Kelowna Wedding at Cedar Creek Estate
This Kelowna wedding at Cedar Creek Estate Winery was such a beautifully planned intimate celebration. We first met Akshita and Chad and their pup Zara in Canmore for their amazing sunrise hiking engagement session. You can see more about this adventure on our blog here.
While hiking with Akshita she told us all about her childhood dreams of having an outdoor Sikh wedding, filled with flowers and surrounded by her loved ones. With the unpredictable nature of the year, she was unsure what their wedding would look like later that year. They were both exploring the idea of eloping in the mountains and possibly planning a helicopter ceremony in the Banff area.
As the pandemic restrictions began to ease throughout the summer Akshita’s dreams of having her outdoor ceremony started to become possible again. They both found a perfect venue in Chad’s hometown of Kelowna perched high above Okanogan Lake and surrounded by vineyards. Cedar Creek Estate had all the features to make their dream wedding possible and we were thrilled when they asked us to be a part of it all.
Royally Dressed Bride and Groom Surrounded by an Incredible Landscape
Akshita planned her day with a modern and relaxed take on her Indian heritage. She wore a stunning gold dress with red accents matching Chad’s accessories. It was so dramatic against the yellow grasses and rocky landscapes. We spent the morning exploring some beautiful spots around the lake for their portraits. Taking time to explore the windswept golden fields and rugged lookouts of this unique area.
This day was all about the details. The carefully selected jewellery and intricate textures in their fabrics, the flowers scattered throughout the setting and the ever-changing weather. All of these elements came together to make for such a beautiful day and this made it so much fun to photograph.
An Outdoor Sikh Ceremony Filled with Flowers and Sun Showers
We are fairly inexperienced with Indian weddings and we were so grateful to have the opportunity to photograph this amazing ceremony. Akshita sent us through some information on what to expect for a Sikh ceremony so we knew what important moments not to miss. To be honest, every second was so beautiful that we didn’t put our cameras down at all!
Rain clouds blew through the sky creating the most beautiful changes in light as Akshita and Chad made their way through each ritual. One of the main events of the ceremony is the Palla Rasam where the father of the bride places the rose scarf of the groom onto the bride, symbolising that he is giving his daughter away. The Guru Granth Sahib (Holy Scripture) a key focus of the ceremony. The bride and groom circle it four times at set intervals, bowing at the beginning and end of each stanza. Each stanza is accompanied by a hymn which embodies a promise or declaration of marriage. When completed the bride and groom are devoted to one another as two bodies, one light.
After the ceremony, everyone celebrated with food and drinks while exploring the stunning setting of Cedar Creek Winery. We wondered through the vineyards picking grapes and enjoying a beautiful sunset. We hope you enjoy looking through this amazing wedding and we are so thankful to be able to have told Akshita and Chad’s story.

Growing up in Brisbane, my parents would often take our family for short getaways to the western Scenic Rim region known for its picturesque mountain ranges. We’d visit country spots like Boonah, Lake Moogerah and Mt Barney. I have lovely memories of those times (aside from the sticky vinyl upholstery in Dad’s old 1970s Ford Falcon).
These days I live near Brisbane’s Mt Coot-tha Forest where I love walking the trails. When the opportunity arose to “spread my hiking wings” and do the Spicers two-day Scenic Rim Trail earlier this year, I jumped! The Scenic Rim Trail is located on the Western edge of the region and showcases a small part of The Great Dividing Range. Heading out that way again reminded me there are many wonderful, lesser-known places on Brisbane’s doorstep. And a range of exciting new businesses are breathing fresh life into the region.

Activity: Spicers Two-Day Scenic Rim Trail
The two-day Scenic Rim Trail is an enriching active travel experience run by Spicers Retreats, a company committed to protecting the environment, and providing sustainable ecotourism experiences for future generations. Experienced guides lead small groups through a region comprised of 30,000 hectares of World Heritage Listed National Park, Gondwana Rainforest, and Spicers Peak Station – a privately owned 2000-hectare nature reserve.
The trail showcases some of South-East Queensland’s spectacular high country and it is Queensland’s only addition to the Great Walks of Australia collection. All gear, food, drinks, and accommodation are provided, so logistically the experience is hassle-free. Some sections are steep and challenging so you need a good level of fitness. Hiking poles are provided to help increase stability, and they’re very helpful – I’m a convert! Our guide, Chris, was an affable and knowledgeable young man. He kept a caring eye on everyone, assisting as needed and providing an interesting commentary when relevant.
DAY 1 is spent making our way through the diverse flora and fauna of Mount Mitchell and eventually to its peak, where we’re rewarded with epic views out to Moreton Bay. We’re lucky enough to spot a juvenile koala in the wild, along with a red-necked wallaby, and a snake. In the afternoon we descend Mount Mitchell and traverse into Spicers’ nature reserve before heading up into Spicers canopy for the night.
DAY 2 sees us moseying along Oakey Creek bed before beginning a long, gradual climb up Cedar Mountain. We follow the mountain’s ridge and eventually scramble up over some rocks into the Gondwana heritage-listed rainforest. This ancient ecosystem is truly awe-inspiring ensconced in a light mist, with entangled vines, lush ground cover and a diverse canopy – a rare, and incredibly beautiful natural environment. The walk ends at Spicers Peak Lodge, where we’re greeted like long lost kings and queens and provided with welcome refreshments. Nature lovers and foodies will thoroughly enjoy this experience!

Stay: Spicers Canopy
Spicers Canopy is set on a lower plateau of the Spicers Peak Station property. It offers glamping at its best, and after a solid day of hiking it is so nice to be rewarded with a little relaxed luxury (not to mention a glass of wine!). Each African-safari style tent features king or twin beds with fine linen, bedside tables and a covered deck with a comfortable armchair perfect for taking in the views to Mount Mitchell. A communal main lodge has a generous lounge area and an open fireplace, a dining area, and sliding doors that open onto a wide verandah. There’s also an outdoor hot tub and cute firepit perfect for gathering for a pre-dinner drink or a stargaze.
A highlight of Canopy is the gourmet meals prepared on-site by a Spicers chef. They feature local produce, some of which is grown in the kitchen garden at the nearby Spicers Hidden Vale country retreat.
The staff at Canopy are friendly, attentive and entertaining, which makes the overall experience very enjoyable.

Shop + Experience:
Sarah Bottle of Elegance & Grace, and Jade Cook of Jade Beauty Skinstitute share an old shop space in the tiny, charming town of Kalbar – located between Spicers Peak Station and Brisbane.
Sarah stocks a range of gifts and homewares featuring locally made leatherwork, sculptures, and ceramics, while Jade has a beauty therapy treatment room and nails station within the space. She stocks Dermalogica and other select beauty products, and a small section of gifts and homewares.
On the day we visit, Jade is tending to a sick child, but Sarah warmly welcomes us and shows us around. A teacher by trade, Sarah moved to Kalbar a year ago with her partner and young children. The shop is now celebrating its first birthday, business is going well, and Sarah and Jade are excited for the future of their unique, combined offering!

Eat + Drink: Scenic Rim Brewery
What an unexpected gem in the tiny town of Mt Alford this is! Just a 20-minute drive from Kalbar, the Scenic Rim Brewery is well worth a visit. Housed in the old Mt Alford General Store (est. 1884) Mike and Wendy Webster purchased the run-down property in 2014, convincing three levels of government that it was a good idea to renovate, extend and install a brewery. They opened in December of 2016 and it’s been onward and upward from there!
Mike was previously a builder with a keen interest in home brewing – he created his first brew in his kitchen over thirty years ago. The couple’s Dutch and German heritage means their menu is dotted with delicacies such as Bitterballen and Bratwurst, amid other healthy (and not-so) treats.
But of course, the highlight here is the beer! And a paddle tasting sampler did not disappoint. My fave was their newest brew, Beauty and Blue Spiced Pumpkin Ale – so damn smooth, and naturally brewed with local Beaudesert Blue pumpkins and water harvested from the mountains and valleys of the Scenic Rim.

The cellar door was designed by architect, Con Zahos. It responds exceptionally well to David’s brief: a barn style, though sharp, modern & edgy, reflecting masculine and feminine elements, that blends well with the environment and topography. Wine + Dine: The Overflow Estate 1895
15 minutes from the country town of Boonah, and 30 mins from Mt Alford and Kalbar, you’ll find this gem of a winery en route to Beaudesert. Owner David Morgan is a charming character who provides a wonderful introduction to the property, as we sit on the deck of his architecturally-designed cellar door.
David respectfully acknowledges that Indigenous people were on this land for generations. Though from the 1860s, the land became a farming plot. In 1895 Edgar Joyce, an Irishman, and his wife Nina Perse, bought the land and called it The Overflow. Fast forward 111 years and David Morgan and his wife purchased the land in 2006 from the Joyce Dynasty; they were inspired to create their own vineyard after visiting a friend’s Spanish Bodega. David extended the property’s name to The Overflow 1895 to pay homage to the previous owners.
The Vineyard’s rootstock was planted in 2012 and the Morgans have since nurtured the four unusual varieties that underpin their offerings; they are all grapes with Mediterranean origins well suited to the native terroir. Everything is done by hand at this vineyard, and the Morgans get so much pleasure from being able to share the fruits of their small team’s labour with visitors!
The cellar door offers a full menu and wine tastings on Friday, Saturday + Sunday (and a reduced menu on Wednesday and Thursday) – with live music every Sunday. The day we visit, I enjoyed a delicious local cheese and antipasto platter, some Towri sheep cheese yoghurt & tomato bruschetta, nicely complemented with a glass of their Storm Cru Sparkling wine. All divine! I can’t wait to return on a Sunday afternoon.

Australia’s Gold Coast is a surfing destination but even if you don’t surf, there is so much to do here for families, adventure seekers and beach lovers, like me! From a rainforest hinterland to theme parks, nightlife, street markets, wildlife sanctuaries and some truly unique experiences such as hang-gliding and glowworm caves, there’s something for everyone.
What immediately catches your attention in Australia’s Gold Coast is the skyline – tall skyscrapers looming against the golden sand beaches, enormous waves, and a boundless ocean. You’re highly unlikely to encounter an overcast day here and the extensive coastline is dotted with surfing breaks, glorious warm waters and immense opportunities to capture the perfect sunset.
My Australia trip started in Melbourne and lasted for about 3 weeks and this meant, letting go of a lot of things that I would have liked to do if I had more time. I spent 2 days in the Gold Coast but I could have easily spent a couple more. I’m very much a theme park enthusiast, but having been to several across the world (and also, because I was travelling with my senior parents), I decided to focus on other unique and uncommon activities while here. I have, however, in my post mentioned those things which I had to skip but wish I could have included in my trip.
Australia’s Gold Coast wasn’t as exciting as visiting Cairns and Great Barrier Reef, or even the Whitsunday Islands but it was a close third in my list, especially because I fell in love with Byron Bay. I drove here from Brisbane, via Tamborine Mountain but if you’re already in Gold Coast, then I suggest you start your trip with a visit to the Tamborine Mountain early in the morning. To make the most of your trip, renting a car would be a great idea!

Day 1: Tamborine Mountain & Gold Coast
Although there are other options such as Springbrook National Park & Lamington National Park, I chose Mt Tamborine because of the diversity of experiences available here. Hardly a 40-min drive away from Surfer’s Paradise in Australia’s Gold Coast, Tamborine Mountain is a lush rainforest with rock pools, canopy walks, hiking trails, adventure parks, and even wineries. You can easily spend a day here so the earlier you start, the better it is!

Cedar Creek Falls: Rock Pools
A fairly narrow road that branches off from the Tamborine Mountain road will bring you to the Cedar Creek Falls. Be prepared for a walk down to these falls from the car parking lot. If you’re not keen on going all the way down to the falls, you can walk to the lookout point (500m) and return. However, on a bright and warm day, you will surely want to carry your swimwear, sunblock and sunglasses to be able to jump into the cool waters of the rock pools formed below the waterfalls. The track ahead of the viewpoint is likely to be slippery so its best to wear comfortable and rugged footwear. A series of cascades and pools which are frequented by the locals can be found once at the bottom of the walking path. A dip in these shallow pools is well worth your while!

I went here specifically for the Canyon Flyer Tour, considered to be Australia’s highest and fastest zip line attraction. While it sounded like the most exciting experience at the park, there were, of course, other activities for the lesser adventurous people. The Canyon Flyer Tour takes you to 7 highly exciting zip lines, soaring you over the lush rainforest and Cedar Creek gorge below. The groups are usually small and the session timings are fixed, so it’s best to find out the availability and the timings before planning your visit. The tour lasts for about 3 hours and costs $120.
If you’re looking for something slightly less in the adrenaline department but exciting, nonetheless, you can visit the Treetop Adventure park that has Tarzan swings, flying fox swings, easier zip lines and other rope courses, suitable for the younger people too. Whichever you plan to do, keep about 3-4 hours for this experience. If you’re interested in any of the activities, you can simply enjoy some quiet time by the creek or in the cafeteria.

Tamborine Rainforest Skywalk
If you’re not really an adventurous person and would rather skip the Treetop challenge and Thunderbird Park, there is yet another way to enjoy the view of the thick forests from the top. This canopy walk is about 1.5 kilometres on a stable platform, that takes you amidst the flora and fauna of the Australian rainforests, providing ample insights into the trees, insects, birds and animals that can be found in the area. A leisurely 45-minute walk takes you past waterfalls, creeks and gorgeous greenery. The experience costs only $20.
Glowworm Caves
Glowworms are typically found only in Australia and New Zealand, so although these caves in the Tamborine Mountain are artificially created and are no match to the Waitomo Glowworm Caves in NZ, it’s a rare experience nevertheless. Due to the ever-increasing temperatures in Australia over the last few years, these caves were purpose-built to provide a controlled environment for the glow worms to survive. The entrance to these caves is through the Cedar Creek Estate Vineyard & Winery. The tours depart every hour (you can utilize the waiting time in trying out some wine at the cellar or the restaurant on site), and the knowledgeable, as well as passionate guides, explain the significance the mode of the life of these glow worms. The alluring blue glow of the worms is a way of hunting for prey and when thousands of these worms are gathered in one dark cave, it forms a sea of starry lights. One needs to get accustomed to the darkness inside the caves; no photography is allowed. The tour itself lasts for about 30-45 min.

Back to Australia’s Gold Coast
In the afternoon, head back to Gold Coast. If you manage to get here before sunset, head to Sky Point Observation Deck, located on the 77th floor of Q1 near Surfer’s Paradise, one of the tallest buildings in Australia. You can enjoy panoramic views of the Gold Coast’s skyline and coastline. If you’re an adventure enthusiast, you can also attempt the Sky Point Climb which starts from the 77th-floor observation deck and is one of Australia’s highest external building walks. Harnessed and ready to climb 298 stairs to the building’s summit, this activity reminded me of the edge walk in Toronto’s CN Tower, except that this one actually requires for you to climb higher than you already are and the only way down is via those stairs. A handrail and harness definitely make the climb easier and safer and the views are absolutely worth it. Needless to say, this experience is NOT meant for the faint-hearted, especially if you’re acrophobic!

Perhaps one of the most golden sunsets I’ve seen was at Australia’s Gold Coast. Not only is Surfer’s Paradise Beach the best for surfing enthusiasts but it is also the most lively with an esplanade with walkers, cyclists and skateboards, and offers the best views of the ocean possible. Several restaurants are located across the road from the beach and one of my favourites was a Mexican restaurant called Gringo Loco Cantina.

We were fortunate to be in Australia’s Gold Coast on a Wednesday night because these amazing beachfront night markets are held on Surfers Paradise only on Wednesday, Friday and Sunday nights (4 to 9 pm). A very lively atmosphere with entertainment, music and stalls selling local arts, souvenirs, foodstuff, fashion, jewellery and homewares, I was impressed with the designs and collection available here. I am totally a street market person and a sucker for good deals, fashionable clothes, unique and authentic food items and handicrafts.

Day 2: Coolangatta and Byron Bay
Slightly more laid-back and pristine than Gold Coast’s Surfers Paradise is Coolangatta, which is located about 30 minutes away by road and on the way to Byron Bay. It is also the border between Queensland and New South Wales and the intriguing part is, that within a span of seconds, you switch from one time zone to another (New South Wales is an hour behind), in the summer month (Oct-Apr). Some popular beaches/ viewing platforms here include Kirra beach, Rainbow Bay, Snapper Rocks and Point Danger.
Another 50-min drive ahead of Coolangatta is one of the most beautiful coastal cities I’ve seen in a while – Byron Bay. Yet another surfing paradise, I loved this place because of the crystal clear blue waters which were a feast for the eyes. On a warm sunny day, the waters are perfect for kayaking or swimming or even better, hang-gliding!

Although Byron Beach and Wategos Beach are the two most popular beaches to visit in the area, if you’re looking to stay away from the crowds, Tallow Beach is completely untouched! However, you’re also highly unlikely to find any restaurants or bars in this area; it is a long, untouched stretch of pure golden sand and blue waters, where it is not hard to spot dolphins and manta rays. For some of the best vantage point views, head to Fisherman’s Lookout, where an elevated platform offers some breathtaking vistas of the ocean. Grab a quick bite at The Pass Cafe while you’re here.

Another popular point to head to is the Cape Byron Lighthouse which offers sweeping views of the Pacific Ocean. The lighthouse stands at the tip of Cape Byron and an easy 4-km walking track is a great way to enjoy the scenic place. But the one activity I highly recommend, especially for adventure enthusiasts, is hang-gliding!

Although I found the activity slightly pricey, there’s no feeling like soaring in the skies and enjoying (literally) a bird’s eye view of such a beautiful destination. Of course, the activity is highly dependent on the weather conditions so it’s best to check before planning the trip if it is taking place on that day or not. I flew with Peter Aitken, a chief flying instructor at Lennox Head (you can book your experience here) and the flight lasted for about 30 minutes during which he taught me how to manoeuvre the hang glider, we saw some dolphins in the sea below and talked about how amazing it is they have the freedom to fly so high in the skies, at the mercy of the winds, without any motor or engine.

Day 3: Warner Bros Movie World Theme Park or Currumbin Wildlife Sanctuary
Unfortunately, my trip was only for two days so I could not fit in either of these options into m itinerary. I prioritized visiting Byron Bay, Mt Tamborine & Surfers Paradise in the limited amount of time on hand. Also, since I had already got my kangaroo and koala fix in Cairns, I was not disappointed about skipping Currumbin Wildlife Sanctuary. If you have not made it to the many parks in Australia, you might want to head here, the park is hardly about 30 minutes away from Surfers Paradise.
Also, visiting a theme park in Gold Coast is one of the top things to do; ‘Goldie’ (as Australia’s Gold Coast is lovingly called) is a theme park enthusiast’s paradise, with several options available such as Warner Bros Movie World, Sea World & Dreamworld. Once you’re over feeling star-struck, enjoy jivin’ music on the sweeping verandahs with a two or three-course Italian meal, while the kids keep busy with weekend boomerang throwing, whip cracking, animal feeding and sheepdog demonstrations.
Wine tour options: Ditch the kids and treat your better half to an epic six-hour scenic wine tour with Pterodactyl Helicopters, dropping in at Albert River plus three more award-winning wineries on the eastern side of the Scenic Rim. Sarabah Estate Vineyard

Mount Nathan Winery
Set in the rich nectar of a Paulownia plantation on the lush Clagiraba Creek, this winery comes with a sweet twist – of honey, courtesy of the 200 beehive colonies producing fermentable goodies (you can also stock up on ports, creams, cocktails and mixer drinks).
The hands-on production means sampling wine from the barrel (come on, everyone wants to do that) and also sheep feeding, yabby and bee observation.

Artistic folk listen up, as this stop is bound to blow your creative mind as well as your taste buds. Cedar Creek Estate is famous for their two varieties of grape, verdelho and chambourcin, which is also producing a sought-after Rosé. But the sensory experience doesn’t stop there.
Treat your peepers to the natural aspect and creations of Arthur Hamblin’s Australian Outback Art Gallery on site, or join a guided tour of the glow worm Cathedral Caves nested in the surrounding rainforest.

What Do the Country’s Top Sommeliers Bring to a BYOB Dinner?

“I’ve loved these wines for a long time, and this vineyard is special, and the 2014 magnum is rare!” Patrick Cappiello said excitedly. He grabbed the Dard et Ribo Crozes-Hermitages “Les Rouges des Baties” off a table in the basement of NYC’s Peking Duck House, a favorite BYOB party room of area sommeliers. “I’ll pour you a giant glass.”
That Northern Rhône wine made sense. The occasion was a dinner for producers visiting for a Rhône wine festival. It wasn’t the only thing that the wine director of Philadelphia’s Walnut Street Café was sharing that night. Jolie Laide Trousseau Gris Rosé, PAX Gamay Noir, PAX Sonoma-Hillsides Syrah — Cappiello had also brought a trio of California esoterica to share with the vignerons in attendance. It was an opportunity to show off the homegrown talent he distributes through his company, Renégat Wines. “We’ve been drinking French wines for a long time, so it’s about f*cking time, right?”
Sharing for pure pleasure, or sharing with an agenda? Pouring the tried and true, or busting out a maverick? As we tasted through the wines that Cappiello and other sommeliers had pulled from their personal stashes to share that night, I wondered what pros who weren’t there would have brought.
On the restaurant floor, sommeliers have other masters than themselves: the food, the diner, the bottom line. When off the clock, what bottles do they open to impress, and why? I asked the question of sommeliers all over the country. It turns out that the pros have some principles in common for the wines they use to wow pals.
Go Big or Go Home
You’d think that when sommeliers want to make a splash, they’d just pour big-name trophies. Sometimes they do: the Francois Raveneau Chablis that Evan Zimmerman, of D.C.’s Reverie, cracks open; the 2007 magnum of Carlisle Winery James Berry Vineyard Syrah that Leonora Varvoutis of Houston’s Coltivare “drools over.”
“But you don’t want to push too hard in that direction, or the bottle comes off as pure braggadocio,” says Steven Grubbs, wine director at Atlanta’s Empire State South. Rather, pros try to offer something unique.
“It’s nice to check in on the icons,” Caleb Ganzer of Manhattan’s Compagnie des Vins Surnaturels says, “but extra points if it’s a rarer bottling.” His go-to? Cedric Bouchard La Bolorée 2009, made from a tiny parcel of Pinot Blanc. With a golden apple core and a texture like compressed croissant flakes, it’s all the more impressive because it’s surprising. “People don’t realize you can make Champagne with Pinot Blanc,” he says.
That wine goes for about $600 on lists, but bigness isn’t just in a name or price tag. Michael Corcoran, of Peppervine in Charlotte, N.C., likes something brawny, “a wine that will unfurl in a decanter a few hours while more timid bottles are consumed and forgotten.” Dal Forno Romano’s Valpolicella Superiore, for instance, is a third the price of Amarones because its grapes have been air-dried half as long. But it’s “redolent of sugar plums, kirsch, baked black cherries, cedar, balsam, spice, and smoked meat,” he says, a bruiser that brings “lasting memories.”
Speaking of big, pros insist that size does matter. Patrick Laman of Chicago’s Maple & Ash found his wow factor in a 1985 Diamond Creek “Gravelly Meadow” Cabernet not only because of its Californian staying power — “My friends were laughing at how primary it still was after 30-some years” — but because it was a 6-liter bottle. “Everybody had more than their fair share.”
Element of Surprise
Somms take many routes to get their drinking buddies to that a-ha moment. Alexandra Rovati, head sommelier at Manhattan’s DaDong pours a familiar varietal from an unexpected locale. “Barely anyone has heard of Argentinean Pinot Noir,” she says. Particularly in its 2011 vintage, Bodega Chacra “Cincuenta y Cinco,” a biodynamic, old-vine Pinot, is the velvety knockout she brings to dinner parties.
Commanders Palace sommelier Dan Davis flipped that equation recently with an unexpected varietal from a classic region. He was pouring for a Burgundy blind tasting group. “The first thing that struck everyone was the color — almost golden, with flashy highlights,” he recounts. “It looked at once young and old. The nose was lemon curd and almond.” The group was stumped. “Remember,” he told them, “there is more than one white grape in Burgundy.” The wine was a 2007 Domaine Ponsot Clos des Monts-Luisants Premier Cru Morey-St.-Denis, Burgundy’s only premier cru Aligoté. “Everyone was excited to taste a special bottle and learn something in the process.”
For others, the surprise is in the sticker shock — in reverse. A wine that’s a steal can really impress. For Ryan Bailey, wine director of the NoMad in Los Angeles, that bottle is low-intervention Lancelot-Royer Champagne. It expresses the minerality of its grand cru vineyards, but with a richness from aging. “I probably shouldn’t be too vocal about it because not a lot is made and it’s still incredibly affordable,” he says. “But tasted side by side with big house and cult grower Champagnes, these wines leave them in the dust.”
Better with Age
Most somms agree with Maple & Ash’s Michael Loveisky: “Drinking a wine that is older than yourself or produced the year you were born forces you to have some perspective.” But an aged wine only works if it’s as ready for drinking as you are. “My non-sommelier friends don’t have the knowledge to select properly aged wines,” he says, “so this is one of my favorite ways to impress them.”
For a recent get-together, Kevin Bratt, the beverage director of the Joe’s Seafood, Prime Steak & Stone Crab group, uncorked a 1995 magnum of Château La Croix de Gay Pomerol. The wine, he says, “was in a beautiful place and continued to evolve through the night.” What made it a conversation piece was Bratt’s perfect timing.
Of course, some producers do that work for you. Rustic Canyon Family wine director Kathryn Coker trusts in the Domaine de Vieux Château 1er Cru Chablis “Le Lys” 2005 precisely because of it’s aged so long in-house. “The ‘05 is the current release and it was just bottled in 2016!” she says. That time in the barrel leaves the wine textured and complex enough for a special occasion.
Best is an aged wine that subverts expectations. When she wants to impress, master sommelier Pascaline Lepeltier opens wine from her native Loire. Lately, she’s pulling out “a wild card”: aged Muscadet, like the 1989 Luneau-Papin Le L d’Or. “Everybody is surprised,” she says. “It’s incredibly briny and easy to drink but super complex at the same time. You realize it doesn’t need to be full or rich or dense to be good.”
Unsung Heroes
Somms such as Lepeltier like to knock friends’ socks off with underdogs that over-deliver. For Karen Van Guilder-Little, of Nashville’s Josephine, that means Zinfandel. Big, dark, and juicy but not overbearing, the little-known A. Rafanelli from Sonoma’s Dry Creek Valley has an elegance unexpected in a Zinfandel, she says. It’s a vehicle for her rehabilitation of the varietal. “I know it’s not cool to like Zin, but this bottle will convert people,” she says.
For Maurice DiMarino, beverage manager of SoCal’s Cohn Restaurant Group, sharing outliers with fellow somms is a service to the industry. “I like to remind them that almost every region is doing something unique,” he says. At a bottle share with master somms, he poured Lagrein from the Serra Guacha in Brazil, a region he describes as “dismissed by many and undiscovered by most.” The wine was “beautiful, fresh, and racing with acidity.”
Andy Hata of Cleveland’s Urban Farmer is the gutsiest underdog promoter. His current favorite is the 2017 M Cellars Reserve Pinot Noir. Though its cherry-raspberry juiciness evokes the Williamette Valley, and its earthiness and structure “scream Burgundy,” it’s made 45 minutes from downtown Cleveland. “Mention the words ‘Ohio wine’ and people’s expectations are for the worst,” he says. “Then blind taste them on this and blow their minds. In our local sommelier tasting group, it is not uncommon for one of us to sneak this into a lineup next to top Pinot Noirs from around the world. It always over-performs.”
A Story to Tell
Whether they’re pouring a star or a sleeper, a lot of professionals agree with Maple & Ash’s Frankie Villar: “The personal connection is what makes the difference when aiming to impress.” A 2010 magnum of the biodynamic, single-block Churton Pinot Noir “The Abyss” is his wine to share, not just because it’s only produced in exceptional years but because, as an intern at The Abyss in 2015, he walked the slopes where the grapes were grown.
Some sommeliers’ choices are Proustian. Angela Gargano, wine director at Montana’s Triple Creek Ranch, grew up in a Sicilian family. “Hidden gems” like the bright, aromatic 2016 Fattorie Romeo del Castello by producer Chiara Vigo, the third generation of women to grow grapes at her family estate on Mount Etna, evoke memories for her.
Others like to share souvenirs of their travels. Jake Yestingsmeier of Omaha’s Monarch Prime looks for tasting room-only finds like Cliff Lede’s “Rockblock Series” Cabernet, whose blend and label change with each vintage. For Francesca Maniace, it’s the story of the hunt that elevates a bottle. The Jerome Prévost Fac-Simile Rosé Extra Brut that she recently brought to dinner was “vinous and expressive with intense depth and complexity of fruit.” But Maniace, the wine director at San Francisco’s Che Fico, valued it all the more because her purchase, at a shop in Reims, coincided with a chance meeting with Prévost himself.
On a Mission
Some sommeliers argue that the important thing to impress upon companions is a political or environmental statement. Their favored bottles reflect their mission. Allie Poindexter of Nashville’s Henrietta Red highlights the women who are transforming the wine world. If you drink with her, she’ll open an SP68 by celebrated young Sicilian producer Arianna Occhipinti. The mineral, terroir-driven white is “a jumping off point for conversations surrounding alternative growing and winemaking methods, gender in the industry, and the trajectory of Sicilian wines,” she says. Ditto the wines of Elisabetta Foradori, “a standard-bearer for native varietals” in the Dolomites. Her lively, polished Foradori Vigneti delle Dolomiti Teroldego, says Poindexter, “is a great example of the benefits of sustainable farming practices.”
Vinny Eng, who just left his gig as the wine director of San Francisco’s Tartine Manufactory, is a champion of emerging talent, especially new producers who haven’t yet picked up distribution. Lately, he’s been sharing wines by the young and “incredibly talented” Claire Hill, who makes “supple, entirely gulpable, fresh, delicious, and really soothing Mourvèdre.”
But whichever new producer he has spotlighted, Eng sums up the motivations behind every sommelier’s wow-factor bottle: to give friends an experience they won’t soon forget, and to connect through the shared pleasures of the palate. “What I love about the wine community and how it evolves is that you have room for more and more voices,” says Eng, “and it creates a beautiful experience for individuals to find affinity for things they hadn’t known they had an affinity for.”
