Gulab jamun. A hugely popular Indian dessert, they play a pretty pivotal role in my book. Jack learns how to make them from his Indian-American mother, but I adapted several recipes I found on the internet (mainly from @manjulaskitchen and @swasthisrecipes) to make mine. The trick is to handle the dough gently. In the book, Jack’s mother tells him to “gently persuade the dough into balls” by giving them a little hug with your palms, and that’s what I do, too.
