The perfect question from a perfect person 😘. I’m assuming you’re asking so you know what to pack for our picnic? 🧺🧀🥖🌲
1. Trader Joe’s blueberry goat cheese
2. Triple cream Brie (get some rosemary and thyme crackers and load those bad boys up)
3. Herbed goat cheese, when it’s nice and spreadable and you can slather it on fresh baked bread
4. Really, really GOOD white cheddar cheese, has to be a block that you can cut pieces off yourself, I don’t fuck with pre sliced stuff
5. Super fresh mozzarella, particularly a nice burratta with tomato and basil and balsamic reduction
+1 Gruyere, elevates your grilled cheese instantly

I am so happy about how the dinner went last night at work; the service went great, the kitchen morale was high all night, and there were very few hiccups during the evening. We managed almost 300 covers on our prix fixe menu - which was a gorgeous menu, btw - and I hope our CDC is sleeping in today, because she deserves it 110%.
I don't work the line anymore except for big holiday events - I'm pretty over that part of work life and I much prefer working in the pastry department where it's quiet and I can come in early in the morning. Etch is an open kitchen though, and the beautiful thing about open kitchens is that, when things are going well, the good energy in the kitchen and on the floor is reciprocal. It's nice when you can look over at the chef’s counter or the tables and see people really enjoying themselves. I'm still glad I don't work on lines anymore, but it’s nice to brush up against that kind of good feeling.  
 I haven't seen the end counts for last night’s sales, but I think some of the highlights were the Housemade Burratta (olive tapenade, skinned and marinated tomatoes, raisin honey and beet lavender sauce), the Pork Belly (caraway crema, smoked apple purée, sauerkraut caramel, beet ginger sauce and rye crisps), and the Lamb (red pepper walnut sauce, ginger goat cheese, ancho cherry jam, sweet potato, and okra). 
So here’s to 2019 I guess.✨

Lake Tahoe has a great mix of both casual and quisite restaurants.
Whether it's a place to pop the question or to celebrate a special occasion, you can find a great table with a fantastic view of the lake at Christy. Special occasions call for reservations at the award-winning Stella at the Cedar House Hotel or the Zagat rated Soule Domain.
If you just want to keep your dinner low key, but cozy after a day out in the snow, visit Pianeta for their rustic Italian food or Burger Me for their organic burger and great lemonade. Both of these restaurants are in the foodie capital of Truckee, California. If you want another nice view of the railroad town, visit the Cottonwood on the hill above Truckee.
For breakfast (or a hangover cure) head to the Fire Sign Cafe in between Tahoe City and Homewood for their omelets and wonderful baked goods. If you are closer to the North Shore, go to the Old Post Office Coffee Shop in Carnelian Bay for a stack of pancakes that will give you the crab loading you need for Tahoe's winter sports. If you are on the South Shore, a must-do stop will be at Rude Brother's Bagels where you can pick up some excellent bagels and coffee or bagel sandwiches to take with you in your hiking backpack.

1. GAR WOODS GRILL AND PIER RESTAURANT
Gar Woods on Tahoe's West Shore is best known for it's wonderful pier and wooden boats, but it also has a great menu and a fun bar. For a more casual feast, dine on appetizers like eggplant bruschetta at the bar; on the other hand, the most dining area offers upscale atmosphere and entrees like linguine with shrimp, mussels, and clams, or double-cut lamb chops in a minty pesto sauce. Lots of exposed brick and stone lend a comfy, rustic feel. The wine list is impressive with bottles and glass choices from Italy, Northern California, Austria and France.
3. CAFE FIORE
This is the perfect romantic spot for a special dinner. Decorated with white linens and glimmering candles, this cozy Italian restaurant is furnished with only seven tables for an intimate atmosphere. During the summer, you can enjoy your meal outside beneath the towering pines. For a hearty meal, try the Cappellini Bocconcini made with meatballs, fresh tomato and basil. Bistecca alla Veneziana is medallions of filet mignon a green peppercorn cream sauce. For dessert, try the homemade white chocolate ice cream. 4. FIRE SIGN CAFÉ
With rave reviews from locals and visitors and lines that often snake out the door on busy weekend mornings, Fire Sign Cafe is surely one of Tahoe's most popular breakfast spots. A quick glance at the menu shows why – a dill and artichoke omelet, veggie eggs Benedict, a gouda scramble, and buckwheat pancakes topped with hot, freshly-made blueberry and raspberry sauce are representative of the ante meridiem treats that await. Choose between crispy Baby Back Ribs grilled with jerk spice, and served with house made barbecue sauce or Jerk-spiced Fried Rock Prawns with Cajun tartar sauce. Order a Braised free Range Rabbit Cassoulet with Andouille sausage, garlic, rosemary and white beans, or simply opt for a Cheeseburger with waffle fries. Here, the wine and beer lists are extensive. The Cottonwood is filled with skiing and railroad memorabilia from Truckee's days as a railroad town, this casual restaurant, bar, and lounge provides customers with great views of Truckee, charming ambiance, and lovingly-prepared Californian-American fare.

6. CHRISTY HILL LAKESIDE BISTRO
It's a small restaurant and reservations may be required during the high seasons, but the staff is friendly and very accommodating. They serve up a nice selection of wines by the glass and the bottle and the menu is small but it revolves around the changing seasons and the availability of fresh ingredients. The entrees include pork, lamb, seafood and pasta using fresh, local ingredients. For a starter the Caesar Salad is huge and very delicious and the various Ravioli dishes are a great entree. For dessert, try the Affogato with cranberry biscotti.
Recommended for Best Restaurants because: Christy Hill has one of the best views of the lake.

7. BURGER ME
Rated one of the best burger places in Lake Tahoe Area and featured on the Food Networks "Diners, Drive-Ins and Dives", Burger Me is located in the old town section of Truckee. Their burgers are made with all natural ingredients. No growth hormones or chemicals in these beauties! The burgers and drinks are served in corn-based packaging and everything is recyclable.
Recommended for Best Restaurants because: Burger Me's natural burger meat comes from locally sourced farmers

8. STELLA
Stella is located in the Cedar House Sport Hotel near Truckee and offers an award-winning menu by chef Jacob Burton. Stella's menu features many items from the Cedar House Hotel's gardens and incorporates simple ingredients that make for comforting and inviting dishes. Chef Jacob Burton worked at the Lone Eagle Grille and the Big Water Grille, both in Lake Tahoe, some time recently coming to the Cedar House. His menu includes appetizers such as Pan Seared Diver Scallops, Popcorn Polenta and Roasted Mushrooms on a micro green salad, entrees such as Roasted Salmon with Crispy Yucca or Colorado Lam with Fingerling Potatoes. Desserts include Marscapone Cheese Cake with Madrone Bark Syrup.

9. MANZANITA

The stylish restaurant sources many of its food from local farms and ranches and displays them in a natural and beautiful way. Start off a romantic dinner with a Beet & Burratta salad with local beets, apples, celery, hazelnuts and honey-rosemary vinaigrette, choose from 12-Hour Bordeaux Braised Shortrib or Hand-Made Tagliatelle with heirloom eggplant and fresh ricotta and finish up with a Pumpkin Souffle with spiced anglaise and butter pecan ice cream. Manzanita also serves breakfast and lunch and has an extensive wine, beer and cocktail menu. so I FINALLY got to go to this uber elusive and always busy pasta spot in the west end this week. and let me tell you…it was for sure worth the wait.
I first heard of Famiglia Baldassarre from a local treasure, Chef Matty Matheson. For those of you who don’t know the 300lb, tattoo covered legend, he’s one of the most well known young Canadian chefs out there right now. I follow him on Instagram and one day he posted about this pasta restaurant. So here’s the deal, as their Instagram bio says, “tues-fri lunch 12-3pm, no resos, 10 seats”. I know what you’re thinking - how TF does a pasta restaurant in the downtown core of Toronto say in business with only 10 guests for only 12 operating hours a week?! well… i found out. it’s because what they’re cranking out is so damn fine that people line up out the door on a -3 winter’s day just for a taste of their pasta.
when my sister and i arrived at 12:34…34 mins after opening there was already a line out the door. We waited for about 30 mins to order and then another 10 mins or so for a table. Luckily, there were a lot of people there for take out that day.
The menu that day included their homemade burratta cheese, two different pasta dishes, braised ontario beets, two types of aged meats (one 16 months, one 24 months), fresh baked bread (complimentary if you just walk in the door) and an assortment of Italian Sodas. My sister and I were legit salivating in the line up and when we got to order, finally, we just said “one of everything”.
the first pasta included rapini in a lemon herb butter and the second was an interesting take on Bolognese. the sausage places in the centre of the pillowy bed of pasta was so tender that we didn’t even need a knife to eat it…it was incredible. the pasta was al dente yet not too dense. the whole meal was truly a treat.
the experience was divine and was the closest thing to an authentic Italian pasta lunch that i’ve ever had here in toronto.

Basics of Cheese: Cheese 101 Ingredients: MILK!!
So, you probably have a few questions about the basics of cheese like most people do. For example, what the heck is “rennet” or “annatto”? Is that good for me? Is that a filler or something added to the cheese? These are all good questions. First, lets start with the basics. 
Cheese making comes down to 4 basic ingredients: 
MILK   BACTERIA CULTURE  RENNETT   SALT
These ingredients are what makes cheese the amazing and magical creation that it is. Lets start with milks...
To make a yummy cheese you have to start with a good milk. There are 4 main animal milks that are used in cheese making:  Cow, Goat, Sheep, and Buffalo. Yep, that’s right I said buffalo. Their milk make DELICIOUS fresh mozzarella and burrata...but I’m getting ahead of myself. Lets start with cows milk and work our way up there. 
Cows Milk
Cows milk is most commonly used for cheeses people are familiar with. The milk is known for being slightly sweet, mild with a subtle flavor. It’s no wonder cows are the most likely choice for most cheese making. They yield a LOT of milk compared to a goat or a sheep because they are a larger animal. Two of the most commonly used cow’s milk used for cheese making are the Friesian Cow )black and white...ya know the classic cow) and the Jersey Cow (they are so pretty in my opinion).

These great looking gals are just some of the most popular dairy cows but there are more than 50 breeds of cows that are used for cheese making. Cheese made from cows milk are very extensive...pretty much every family of cheese can be made using cows milk, however, some cheese are traditionally used with other milks. A lot of people (especially in the US) prefer cow’s milk cheese because it really does have a mellow taste. But let’s not forget our other farm friends when talking about milk! Goats Milk
Let’s just get this one out of the way because, from my experience behind the cheese counter, people tend to either LOVE goat cheese or HATE it. There really does not seem to be a middle ground. According to The World Encyclopedia of Cheese, it is the most misunderstood milk/cheese. If the milk is handled improperly the microscopic fat globules can burst resulting in a foul billy-goat flavor. Apparently, male goats, also referred to as “billy-goats” have quite an odor. But if the milk is handled correctly, those same fat globules gradually breakdown and produce a delicious herbaceous taste. I am not a huge fan of fresh goat cheese. Though I am obsessed with how white their milk/cheese is! So pure and so beautiful. To my palate, the slight tang that goats milk has is just not a favorite of mine. However, aged goats milk in a cheddar or gouda such as Cypress Grove’s Midnight Moon Aged Gouda is one of the most delicious cheeses I’ve experienced thus far.

Sheep’s Milk
Now on to one of my favorite animal milks used for cheese...SHEEP! I like it mostly because it is also mild like cow’s milk but it is slightly sweeter than cow and goat milk. Sheep’s milk cheese, as it ages and matures, has a fruity taste that is gorgeous when eaten with honey or glazed nuts! So yum! Some of the more traditional cheeses that are made with sheep’s milk are Manchego, Pecorino Romano and the Pyrenees cheeses of the French Mountains. In the fresh form, sheep’s cheese is nutty as if its been infused with brazil nuts or crushed walnuts. Even though it is sweeter than most other milks, I still do no prefer it in its fresh form. Sometimes a girl just like a mature cheese :) nothing wrong with that! In the US the main sheep used for milking and cheese making is called the East Friesian Sheep.

This is the East Friesian Sheep...a very familiar sheep to most people. Woolly fur and knobbly knees! So adorable. These little cuties come from a farm in Hiwassee, VA called Schaeffer Valley Farms. Looks like some of them have not grown into their coats yet. 
Buffalo’s Milk
Unlike their furry cousins, water buffalos are not what you might think. They look more like a cow except they have a very distinctive dark coat.

There are several different types of cheese that are made from the water buffalo milk but two of most common ones are mozzarella and burratta. Buffalo mozzarella is very similar to cow’s milk mozzarella. Because it has a higher in fat and calories and protein content compared to cow’s milk. But we won’t be mad at our friend the buffalo...more fat and more protein means creamier yummier cheese...yum!
Next...we're going to get into bacteria cultures, rennet & annatto! Then on to my favorite part....the cheese!

Florence, Italy: November 22-25
Wednesday:
I arrived to Florence around 2:00pm and met up with Sydney, Paige, Blake, Lee Ann, Britton, and Robert (our crew for the week!) We had cocktails on the rooftop of the Westin hotel which had an incredible view of the city. Afterwards, we rested for a bit before dinner. We went to Gustovino for dinner and I had truffle ravioli and some nice red wine. After dinner, we went to the Uncle Jimmy’s bar which was a casual dive bar with beer pong tables and bras hanging from the ceiling. We then went to the Collo Breto bar for a night cap. 
Thursday:
We woke up early today for a tour the Briscoe’s had planned around Florence. We saw the ponte vecchio bridge, Palazzo Vecchio Museum, Baptistery, and the Duomo Cathedral. The highlight of the day was our tour through the palazzo vecchio. This palace has many secret passage ways from the 10th century and we got to go through all of them. They are most famously recognized from the common movie made after the book, Dante’s Inferno. This was so cool to walk through this palace knowing famous actors had been filmed here. It was also fascinating learning about the lives of the rich and famous from a long time ago. After this tour, we went to Blake’s favorite sandwich shop from when he studied abroad in Florence. This was called All’antico Vinaio. We sipped on our budweisers to celebrate a fun thanksgiving in Italy. Before dinner I climbed 450 steps up the duomo cathedral to have the most awesome view of the city! Thursday night we went to my favorite restaurant from the week called La Giostra, I highly recommend this. I had the best carbonara pasta and florentine steak ever! Also recommend ordering the burratta dish as well. We ended out night at the Art bar for a night cap. 
Friday:
Vineyard Day! We first traveled to explore a cute town called San Gimignano to see the beautiful old architecture and smalls shops. Afterwards, we went to Tuscany to visit the famous Tenuta Torciano Winery. The owner greeted us and showed us around the beautiful vineyard where some of the most world record famous wines are created. We took a spin into his cellar and then he seated us at our lovely table where we sat down to a plate of meats, cheeses, bread, and a salad to start. We had 4 glasses of wine in front of us and we sipped and ate our afternoon away. I enjoyed some of the best red wines I have ever had. He even let us try his world famous luxury wine that has been awarded for many years in a row! This was an incredible, fun, and educational experience for us. After we took the drive back into Florence, we prepared for dinner at il Latini. 
Saturday:
The crew left for Venice and I had the day to explore Florence on my own. I met up with Brooks and her friend Mary because they were visiting too! We shopped around and visited the Leather Markets, including the Massimo Leather shop, and bargained our way through the stands. I left the girls to go pack up my stuff and head back to Copenhagen for the last time! I loved this trip to Florence and I will never forget it!

Tuesday, October 3, 2017 Domaso, Lake Como, Italy 🇮🇹
Early bird gets the worm!
Trying to get up early enough to buy bread from the bakery before they sold out has been a challenge. Today it was the girls’ turn to get up and prep the breakfast so we set the alarm, ran across the street and not only got bread but the highly coveted burratta cheese – creamy heaven in a ball! Pretty awesome spread for our last morning here.
And I learned how to make coffee using an Italian coffee maker!
