 Ingredients
1 1/2 tbsp olive oil
1.2kg beef chuck steak, excess fat trimmed, cut into 3cm pieces
1 brown onion, cut into thin wedges
2 carrots, peeled, coarsely chopped
3 garlic cloves, finely chopped
180ml (2/3 cup) red wine
40g pkt French onion simmer soup mix
7 fresh thyme sprigs, plus extra, to serve
1 1/2 tbsp cornflour
Mashed potatoes, to serve

This Cube Steak Crockpot Recipe is a simple and delicious way to enjoy tender cube steaks with minimal effort. The slow cooker helps to tenderize the meat while infusing it with savory flavors from the mushroom and onion soup mix.
Ingredients: 4 cube steaks. 1 onion, sliced. 1 can cream of mushroom soup. 1 packet dry onion soup mix. 1/2 cup water. Salt and pepper to taste.
Instructions: Season cube steaks with salt and pepper. Place sliced onions in the bottom of the slow cooker. Layer cube steaks on top of onions. In a separate bowl, mix cream of mushroom soup, dry onion soup mix, and water. Pour over the cube steaks. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the meat is tender. Serve hot with mashed potatoes or rice.

For the anon who needs quick meal ideas (if it is not too late):
Use frozen vegetables. They last for a long time, are easy to prepare (a few minutes in the microwave), and don't go off. Plus they are as nutritionally sound as fresh vegetables.
Use canned fruit with no added sugar (if you can buy this). All the benefits of fresh fruit and no preparation. Just spoon it onto your breakfast cereal and go for it.
Eggs are a quick form of protein. Boil them when you have an energy spurt and then keep them in the fridge for eating. I do 6 or 12 at a time. Fried eggs, omelettes and scrambled eggs are also quick when you have a bit of energy.
Baking sausages, steak, meatballs etc is easier than frying them. Just put them in the oven on a tray and go and rest until they are cooked.
Oven fish from the supermarket is also good. Twenty minutes in the oven and you can rest while it is cooking.
Tinned tuna/salmon/spaghetti and toast or crispbread makes a good light meal. So does avocado on toast.
Generally, bake or microwave your food instead of cooking it on the stove. Microwave is my preference as it is the easiest. Baking is also easy but I have to stay awake to take it out of the oven. With the microwave, it will just sit there until you are ready for it.
Make your stews and casseroles with lots of vegetables so they are one pot meals. A bit of bread and you are good to go.
Slow cookers are good if you have the energy to prepare the ingredients for it.
There is nothing wrong with tinned soup and toast for a meal.
Use the prechopped herbs and spices that come as pastes or in jars to add a bit of extra flavour to your food. It is easier to take half a teaspoon of chopped garlic out of a jar than it is to chop the garlic yourself. You can buy prechopped and frozen onion as well, and ginger, coriander, etc as squeezy tube pastes or in jars. Save yourself as much preparation time as possible so you can use your energy for whatever actual cooking you have to do
If all else fails, boil water and have a packet soup, or packet noodles, or packet mashed potato and cheese. It's still better than take away, and if you have a bit of energy you can add frozen vegetables and cook it together in the microwave.
Batch cooking is wonderful, but you may not have the energy to cook the batch in the first place. That is OK. Save it for when you have an energy spurt.
You can cook rice and pasta in the microwave. Either of those plus frozen vegetables (cooked in the microwave) plus cheese or boiled eggs or leftover meat is a meal.
You can cook bacon in the microwave or in the oven. Bacon goes with everything in my opinion.
My basic dinner is pasta or rice or potatoes, steamed frozen veges, and whatever meat I feel like cooking or is leftover in the fridge (a tin of tuna, oven fish, sausages, thin steak that cooks very fast, etc).
If you are cooking meat, cook the whole packet and you should get two or three meals out of it. 
Tomatoes, onion and garlic make just about everything taste better.

Frozen veggies actually have more nutritional value than what you would buy fresh. They are flash frozen right away...so that is a good idea.
