these ugly little things 😤
they’re coconut cupcakes w/ a mango curd & vanilla/coconut buttercream! i’m realizing that they’re a bit too sweet (needs more acidity!). will definitely workshop the recipe, but if you’re interested in making this here it is!
The cupcakes themselves are really nice! just the frosting combined w/ the curd is a bit overwhelming! would definitely suggest a more acidic coulis in the center <3!

I baked so many things for the holidays (and failed numerous times 😩), BUT i made it work 😎.
The first baked good was a brown butter pear upside down cake! I made it with buttermilk. This was by far my favorite cake that I made 🥰! It was so delicious and moist! It also had a very VERY rich and nutty flavor which compliments a cup of coffee well!! The cake cracked when I flipped it over on the cooling rack, but I managed to cover it with some brown butter pears!
My second cake was a 2 layer cake that I made for my cousins birthday!! It’s a variation of a vanilla one I made with my boyfriend for our friend’s birthday! This time it’s made with chocolate layers and had a blackberry/raspberry compote in the middle. Then I used a vanilla chantilly cream for the piping/middle of the cake!! The first time I baked it, I made it with buttermilk which made it a little too moist. It fell apart that time :(! But the second time was dryer and easier to remove from the pan and it all worked out!!

the first bread i didn’t overwork/add too much flour to 🤠🤠!
the crumb looks very VERY nice 😋! It’s very delicious :)! If you like pizza, this is the bread for you (or it seems like it would be nice on the side for some italian food)! The bread has fresh minced garlic, grated parmesan, rosemary, basil, and oregano.
The only thing is the recipe said to leave the LUMP of butter on the top and that is exactly what I did (it made it weird and soggy in the center 🥲). Next time i’m just going to melt the butter and brush it on the dough before baking. This way it would brown and make the crust nice and soft!
I love seasoned breads in general (or breads with little goodies inside 🥰) and I think this one is a fairly easy recipe. I also just love fresh baked bread as a college student because it’s cheap and fun to make! I acknowledge that not everyone has the time to make bread as it takes quite a bit of time, but it is an affordable way to make a staple food (depending on the recipe of course)!

made silly little ugly bread rolls! they’re good though :) ! I added a little parmesan and egg wash to the rolls to make them nice and crisp!

I want to get better at baking breads, because I have limited experience with them! I want to be able to make them look pretty (challenging for me because after 3+ hours of proofing I just want to finish them 😩)! However, I think I can also improve on the texture of my breads because I always end up adding a little too much flour or kneading a little too much.
These turned out quite tasty though! :)

first time in a while making a 9x13 sheet cake! ✨ It broke, so I had to cut it 🥲. However, it still turned out nice! The sponge was light & airy (although it was a little porous compared to other sponges i’ve made). I made an orange flavored Chantilly cream w/ candied oranges and a chocolate sponge :)! I used the orange syrup from the candied oranges to brush the cake & keep it moist in the fridge for a few days (and it worked!!). I plan on getting better at cakes (& baking in general) and piping 😩!
little note: i also forgot to get a picture of the final decorations with more candied oranges on the side!! <3
