Safed daag, yaani vitiligo, ek skin condition hai jismein skin par safed daag ya spots develop ho jaate hain. Yeh autoimmune disorder hota hai jismein melanin production kam ho jaata hai, jo skin color ka responsible pigment hota hai. Safed daag ka ilaj complex ho sakta hai aur ismein kuch natural remedies aur medical treatments shamil hote hain. Yahan kuch tarike hain safed daag ka ilaj ke liye:
1. Medical Treatments:
Topical Steroids: Doctors safed daag ke ilaj ke liye topical steroids recommend kar sakte hain. Ye creams ya ointments hote hain jo affected area par lagaya jaata hai.

aloo ko achar (nepali pickled potatoes) recipe    Author: story of a kitchen (based from maayeka.com: http://maayeka.com/2018/03/nepali-aloo-ko-achar.html)  Recipe type: vegetable  Cuisine: nepali        Cooking and prep don't take long -- maybe 30 minutes -- but you must let the flavors meld for 30 to 60 minutes before serving.  Ingredients
700g potatoes (aloo)
⅓ cup white sesame seeds (til)
3 to 5 green chiles (hari mirch) -- I use Thai bird chiles and use less.
1 tablespoon salt (namak) -- NOTE: I add about half the salt, mix well, taste, then add more if needed later.
1½ tablespoons red chili powder (laal mirch powder)
½ teaspoon Sichuan pepper (timur) -- grind it
½ cup mustard oil / (sarson ka tel) or neutral oil of your choice
1 pinch fenugreek seeds (methidana) -- I use ground fenugreek
1 pinch cumin
1 tablespoon ginger, grated (adrak)
¼ tsp asafoetida (also known as hing powder) -- This gives a garlicky flavor to the dish.
¾ teaspoon turmeric powder (haldi powder)
⅔ cup water (paani)
4 tablespoons lemon or lime juice, freshly squeezed (nimbu ka ras)
½ cup fresh cilantro, chopped (hara dhaniya)
   Instructions
Boil potatoes in salted water, peel, and cut to medium sized cubes.
While potatoes are cooking, dry roast sesame seeds until golden. Cool to room temperature and grind to powder.
Next, the original recipe says to chop green chiles in big pieces. I prefer smaller pieces.
In a large bowl, mix the cubed potatoes, sesame seed powder, green chiles, salt, chili powder, and Sichuan pepper.
Heat oil in a skillet, add the fenugreek and cumin to brown briefly, then off the heat and add ginger, asafoetida, and turmeric. Stir for 1 minute.
Pour this hot, scented oil over the potato mix. Stir well.
Add water, lemon/lime juice, and chopped cilantro and mix well.
Cover the pan and allow flavors to meld for 30 to 60 minutes. Taste just before serving and add more salt if needed (if you use less like me initially). I like this dish served at room temperature.
If refrigerated, aloo ko achar keeps for about a month, if stirred every so often.
   Notes Some recipes also call for cucumber, peas, or other dense, non-leafy greens for this recipe. I prefer it potato heavy.

Chaat cravings? You can find chaat in every Indian city, but we truly believe its hard to beat the chaat scene in Banaras. The Golgappa is to Banarasi what the Panipuri is to Mumbai or the Phuchka to Kolkata, but has quite a different take to it. The Banarasi version is a burst of spice and tang with a delicious mattar or pea filling. Crispy balls of sheer goodness. . Golgappe Ka Pani For the Paste 2 medium sized Aam ki Kairi (raw mangoes) 2 handful fresh Dhaniya or Coriander leaves 10 to 15 sprigs of Pudina or Mint Leaves 6 medium Hari Mirch or Green Chillies 1 stalk Adrak or Ginger 100 ml Water Pressure cook the mangoes. Cool and peel. Extract the pulp. Dry Roasted Masala or Spices ¼ tsp Hing or Asafoetida powder 6 to 8 Kali Mirch or Black Peppercorns 2 Laung or Cloves ¼ tsp Sarson or Red Mustard ½ tsp Ghee Temper these spices in ghee and blend with the mango pulp, coriander, mint, chillies and ginger with water in a mixer For the Pani 1 tsp Lal Mirch or Red Chilli Powder 1 tsp Jeera or Cumin Powder  6 to 8 tsp Kala Namak or Pink Himalayan Salt 30 Ice Cubes 1 ltr water 1 tbsp Nimbu or Lemon Juice Add these spices to the paste stirring and mixing well. Then add the water and ice cubes. You may adjust salt to taste. Tempering or Tadka ¼ tsp Jeera or Cumin Seeds ¼ tsp Hing or Asafoetida Powder ½ tsp Ghee Temper the cumin and asafoetida in ghee and add as a ‘Tadka’ just before serving. Matar Ki Chaat for Golgappa Filling 1 cup or 8oz Safed Matar or Ragda  1 Badi Elaichi or Large Cardamom Stalk of Adrak or Ginger grated 3 tsp salt 2 large Aloo or Potato boiled & peeled 1 tbsp Fresh Dhaniya or Coriander finely chopped 2 medium Hari Mirch or Green Chillies finely chopped ½ tsp Jeera or Cumin Powder ½ tsp Lal Mirch or Red Chilli Powder 2 tbsp Nimbu Ras or Lemon Juice Pressure cook the matar with cardamom, ginger and ½ tsp salt. Once cool, add crushed potatoes, coriander, chillies, salt, cumin powder, chilli powder and lemon juice. Mix it well folding with a spoon. Fold in 2 tbsp of Golgappe ka Pani to moisten this just before serving it. Golgappa/panipuri/puchka recipe | How to make street style golgappa
The craving for Golgappa is so real and unpredictable, right? So, why not make them at home and munch them whenever you like? Therefore, my today’s special recipe is all about how to make Atta Golgappa and it's tikha pani at home! You better note it down, okay?
Crisp, crunchy and an absolutely delicious pop up for the taste buds, Golgappa is a street food loved by one and all. Fill them with any flavoured water or tamarind chutney sweet chutney, tikha pudina Pani they create a party on your palate.
Moreover, you can also make dahi Puri from it. However, when we eat the ones made by the stalls, there’s always a concern about the hygiene. Hence, I tried this Golgappa Recipe at home and can very proudly say that they turned out just like the ones sold in market.
So without any further talks let's start the recipe of Pani Puri or Golgappa.
Ingredients For atta golgappa puris (puchka puri):
1 cup Whole wheat flour (atta)
1 cup Semolina (Sooji/Rava)
Water for kneading dough
Oil for deep frying
For The Teekha Phudina Paani
1 1/4 cups mint leaves (pudina)
1/2 cup chopped coriander (dhaniya)
2 tbsp lemon juice (nimbu ka ras)
1 tbsp roughly chopped green chillies (hari mirch)
1/2 tbsp roughly chopped Ginger (adrak)
2 whole black peppercorns (kali mirch)
1 tsp black salt (Kala namak)
1 1/2 tsp cumin seeds (jeera) powder
Salt to taste
Instructions to make golgappa puri:
1.In a bowl, mix whole wheat flour and semolina.  Add little water at a time and knead it to form a dough. Dough should neither be too hard/thick nor too soft/thin or sticky. It should have medium.
2.Cover the dough with a damp muslin cloth or tea towel, keep it aside for 30 mins.
3.After 30 mins, divide the dough into 6 equal sized uniform balls.
4.Place the ball(one at a time) on a lightly floured surface. Roll out each ball into very thin circles uniformly. The thickness of each circle should not be more than 1.5 mm
5.With a help of a sharp steel glass or bowl having a diameter of 4 to 5cms cut out discs from the rolled circles.
6.Heat enough oil in a heavy bottom and deep kadhai till hot.
7.Once the oil is very hot, reduce the flame to medium and maintain it throughout. At this stage oil should be very hot.
8.Slowly and gently slide the discs into the oil and with the help of the back of a ladle slightly press it.  This will make the puris to puff up.
9.Flip and fry till golden brown and crisp. (Do not fry too much or it will turn too dark)
10.Take the puris out and place them on absorbent paper.
11.Repeat the same for all the balls
For the teekha pudina pani
1.Combine all the ingredients in a deep bowl and blend in a mixer to a fine paste using ¼ cup water.
2.Combine the prepared paste and 3 cups of chilled water in a large bowl and mix well.
3.Your teekha pudina pani is ready to serve.
TIPS FOR MAKING PURI FOR GOLGAPPA OR PANI PURI OR PUCHKA
1.Always cover the dough with a damp cloth even while rolling the puris. If the dough becomes dry, you will not be able to roll the dough easily.
2.Ensure that all the rolled puris are covered with a damp cloth. If the puris become dry, then the puris will not puff up.
3.The above tips comes from experience. Just before frying remove the damp cloth.
4.You could fry 4 to 7 puris at a time.
5.Do not add oil to the dough while kneading as the puris will become soft later.
6.The dough has to semi soft with gluten strands formed in them. There has to be elasticity in the dough. These factors give a crisp pani puri. The crispness stays even after the pooris are cooled and even later.
7.Maida or refined/all purpose flour is used for binding the dough. Avoid adding more maida to the dough. If the dough is not binding well, then you could add a few teaspoons more of maida. But don’t add too much.
8.The puris have to be thin. If you do not roll them thinly, then the puris won’t puff up well and will remain soft from within.
9.Fry the puris in a moderately hot oil. If the oil is not hot enough, the puris will absorb oil and become soaked in oil. Too hot oil, will burn the puris.
