This recipe for spicy Thai noodles is better for you because it uses less oil while keeping the strong flavors. It's a filling and healthy meal that's full of colorful vegetables and a spicy kick.
Ingredients: 200g rice noodles. 1 tablespoon reduced sodium soy sauce. 1 tablespoon sriracha sauce. 1 tablespoon rice vinegar. 1 teaspoon sesame oil. 1 tablespoon minced garlic. 1 tablespoon minced ginger. 1 red bell pepper, thinly sliced. 1 carrot, julienned. 1 cup broccoli florets. 1 cup snap peas. 2 green onions, chopped. 1/4 cup chopped cilantro. 1/4 cup chopped peanuts.
Instructions: Following the directions on the package, cook the rice noodles, then drain them and set them aside. Put soy sauce, sriracha, rice vinegar, and sesame oil in a small bowl and mix them together. Put away. Warm up a little oil in a big pan or wok over medium-low heat. Stir-fry for one minute after adding the minced garlic and ginger. Put in the broccoli, carrot, snap peas, and bell pepper. To make the vegetables tender-crisp, stir-fry them for three to four minutes. Put the cooked noodles and the sauce mix into the pan. Toss everything together until it's all well mixed and hot. Put it away from the heat and top it with peanuts, chopped green onions, and cilantro. Enjoy while hot!
