Cave & Saint-Guilheim!
On 26 May 2022, we went to a cave called La Grotte de Clamouse. Situated in the picturesque mountains and valleys of the Herault Departement, not far away from the village of Saint-Guilhem, it was formed by the Hérault river as it eroded and dissolved the caverns and passageways of the modern-day cave into the layers of dolomite below. Clamouse is characterized by its many types of limestone and calcium formations, such as the large stalagmite nicknamed “The Jellyfish”, close to the exit passage of the tour.
It was discovered in August of 1945 by a small team from the Speleo Club of Montpellier. The visitor center and modern electrical lighting systems are a more recent addition to the caves, but Clamouse has been a popular destination for tourists for decades, with standard guided tours as well as more adventurous spelunking available for those more confident in their climbing abilities. The many enormous and ancient rock and crystal formations throughout the cave are stunning and the result of millions of years of extremely slow calciferous deposits from the steady dripping of water filtering down from the river and aquifer above the cave.
Saint-Guilheim-le-Désert is named after Saint Guilheim, cousin of Charlemagne, who became a monk after his family died of disease. Charlemagne granted him two alleged pieces of the cross of Jesus Christ. He sought to found a monastery and chose the site of modern-day Saint-Guilheim-le-Désert. He was later buried in a crypt under the church of the monastery. Centuries later, the monastery became a popular pilgrimage site and formed a village around the monastery, due to the presence of a body of a saint and two pieces of the cross of Jesus Christ.
During the French Wars of Religion, between Protestants and Catholics, the church was invaded by Protestants who slaughtered the monks and damaged the monastery. Luckily, the body of Saint Guilhem and the pieces of the cross held at the monastery were not looted or destroyed by the invaders, and they are still present to this day. Today, the village of Saint-Guilhem is an extremely popular destination for tourists, receiving over a million visitors yearly, dwarfing its modern population of only around 215 inhabitants, many of whom are employed in tourism-based industries such as the many shops and restaurants centered around the monastery and the path leading to it.
The monastery itself is a beautiful example of Romanesque architecture, coupled with even more beautiful surroundings. From the courtyard where the monks once gardened, it is possible to see the ruins of an ancient tower and archway on the nearby mountain, as well as a rock locals say is Guilhem himself, watching over the village in case the giant he is once said to have slain returns. According to legend, during his life Guilhem fought and slayed a giant in defense of the village, but after the battle the giant’s body could not be found, and thus Guilhem still stands guard in case his ancient foe returns to menace the village once more.

🇨🇵Description du domaine🇨🇵:

📌A popular proverb which says that “to live in Saint-Guilhem-le-Désert, you need a donkey’s back, a wolf’s tooth and a dog’s leg” and which even continues thus “we are enough to eat what we have and If anyone wants to come, let him cut his legs on the way.” This adage finds its origin in the poverty and frugality of the regime of the monasteries of yesteryear in these arid regions. It was another way of saying that the visitor was not really welcome because it was expensive, but above all that daily survival was not an easy thing and required special skills! 📌

🇬🇧Description of domain🇬🇧
✅ The adventure begins in December 2018 ...
FONJOYA was born thanks to the merger of the cooperative cellars of St Félix-St Jean and St Saturnin de Lucian in place since the first half of the 20th century.
It is therefore on the strength of their respective histories that they decide to unite and cultivate the vineyard of a common territory.
In this appellation, the vines can benefit from a Mediterranean climate while being located in altitude areas, between 250 and 350 meters. This unprecedented geographical location allows for significant day / night temperature variations in summer, which promotes slow and gradual maturation of the grapes and brings great freshness to the wines.
Important differences in height, mosaics of terroirs, cool nights make the irreproachable balance of these red wines with accents of garrigue.
FONJOYA enjoys an exceptional location, backed to the north by the Causse du Larzac which culminates at more than 800m with the neighboring Pic Saint Baudille. Despite the significant differences in height between the foothills and the high relief which marks the limit of the appellation, the vines are mainly located on the foothills and old terraces between 50 and 400m above sea level. There, they enjoy the draining power and the poverty of soils which act as natural regulators on their balance.
In addition to the natural protection provided by these reliefs, the peculiarity of this appellation lies in the day / night thermal amplitude, mainly due to the fresh air coming down from the plateau and which counterbalances the softness of the coast☑️.

🇮🇹Descrizione i Dominio🇮🇹
✅ L'avventura inizia a dicembre 2018...

My First Time in France-Ava
Before this trip, I had never visited Europe. Yes, I took the occasional (meaning one) vacation to Mexico or hopped a few states over from Texas to visit family, but I had never traveled such a long distance, let alone by myself. However, as I became immersed in the French language and lifestyle, my anxiety about being alone in a foreign country washed away and I was left with feelings of excitement and anticipation. Throughout the Spring into Summer Montpellier course, I have been able to visit historical sites, an art museum, ancient cities in Montpellier and Marseille, and more amazing locations rich with stories waiting to be told. Personally, however, some of the most memorable moments began and ended in the many churches I was able to visit individually or with the class.
I am a follower of Christ, so visiting churches such as the Cathédrale Notre-Dame des Doms d'Avignon, Cathédrale Saint-Fulcran, and Saint-Guilhem-le-Désert Abbey not only gave me some much-needed insight on French history but also helped me connect further with French culture through my faith. In each cathedral I visited, I made sure to make an offering as a way to show my appreciation for Christ as well as the beauty of the cathedral itself. One of the things that I later found out that came as quite a shock for me was the fact that many of these churches are not used by most of the French citizens who live in the surrounding area. These churches were more of a historical landmark than a place to worship and practice one's faith, which is completely understandable seeing as only 15% of the French population actively practices Catholicism (The Catholic..). Additionally, when looking further into religious practices in France I was able to better comprehend what it means to live in a secular country. In France, religion is solely a private matter, but in America, religion is integrated into politics, education, and our overall culture. It was fascinating to ask the inhabitants of Montpellier questions about their faith and to find out that for nearly everyone asked, religion was not a very prominent factor in their life (which is completely okay!). And if they did practice a religion, it was less likely to be Catholic but more likely to be Islam or Protestantism.
Although there were multiple culture shocks that I experienced during my three weeks in Montpellier, seeing how religion was handled in France versus the United States was by far the most memorable and the most fascinating to me. To come from America, where Christianity is integrated into our national anthem, our education, politics, economy, and more, it was nice to see how everyone can be able to privately practice what they believe in without the suppression of others' rights being as big of a threat. Of course, France is not perfect when it comes to all religious matters in the past or present, but it is important to have a diverse set of experiences, methodologies, and points of view, especially when dealing with sensitive and personal matters such as one's faith. Therefore, I am beyond pleased to have been able to experience this change during our Sprint into Summer Montpellier trip.  The Catholic-ness of secular France. EuropeNow. (n.d.). Retrieved June 8, 2022, from https://www.europenowjournal.org/2019/10/02/the-catholic-ness-of-secular-france/
