry juice
2/3 cup of soy milk (or rice milk)
1 tablespoon of baking powder for cakes
1/2 cup sunflower seeds oil
1/4 cup cocoa powder
white flour
margarine or little paper cups
a muffin mold
Mix the milk, the blueberry juice and the oil together. Add the sugar and blend with a whisk till the sugar is dissolved.

Add the baking powder and the cocoa powder. Now start adding the white flour till you have this thickness:

It has to be liquid but thick. Grease the mold with little margarine or use paper cups.

Pour the mixture into the mold.

Put a square of dark chocolate (dairy free) in each mold.

Bake for 20 minutes ca. at 180°. This will be the result!!! Eat vegan muffins!!

P.s.: to cook cous cous:
Boil litlle water with a teaspoon of olive oil, turn off the flame, put the cous cous in the water and wait and mix unil the cous cous is grown.

Vegan Squash & Carrot Curry
Ingredients:
2 medium yellow squash, diced
1/2 cup carrots, cut into coins
1 tablespoon green curry paste
curry powder to taste
olive oil
1. Cook the squash and carrots in olive oil for several minutes before adding curry paste and curry powder (if you’re adding it).
2. Continue to cook until vegetables are tender and serve over cous cous.

vegan tacos-
ingredients:
corn tortillas, warmed
one can black beans
one can corn
one avocado, peeled and diced
1 tablespoon olive oil
1 teaspoon red wine vinegar
1 teaspoon lemon juice
adobo seasoning to taste
combine all liquid ingredients and toss with black beans, corn, and avocado
serve with tortillas

Vegan Potato Pie
Recipe!!! Not so cheap but delicious! If you cut out the cream and the wurstel and just use the veggies and maybe hummus this can easily become cheap :)

Ingredients:
Flaky pastry
Courgettes
Potatoes
Veggie wurstel
Vegan cream (I used soy ceam)
Onion or shallot
Put the pastry in a baking pan and turn on the oven

Cut the courgettes and the onions in pieces and put them in a frying pan, add the potatoes (you have boiled them in water before): smash it all and fry them a little.

Cut the vegan wurstels in pieces (mine were made of soy and spelt, and they tasted exactly like the "real" ones).

Mix it all with the vegan soy (or rice) cream and put it all in the baking pan, like this.

Cook in the oven till the color of the pastry is like the big pic at the beginning, and then eat vegan!!!!

Pasta salad
Easy and cheap!
You need:
short pasta
a pot full of water and a pan 
olive oil
tomatoes
shallots
Bring to boil the water, add a pinch of salt. Cut the shallot into little pieces, and put it in a pan with hot olive oil.

Make them brown.

Put the pasta in the hot water and stir it every now and again, till the cooking time written on the packaging (it doesn not have to be overcooked and smashy).
Drain it in a colander and wash it with cold water for some seconds.

Now cut the olives and the little tomatoes in pieces,

add them to the pasta, add a pinch of salt and a drizzle of oil and....

Individual French Toast Sticks

1/2C almond milk
1 small, ripe banana
1t cinnamon
1t nutmeg/cinnamon (optional)
1 piece of bread, sliced into 5 strips
1T agave syrup
handful of blackberries (or other fruit)
1) Blend almond milk, banana, cinnamon and nutmeg. Pour into a shallow dish. 2) Dip your bread slices into the mixture on both sides, then fry in a hot pan with a little coconut oil (or non stick spray of choice) on each side until crispy 3) Drizzle with agave, top with blackberries.
This recipe makes a little extra batter, so it could probably make two pieces of bread. It’s easily double to accomodate more people.
