New flour has arrived. I've been testing slow bread making with almost no kneading and a 24h prove in the cold kitchen, which seems to work well!

If you've not seen Paul Hollywood's City Bakes yet, then you're in for a treat! I like how any cathedral he encounters on his travels looks like a meringue to him and that he can't hide it if he's not keen on something he's tasting!

A throw-back to UK lockdown flour deficit, when I had to resort to some weird corner-shop-bought white flour, which for some reason did not result in any Maillard reaction at all, even after the usual 55min at 200C (never mind the shape)!
