Here are some of my favorite ways to get my veggies in:
Green smoothie: I make this every morning to make sure I’m getting dark leafy greens in. One Persian cucumber, a few leaves of dino kale, pineapple chunks (you can get pre-cut!), 2tbsp ground flax seed for omega-3/6, a splash of juice (my favorite is this one), and then you fill the rest of the cup with water (generally until the veggies are submerged). Sometimes I will add in a bit of fresh ginger, celery sticks, or baby carrots too. It’s not going to be this delicious fruity drink, but it isn’t bad (the juice and pineapple truly work miracles there), and it gives me a more sustained, energetic start to my day. And it’s incredibly easy to prep (takes <5 min).
Carrot ribbon salad: so incredibly easy to prep and a fun way to eat carrots, very easy to customize too
Sliced cucumber salad: also extremely, extremely customizable and SO quick to prep. This guy went viral for these recipes last year and you can find a million variations for inspiration if you look them up. My favorite is doing chunky peanut butter, soy sauce, and some chili crisp
Pureed veggie pasta: this is a very common trick parents use to get fussy toddlers to have more veggies. If you have sensory issues this can be a great way to get around them. Roast them, throw them in a blender, puree, add seasoning to taste. Mix your pasta in. Tastes like regular pasta sauce — here’s one example
Adding veg into your instant ramen or mac and cheese: this is such a simple way to elevate a quick, “unhealthy” meal. I usually use broccoli because it cooks relatively quickly to accommodate the shorter cook time. Frozen veggies are good here too, and fun fact about frozen veggies — they’re usually better for you nutritionally, because they retain more nutrients for being frozen briefly after harvesting. The fresh produce you’re eating takes a longer time to get to your table and can nutritionally degrade in the meantime.
Unagi eggplant: this is so sweet and simple and yummy. This is a softer dish in case you have texture issues, and it’s relatively easy to make.
Zucchini and butterbean bowl: this has been a STAPLEEEE in my kitchen since I discovered it. It’s sooooo yummy and simple to make!! Takes so little prep for such a delicious meal
Lentil soup/shorbat addas: again when a blender becomes useful. This is a middle eastern staple, it’ll last you a week, and it isn’t complex flavor wise. Good for when you’re sick or just have a sensitive stomach.
i mean this in the gentlest way possible: you need to eat vegetables. you need to become comfortable with doing so. i do not care if you are a picky eater because of autism (hi, i used to be this person!), you need to find at least some vegetables you can eat. find a different way to prepare them. chances are you would like a vegetable you hate if you prepared it in a stew or roasted it with seasoning or included it as an ingredient in a recipe. just. please start eating better. potatoes and corn are not sufficient vegetables for a healthy diet.
