Enjoy these flourless chocolate pistachio pear cookies, which combine rich chocolate, crunchy pistachios, and the subtle sweetness of ripe pears.
Ingredients: 1 cup dark chocolate chips. 1 cup pistachios, chopped. 2 ripe pears, peeled, cored, and finely diced. 1/2 cup sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/2 teaspoon baking soda. 1/4 teaspoon salt.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. In a bowl that can go in the microwave, melt the dark chocolate chips for 20 seconds at a time, stirring after each one. Do this until the chocolate is smooth. Allow it to cool a bit. Mix the sugar, eggs, and vanilla extract together in a bowl until they are well mixed and a little fluffy. Mix the eggs and chocolate together until the mixture is smooth. The chopped pistachios, diced pears, baking soda, and salt should all be mixed into the batter until it is well blended. Place spoonfuls of the batter on the baking sheet that has been prepared, leaving space between each one so that it can spread. After the oven is hot, bake the cookies for 12 to 15 minutes, or until they are set and the edges are just a little firm. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way. The cookies are ready to eat once they have cooled down.
