Best Slow Cooked Beef Stroganoff*
*as created by me, on accident.
Ingredients
1 can golden mushroom soup
1 lb cubed beef stew meat (or whatever's cheap)
1/4 cup beef or chicken broth
1 tablespoon Worcestershire sauce
1 can sliced water chestnuts
1 tsp chives
Garlic (2 cloves? whatever your heart tells you)
4 ounces (1 package) cream cheese
Step 1: Combine soup, beef, broth, and sauce in slow cooker.
Step 2: Realize the recipe called for 1 onion and you don't have any in the house.
Step 3: Panic and throw in some garlic despite that being nowhere in the recipe. Panic more, add water chestnuts because they're crunchy and some chives because they're related to onions, right? Add more garlic because now you've committed.
Step 4: Cook on Low for 8ish hours while you're at work. It's in the Lord's hands now.
Step 5: Stir in cream cheese just before eating (on rice or noodles. or whatever)
I don't know what happened here but it tasted amazing.

Food Adventures of April-May
I tested out my local grocery store's service by picking out four recipes & then having the ingredients delivered to my doorstep (together with my regular groceries). The recipes I chose were
Chicken drumsticks with teriyaki noodles
Halloumi Stroganoff (I did not eat all of that salad haha)
Thai noodles with minced chicken sauce
Indian curry on minced chicken (I realised too late that I should have opted for a bowl)
Out of these four, my favourite was the halloumi stroganoff! I definitely recommend Googling a recipe to try it out for yourself. This surprised me because I had actually never tried or cooked halloumi before, so I was nervous about trying that one out.
The next "food adventure" will probably be sometime in June, so stay tuned!

I know it’s #controversial but my faaaaavorite recipes to make vegan are ones that are extremely not vegan in their typical preparation. literally give me a recipe for chicken paprikash with meat and lard and sour cream and with the 🪄✨💖magic🦄✨🧙🏻‍♀️ of basic food science + cooking knowledge I will substitute ingredients and get something 95% as good and with 100% less animal parts in it. I love making beef stroganoff and crêpes and crème brûlée and beefy cheezy enchiladas and nachos and chili con carne. but vegan. it’s fun and exciting. sorry haters.

With a roll of her eyes, she grabbed a knife and cut the box open, flipping the flaps to peer inside. Setting the knife aside, she reached into the box and pulled out the recipe cards, looking them over. We often use hamburger in our freeze-dried meals like stroganoff, chili, and just about any pasta meal. It is super easy to reconstitute right in the mylar package with liquids like beef broth, bone broth, or even chicken broth depending on the flavor profile you are looking for. You can always use water as well.
How Long Does Freeze-Dried Ground Beef Last?
When properly stored, freeze-dried ground beef can last for many years up to 25 years. It’s essential to use thick at least 7mil mylar vacuum-sealed bags, to protect the meat from moisture and light. Stored in a cool, dry place, these packages can remain good for a long period, making them ideal for emergency preparedness. The mylar bags you choose can make or break it. Don’t be cheap here you need to make sure the bags have no windows and you cannot see through them at all. Microscopic air particles will penetrate the bag and destroy the meat. We always use high-quality mylar vacuum sealed and then we put them into 5-gallon buckets that have seals on them so they remain airtight.
Is Eating Freeze-Dried Raw Beef Safe?
Freeze-dried raw beef should be handled with caution. It’s crucial to ensure that the beef has been properly freeze-dried and stored to avoid any contamination. When reconstituting, using broth or boiling water helps to make it safe to eat. We prefer cooking the meat prior to freeze drying as it’s easier to work with for the meals we create.
There are some exceptions when it comes to using the meat to feed your pets. You can freeze dry the meat raw for both dog and cat food or treats.
Can Freeze-Dried Meat Spoil?
Yes, freeze-dried meat can go bad if not stored correctly. Keeping the meat in vacuum-sealed, light-blocking bags and in a dry, cool environment is key. Inspect the meat before use to ensure it’s still hard and crunchy, with no signs of moisture or spoilage.
How to Cook and Make Freeze-Dried Hamburger
Before Starting we turn our freeze dryer on so that it pre-freezes so that the temps reach at least -10 degrees. If you do not feel confident doing this with your machine then we suggest using the Freezer Method.
Cooking the ground beef before freeze-drying is a crucial step. You can add seasonings now or while cooking. We season right away and then also again while the meat is cooking. When the ground beef is cooked in a large pot, the fat naturally starts separating from the meat. We like to reduce the meat down which helps burn off some of the excess grease and water content while adding a richer flavor to the meat.
Drain and Rinse:
After cooking, transfer the ground beef into a colander or spaghetti strainer. This allows the fat to drip into the pot below, ensuring the meat is properly drained. When the ground beef is adequately drained, we rinse the beef to remove any excess grease.
Prepare for Freezing (Freezer Method)
Spread the beef onto the stainless steel trays prepared with or without parchment paper. It doesn’t really matter in terms of taste, however, it does help with the meat sticking to the trays. The trays are then stacked using tray stackers and transferred to the freezer overnight. Freezing the meat before putting it in the freeze dryer helps cut down on the time needed to freeze dry. This doesn’t affect the taste or the end result, so it is not absolutely necessary.
Using The Freeze Dryer as The Freezer (Optional):
If you do not have tray stackers or space you can also use the freeze dryer as your freezer. Turn the machine on and let it run; it will get colder than your freezer anyway. Depending on the model and manufacturer, you can put it into test mode to turn on the freeze cycle without running the drying cycle.
Freeze-Drying Process:
The freeze-drying process can now begin by closing the drain valve and pressing continue on the freeze dryer. The drying process can vary in time, ranging from approximately 30–50 hours, depending on the thickness of the meat on the trays, the outside temperature, humidity, and of course the make and model of the freeze dryer.
Check for Dryness:
After freeze-drying, it’s important to ensure the food is entirely dry, with no moisture left. The food should feel hard and crunchy. You can always purchase a FLIR Camera on Amazon, also known as Forward Looking InfraRed. This will show you any evident hot spots.
Vacuum-Sealing:
The next step involves vacuum-sealing the dried ground hamburger in smaller bags to make the portions manageable and ensure they are correctly sealed for long-term storage. Smaller bags are preferred to avoid having to open large portions, which might lead to waste. Storing the ground beef in plastic containers that block light is recommended to maintain its quality. Using vacuum sealers, such as the Primavac chamber vacuum sealer or a Foodsaver, guarantees the bags are sealed and ready for storage
Calculating Final Weight and Yield
After processing, calculate the final yield to understand the total quantity stored. From an initial 30 pounds of raw ground beef, expect to end up with approximately six and a half pounds of dehydrated meat. This shrinkage is normal and reflects the removal of moisture and fat during the drying and cooking processes. Such efficiency ensures a ready and preserved food supply for emergency needs.**

Kelly Jaggers’ The Ultimate Mediterranean Diet Cooking for One Cookbook is a great and comprehensive collection of single-serving Mediterranean recipes. I love the impressive range of easy-to-follow recipes as well as the helpful tips. However, the book’s layout could have been nicer and I would have loved more pictures.
This well-organised book features chapters on Breakfast; Dips and Snacks; Salads and Soups; Side Dishes; Pasta Dishes; Vegetarian Main Dishes; Seafood; Poultry Dishes; Pork, Lamb, and Beef Dishes; and Desserts. There is also a helpful chapter introducing readers to the Mediterranean diet as well as the process of cooking for one. Jaggers gives useful tips (fresh herbs can be placed in water and stored in the fridge!) and also lists important pantry staples and ingredients like beans, olive oil, and canned tuna. This chapter also features useful tools and equipment.
Although many of the recipes may be time or labour-intensive, all the dishes in this book are approachable for beginner cooks. Many of the ingredients are affordable and accessible pantry staples like chicken, flour, and pasta. However, several of the dishes require quite a few specialty ingredients like feta cheese, clams, polenta, and quinoa. But, they are still moderately inexpensive and not too difficult to find.
There are easy dishes like Spinach and Mozzarella Frittata (made easier with frozen shredded hash brown potatoes), Shrimp Scampi, and Easy Pesto Chicken. You can also try familiar favourites like Shakshuka, Tzatziki Sauce, Baba Ghanoush, and Minestrone Soup. Slightly more difficult dishes include Lasagna Rolls, Beef Stew with Red Wine, and Beef and Mushroom Stroganoff. There are even simple but impressively decadent sweet treats like White Wine-Poached Pear, Frozen Fruity Yogurt Bark, and Red Wine-Poached Figs with Ricotta and Almonds.
The recipes are clearly detailed and easy-to-follow. Each recipe begins with a brief but informative write-up offering helpful tips, useful facts on a main ingredient, tasting notes, ingredient swaps, and a short background of the dish. I also appreciate the inclusion of calorie information and other nutritional values.
The book’s layout is simple and clean but boring. I wish the design was more eye-catching. Furthermore, there are only a sparse handful of pictures which are too simply staged and which do not do the delicious recipes any justice. I would love many more pictures so I can see how the dishes should look.
