The first Cemetery I ever visited and was the Historic Key West City Cemetery. I was 5, I had a fixation on it and begged my mom to take me. A pull in my stomach to the gates. In the moment we entered, it felt like I was in a ancient garden full of Spirits. Little did I know this would be a catalyst to me beginning witchcraft. This also became one of our regular stops when we tale that route.
Growing up Cuban-American in Florida, going to the Keys was a holy tradition, a pilgrimage. This chain of islands is home to many Cuban Exiles, as well as to many other communities including one of the most vibrant queer and drag scenes in Florida.* We always go to the marker that says 90 miles to Cuba, and just look out into the Ocean. Sometimes we pray, or listen to stories told by our grandparents about life on La Isla, lamenting a Land some of us never touched and the rest have trouble remembering.
This is almost always followed by Cuban Food. Our tradition is to walk to El Meson de Pepe, a beautiful restaurant near the sea with art depicting Cuban and Cuban-American culture all over the walls. In one part of this restaurant, they have a small case that exhibits some Cuban history. Its full of historic documents and the such. My Abuelo always walks us through the exhibits to teach us our Ancestors’ history. This is where I learned who El Apostol, José Martí was, and Cuba’s long history of unrest and revolution. Martí inspired revolution against the fascist Spanish monarchy through his writings. I will go more in depth on Florida/Cuban Folk Saints soon.

Florida is a much different place from when I was growing up here. It seems we are progressing in the wrong direction more often than not. The Land and People are suffering. But Paradise is NOT Lost. Florida has always been full of people who’s history the current governor and his cohorts want erased, and we have always fought. We can’t give in to the voices saying to give up and flee. A freer Florida is just around the corner.

Here’s what we know: Jews eat Chinese food. North American Jews did so in the early 20th century, when Ashkenazi immigrants lived near Chinese immigrants in New York’s Lower East Side. We do so today on Christmas. And some of those Chinese-food-eating Jews keep kosher. So, we have kosher Chinese restaurants. The most natural thing in the world. 
What’s a little murkier is when the need for kosher Chinese restaurants announced itself, and who took the lead on bringing them to fruition. 
Those Ashkenazim frequenting Manhattan’s Chinatown were participating in what University of Connecticut sociology professor Gaye Tuchman calls “safe treyf:” There was no mixing of meat and dairy, because Chinese food uses little to no dairy. Treyf ingredients such as pork and shellfish were often fine-chopped and hidden away inside dumplings or egg rolls, according to a piece Tuchman co-authored with Harry Levine, “New York Jews and Chinese Food: The Social Construction of an Ethnic Pattern,” an article in Volume 22 of Contemporary Ethnography.
“I went to Brandeis University,” Tuchman said during a recent phone call. “A whole bunch of us from my floor when I was a freshman… went into Waltham, to a Chinese restaurant. And two of us had a problem, because two of us kept kosher. And the solution was to pull the pork out of an eggroll if you saw it.”
Safe treyf isn’t just a cute phrase, in other words. It’s something Tuchman, a descendant of Ashkenazi immigrants, lived. She posits that even Jews who didn’t keep kosher were turned off by the mixing of dairy and meat because it simply wasn’t something they would have grown up with. But Chinese food quite quickly became something Ashkenazi immigrants and their children did grow up with.
“I think that the first or second kind of restaurant I ever ate out of that, that wasn’t a kosher deli, was probably a Chinese restaurant,” she said.
And so, throughout the 20th century, we see that Jews ate Chinese food whether it was kosher or not, which deepens the mystery of how and why kosher Chinese restaurants came about.
It seems that before there were kosher Chinese restaurants, there were kosher restaurants that served a bit of Chinese food, and some restaurants that served some kosher dishes, some Chinese and some other items as well — maybe casting a wide net to appeal to a variety of immigrant groups. For example, ads in several 1948 editions of the Detroit Tribune tout that a kosher luncheonette called Holiday Dinning [sic] Room serves Chinese and creole food, in addition to spaghetti. (The ad also brags that the restaurant is “specializing in shrimps,” so take its claims of kashrut with a grain of salt.)
A few 1954 editions of the Key West Citizen also proclaim that Einhorn’s Deli serves kosher, Chinese and Cuban food.
The restaurant largely credited as the first kosher Chinese — Bernstein-on-Essex, also known as Schmulka Bernstein’s — follows that model. It opened as a kosher deli in 1957 and began serving Chinese food in 1959. Its owner, Solomon Bernstein, was Jewish, and so were most of the clientele, at least judging by a 1970s ad, but many of the staff were Chinese. Roumanian pastrami made its way into some Chinese dishes. Lo mein Bernstein was made with chicken livers.
Schmulka Bernstein’s, named after Solomon’s father, who was a butcher, stayed open until the 1990s, inspiring at least some members of a new generation.
“I, like many others, went to Schmulka Bernstein’s growing up,” said Elie Katz, co-owner of Chopstix, a kosher Chinese restaurant in Teaneck, New Jersey. “Like many others, we got our car broken into. Part of the experience when you go there, when you’re that age.”
One of the more well-known Jewish-owned kosher Chinese restaurants to follow in Schmulka Bernstein’s footsteps was Moshe Peking, which opened in Manhattan’s Garment District in 1978. Its owner, Martin Soshtain, told the New York Times that he had hired a Shanghai-born chef who was working at a resort in the Catskills and so knew how to cook kosher. The Timesarticle says that sea bass stood in for shellfish, veal for pork and pastrami for ham. 
Katz also hired a Chinese chef when he opened Chopstix in 1996. He says that, above all else, he wanted to open a great Chinese restaurant that would appeal to people of all backgrounds. He points out that keeping kosher and cooking everything to order made Chopstix especially well-suited to accommodate other dietary restrictions, from low-fat to gluten-free.
“We actually have people that give us bottles of their soy sauce that they buy,” Katz says. “We put their name on it, and then they place the order and they’re like, ‘Please use Mrs. Stein’s gluten-free soy sauce.’”
Chopstix also offers a few Korean menu items; many of the contemporary kosher Chinese restaurants do offer sushi and other dishes from East and Southeast Asia — menus at these places can resemble a pan-Asian, non-kosher restaurant. Like their predecessors, they’re trying to reach a broad audience. 
It’s hard to get a count of how many kosher Chinese restaurants there are. Different kosher certifications will obviously list different restaurants, and often vegan Chinese restaurants get lumped in with the kosher on sites like Yelp. It’s even harder to get a handle on which ones have Jewish ownership, and whether any have Chinese owners, Jewish or otherwise. 
What’s clear, though, is that these aren’t relics of the past, frozen in time. Katz says he has second and even third generations coming into the restaurant, in addition to a thriving catering business. The Cho-Sen local chain of kosher restaurants in New York City opened a new spot late last year. If I had to guess, I’d estimate a hundred or so kosher Chinese restaurants exist in the U.S., with the great majority in New York City and its suburbs. Los Angeles comes in second. It may not sound like a lot — a drop in the ocean of 45,000 Chinese restaurants nationwide — but it’s a lot more than we had a century ago. 
As far as why they started cropping up when they did, that’s probably just down to someone needing to be first. And for that, we thank Sol Bernstein.

SAN JUAN, Puerto Rico — 
Tropical Storm Helene formed Tuesday in the Caribbean Sea and could strengthen into a major hurricane while moving north toward the U.S., forecasters said. Heavy rains and big waves already lashed the Cayman Islands, and some Florida residents began to evacuate or fill sandbags days ahead of anticipated flooding.
Hurricane watches were issued for parts of Cuba, Mexico and a stretch of the Florida coastline, including Tampa Bay, the U.S. National Hurricane Center said. A tropical storm warning was issued for parts of the Florida Keys.
The storm was 280 kilometers (175 miles) south of the western tip of Cuba, had sustained winds of 75 kph (45 mph) and was moving northwest at 19 kph (12 mph). It was expected to strengthen into Hurricane Helene on Wednesday as it approached the Gulf Coast and could become a major hurricane Thursday.

In the U.S., federal authorities are positioning generators, food and water, along with search-and-rescue and power restoration teams, White House spokesperson Jeremy Edwards said.
Florida Gov. Ron DeSantis declared a state of emergency Monday ahead of the storm's arrival on the state's Gulf Coast as soon as late Thursday and increased the counties included in the high-risk area Tuesday from 41 to 61. Florida A&M University postponed its upcoming college football game against Alabama A&M.
"Now is the time to start preparing. If you're in an evacuation zone, you should evacuate," said Lisa Bucci, a specialist at the hurricane center as around 10 Florida counties urged or ordered evacuations. "Don't be fooled by the way the storm looks at the moment."
Hal Summers, a restaurant worker in Mexico Beach, Florida, heeded warnings after he barely survived Hurricane Michael in 2018. DeSantis has said Helene is reminiscent of that Category 5 hurricane, which rapidly intensified and caught residents off guard before plowing a destructive path across the western Florida Panhandle.
When it hit, Summers waded with his cat in his arms as waters began rising rapidly in his parents' house. Their house and his home were destroyed.
"That was such a traumatic experience that that is not the place I needed to be for myself," he said Tuesday as he evacuated with a friend to Marianna, a town farther inland.
Helene is expected to move over deep, warm waters, fueling its intensification. People in regions under watches and warnings should be prepared to lose power and should have enough food and water for at least three days, Bucci said.
Helene, the eighth named storm of the Atlantic hurricane season, could strengthen into a major Category 3 hurricane — with winds of at least 178 kph (111 mph) — before approaching the northeastern Gulf Coast. Since 2000, eight major hurricanes have made landfall in Florida, according to Philip Klotzbach, a Colorado State University hurricane researcher.
Given the anticipated large size, storm surge, wind and rain will extend far from the center of the expected storm, especially on the eastern side. States as far inland as Tennessee, Kentucky and Indiana could see rainfall associated with the storm, Bucci said.
A tropical storm warning was in effect for Florida's Dry Tortugas; the lower Florida Keys west of the Seven Mile Bridge; Rio Lagartos to Tulum, Mexico; and the Cuban provinces of Artemisa, Pinar del Rio, and the Isle of Youth. A tropical storm warning for Grand Cayman was dropped.
A storm surge watch was in effect for Florida's Tampa Bay, Charlotte Harbor, and from Indian Pass south to Flamingo. A tropical storm watch was issued for the middle Florida Keys from the Seven Mile Bridge to the Channel 5 Bridge; Flamingo to south of Englewood; and from west of Indian Pass to the Walton Bay County line.
The sun shone Tuesday in Tarpon Springs, Florida, but residents already filled sandbags as they braced for potential flooding.
Officials in the Cayman Islands closed schools, airports and government offices as strong winds knocked out power in some areas of Grand Cayman, while heavy rain and waves as high as 3 meters (10 feet) unleashed flooding.
Many in Cuba worried about the storm, whose tentacles are expected to reach the capital of Havana, which is struggling with a severe shortage of water, piles of uncollected garbage and chronic power outages.
Helene is expected to slip between Cuba and Mexico's Yucatan Peninsula early Wednesday and then head north across the Gulf of Mexico.
Up to 20 centimeters (8 inches) of rain is forecast for western Cuba and the Cayman Islands with isolated totals of 30 centimeters (12 inches). Up to 15 centimeters (6 inches) of rain is expected for the eastern Yucatan, with isolated totals of more than 20 centimeters (8 inches).
Heavy rainfall also was forecast for the southeastern U.S. starting Wednesday, threatening flash and river flooding, according to the National Hurricane Center. Up to 8 inches (20 centimeters) of rain was forecast for the region, with isolated totals of 12 inches (30 centimeters).
A storm surge of up to 5 meters (15 feet) was forecast from Ochlockonee River, Florida, to Chassahowitzka, and up to 3 meters (10 feet) from Chassahowitzka to Anclote River and from Indian Pass to Ochlockonee River.
The Atlantic hurricane season runs from June 1 to Nov. 30. The National Oceanic and Atmospheric Administration has predicted an above-average Atlantic hurricane season this year because of record-warm ocean temperatures. It forecast 17 to 25 named storms, with four to seven major hurricanes of Category 3 or higher.
In the Pacific, former Hurricane John killed two people after it barreled into Mexico's southern Pacific coast, blowing tin roofs off houses, triggering mudslides and toppling scores of trees, officials said Tuesday.

Harris and Trump Bet on Their Own Sharply Contrasting Views of America (NYT) Donald J. Trump’s America is a grim place, a nation awash in marauding immigrants stealing American jobs and eating American cats and dogs, a country devastated economically, humiliated internationally and perched on the cliff’s edge of an apocalyptic World War III. Kamala Harris’s America is a weary but hopeful place, a nation fed up with the chaos of the Trump years and sick of all the drama and divisiveness, a country embarrassed by a crooked stuck-in-the-past former president facing prison time and eager for a new generation of leadership. These two visions of America on display during the first and possibly only presidential debate between Ms. Harris and Mr. Trump on Tuesday night encapsulated the gambles that each candidate is taking in this hotly contested campaign. Mr. Trump is betting on anger and Ms. Harris on exhaustion. Mr. Trump is trying to repackage and resell his “American carnage” theme eight years later, while Ms. Harris is appealing to those ready to leave that in the past. The question is who has a better read on the American psyche eight weeks before the final ballots are cast.
Cuba’s Broken Economy (El Espectador/Colombia) Cuba is on a downward spiral and appears to be headed for economic collapse. Cubans lack essential items such as food and medicine, especially milk and bread, while the prices of other products, such as gasoline and electricity, have increased by dizzying percentages of up to 500%. The island nation imports 80% of the food it consumes. In 1958, a year before the communist takeover, it was not only self-sufficient in beef, milk, tropical fruits, coffee, tobacco, fish and seafood, pork, chicken, vegetables and eggs, but it also exported surplus produce. Yet today, according to press reports, the magnitude of the crisis is such that Havana has contacted the UN World Food Program (WFP) for the first time in its history to request help. Since 1959 Cuba has systematically suffocated the private sector, renouncing innovation, competitiveness and excellence in the process. There have been consequences.
More than half of Brazil is racked by drought (Washington Post) In the north of Brazil, dried rivers have left communities accessible only by boat landlocked. In the central west, fires are razing what were once wetlands. And in the densely populated southeast, smoke from tens of thousands of blazes is choking cities. Brazil is in the grip of its worst drought on record, Brazil’s Center for Natural Disaster Monitoring and Alerts said this month, a drought that has parched at least 59 percent of Latin America’s largest country and dried out more than 1,400 cities. Along the Rio Madeira in Amazonas state, locals are trekking miles on the hot sands of the dried riverbed in search of water. In the Pantanal, the world’s largest tropical wetland, fires have scorched an estimated 20,000 square kilometers (7,720 square miles). The vast Cerrado region is in the grip of the worst drought in at least 700 years, according to researchers at the University of São Paulo. And the air in São Paulo state has grown so heavy with forest fire smoke that authorities have urged people to avoid physical activity outside.
England’s Health Service Is in Deep Trouble, Report Finds (NYT) England’s National Health Service, one of the country’s most revered institutions, is in “critical” condition, according to a government-commissioned report that cited long waits for treatment, crumbling hospitals, mental health patients in “vermin-infested cells” and far fewer M.R.I. scanners than in comparable countries. The hard-hitting review, published late on Wednesday, was commissioned by Britain’s new prime minister, Keir Starmer, after he won the general election. The dire state of the N.H.S. was a key reason many people voted for his Labour Party in July, according to polls. But the report underscores the scale of the challenge the government faces to revive a health care system that is in a spiral of decline after years of underinvestment and administrative meddling and is still suffering the aftershocks of the pandemic.
Lawmakers review plan to raise retirement age in fast-greying China (Reuters) China’s top legislative body this week assessed an official plan to delay the country’s retirement age, among the world’s lowest, taking a key step towards changing decades-old labour laws and easing economic pressures stemming from a shrinking workforce. The ruling Communist Party said in July that China would gradually raise the country’s retirement age. The retirement age is now 60 for men, about six years below that in most developed economies, while for women in white-collar work it is 55, and 50 for women who work in factories. Having people work for longer would abate some pressure on pension budgets with many Chinese provinces already reeling from large deficits. It would also delay pension payouts and require older workers to stay at their jobs longer, which may not be welcomed by all of them. Reform is urgent with life expectancy in China rising to 78 years as of 2021 from about 44 years in 1960, and projected to exceed 80 years by 2050. At the same time, the working population needed to support the elderly is shrinking.
Pope marvels at Singapore’s skyscrapers and asks that the lowest migrant workers not be forgotten (AP) Pope Francis on Thursday praised Singapore’s economic strength as a testament to human ingenuity but urged the city-state to look after the weakest, too, especially foreign workers, as he opened the final leg of his tour through some of Asia’s poorest countries in one of the world’s richest. In a common appeal from history’s first Latin American pope, Francis called especially for dignified pay and conditions for migrant workers, who have helped build Singapore into one of the world’s most advanced financial powerhouses. “These workers contribute a great deal to society and should be guaranteed a fair wage,” Francis said. Singapore has long touted as a success story its transformation from a colonial port lacking natural resources into a financial and trade power in just a few decades since independence from Malaysia in 1965. The former British colony enjoys one of the highest living standards in the world, and is known for its safety and low crime rate. But it is also one of the most expensive cities to live in and its competitive work environment makes for a stressful, overworked people.
Israeli Commandos Carried Out Raid on Secret Weapons Site in Syria (NYT) Israel carried out a commando raid in Syria on Sunday that obliterated a Hezbollah missile production facility near the Lebanese border, killing a number of people at the site, according to American and other Western officials. The operation included a daring raid by Israeli special forces, who rappelled down from helicopters and apparently seized materials from the missile facility, the officials said. Ground forces were used in the attack because of its complexity and to recover information from the secret weapons site, the officials said, adding that there were no Israeli casualties. The officials said the raid included airstrikes on the sprawling site, the Scientific Studies and Research Center, which is near Masyaf, in the country’s northwest. Syria’s state news agency, SANA, reported on Monday that 18 people were killed and dozens more injured.
New video, witnesses challenge Israel’s account of U.S. activist’s killing (Washington Post) Aysenur Eygi, a 26-year-old Turkish American, was fatally shot in the head on Friday in the village of Beita, near Nablus, following brief clashes after Friday prayers. The Israel Defense Forces said Tuesday it was “very likely” she had been hit “unintentionally” by one of its soldiers. “The incident took place during a violent riot,” the statement said, and the fire was aimed at “the key instigator.” But a Washington Post investigation has found that Eygi was shot more than a half-hour after the height of confrontations in Beita, and some 20 minutes after protesters had moved down the main road—more than 200 yards away from Israeli forces. Last month, another American citizen, Daniel Santiago, a 32-year-old teacher from New Jersey, was shot in the thigh by Israeli forces in the same olive grove where Eygi was killed. The IDF said Santiago was “accidentally injured” when soldiers “fired live rounds in the air” to disperse protesters.
2,000-Pound Bombs Likely Used in Mawasi Strike (NYT) Large craters and a bomb fragment from an Israeli airstrike on a camp for displaced people early Tuesday provide strong evidence that Israel used 2,000-pound bombs, according to three weapons experts. The United States has previously warned Israel that the powerful munitions can cause excessive civilian casualties in the densely populated Gaza Strip, and suspended exporting U.S.-made 2,000-pound bombs to Israel earlier this year. Israel said it had carried out “precise strikes” aimed at Hamas militants, but has so far declined to say what sort of bombs were used. At least 19 people were killed in the blasts and more than 60 others injured, Gazan authorities said, a toll that appeared likely to rise. Video filmed after the attack and verified by The New York Times showed two enormous blast craters measuring close to 50 feet wide.
South Africa’s traveling ‘health train’ (AP) Thethiwe Mahlangu woke early on a chilly morning and walked through her busy South African township, where minibuses hooted to pick up commuters and smoke from sidewalk breakfast stalls hung in the air. Her eyes had been troubling her. But instead of going to her nearby health clinic, Mahlangu was headed to the train station for an unusual form of care. A passenger train known as Phelophepa—or “good, clean, health” in the Sesotho language—had been transformed into a mobile health facility. It circulates throughout South Africa for much of the year, providing medical attention to the sick, young and old who often struggle to receive the care they need at crowded local clinics. For the past 30 years—ever since South Africa’s break with the former racist system of apartheid—the train has carried doctors, nurses and optometrists on an annual journey that touches even the most rural villages, delivering primary healthcare to about 375,000 people a year.
Cholera Deaths Soar Worldwide Despite Being Easily Preventable (NYT) The cholera outbreaks spreading across the globe are becoming more deadly. Deaths from the diarrheal disease soared last year, far outpacing the increase in cases, according to a new analysis by the World Health Organization. Cholera is easy to prevent and costs just pennies to treat, but huge outbreaks have swamped even well-prepared health systems in countries that had not confronted the disease in years. The number of cholera deaths reported globally last year increased by 71 percent from deaths in 2022, while the number of reported cases rose 13 percent. Much of the increase was driven by conflict and climate change, the W.H.O. report said. “For death rates to be rising so much faster even than cases are increasing, this is totally unacceptable,” said Philippe Barboza, who leads the cholera team in the health emergencies program of the W.H.O. “It reflects the world’s lack of interest in a disease that has plagued humans for thousands of years, afflicting the poorest people who cannot find clean water to drink,” he said. “How can we accept that in 2024 that people are dying because they don’t have access to a simple bag of oral rehydration salts that cost 50 cents?”

National Cuban Sandwich Day on August 23 celebrates the joy of devouring a humble yet heroic Cuban sandwich. Whether it’s a casual budget-friendly lunch or evening treat, there’s never a bad time to enjoy the traditional sandwich. But, there’s much more to the Cuban sandwich than the famous flavor combinations.
It’s no secret that the birthplace of the Cuban sandwich — as the name suggests — is from the largest island nation of the Caribbean. The sandwich is mostly characterized by its delectable blend of ham, cheese, pork, and mustard. Moreover, cubanos represent the melting pot of culture in the country!

Florida Governor Ron DeSantis spoke of the threat of a "major disaster". As of 12:00 GMT on Tuesday, the centre of the storm was located about 15km (10 miles) north-east of the city of Pinar del Rio in Cuba, moving north at nearly 19km/h, the US National Hurricane Center (NHC) reports. It said Cuba could see up to 30cm (12in) of rain from Hurricane Ian. Some 38,000 people were evacuated in the province of Pinar del Rio, according to AFP news agency. Cuban authorities declared emergencies in six areas, with forecasters warning of storm surges on the coast, along with flash floods and mudslides. Hurricane conditions are expected along the west coast of Florida on Wednesday. The governor said there could be "broad impacts throughout the state", while residents have been stocking up on food, water, medicine and fuel. "This is a really big hurricane at this point," he said at a Monday news conference, urging residents to "remain calm", but "do what you need to be prepared". Some parts of the US state have not seen a hurricane of this magnitude in about a century. The governor declared a state of emergency for all of Florida over the weekend and has activated 5,000 National Guard troops to assist with relief efforts. National Tamale Day
If you have ever eaten tamales, you know the taste of pillowy, stone-ground corn mingling with delicious fillings, like spicy pulled pork in chile sauce, or melted cheese. National Tamale Day — March 23 — offers the perfect excuse to celebrate this traditional Latin American dish.
A tamale is a pocket of simple corn dough, called masa, stuffed with anything from meat and cheese to fruit and vegetables. Each one is wrapped in a corn husk or a banana leaf, and steamed or boiled before eating.
In pre-Columbian Central America, this was the original takeout meal: filling fare that could easily be packed for a journey. In modern Latin America, tamales are an important part of holiday and special occasion celebrations — a family or a small group might come together to make hundreds to share or sell.
You can start your own tradition, by taking an assembly-line approach and getting the kids or other family members involved to help spread and fill the dough.
Sweet or Savory?            
Part of the beauty of tamales is their flexibility — there are more ways to make one than there are people who make them. Sweet tamales made with fruit or berries can be enjoyed for breakfast or dessert, sometimes dunked in coffee in place of a pastry. Savory fillings, seasoned with cumin, garlic powder, oregano, thyme, and different chiles, are typically eaten at lunch or dinner.                         
Run out of filling? Not a problem — use up the rest of the masa in plain or cheese-stuffed tamales, sometimes called “tontitos" (little fools).
