¿Es posible imaginar que nos reconectamos con todo lo natural al menos tres veces al día? Y se dice que tres veces al día porque es lo recomendable, sin embargo, para algunas personas, las circunstancias socioeconómicas evitan que puedan obtener el alimento necesario para satisfacer sus necesidades metabólicas.
Desde nuestras condiciones de accesibilidad, podemos afirmar la creencia de que las acciones individuales no cambiarán al mundo, que cuestiones como el cambio climático, la pandemia actual, la pérdida de biodiversidad, la contaminación, la degradación de los suelos, el uso excesivo del agua dulce y más procesos actuales se encuentran fuera de nuestro alcance, que no nos afectan, que no los provocamos. Pero, ¿Alguna vez te detuviste a pensar sobre la existencia del vínculo indisoluble entre lo que nos rodea? nuestra alimentación, la salud y la sustentabilidad…
The Lancet Commissions reportó en 2019 que la agricultura ocupa aproximadamente el 40% del total de la tierra disponible, además, es responsable del 30% de las emisiones globales de gases de efecto invernadero y el 70% del uso de agua dulce disponible. Agreguemos a esto las siguientes cuestiones:
Aproximadamente el 6% de las emisiones globales de gases de efecto invernadero se emitieron durante la producción de alimentos que nunca se consumieron.
El número de personas que no tienen acceso a suficiente alimento para vivir una vida sana y activa es igual a seis veces la población de nuestro país.
La tierra que podría producir alimentos para las personas que sufren inseguridad alimentaria, es utilizada en la producción de cereales para alimentar el ganado que será consumido por aquellas personas y países que pueden comprar estos productos.
La producción de proteínas de origen animal es ineficiente en términos energéticos y nociva para el ambiente, debido a que aumenta la presión sobre el agua dulce, el suelo cultivable y la capacidad atmosférica para absorber las emisiones de gases de efecto invernadero.
Ante esto, el panorama de la preservación del status quo alimentario hace utópica la mitigación del cambio climático y la soberanía alimentaria a escala global (Pérez y Vargas, 2018), por lo que es urgente comenzar con una reflexión crítica y activa de nuestros sistemas alimentarios y patrones de consumo.
Es considerado de vital importancia que los individuos que tienen la posibilidad de modificar sus patrones de consumo lo hagan hacia dietas más sustentables, reduciendo la frecuencia y las porciones de proteínas de origen animal y aumentando el consumo de alimentos de origen vegetal, como frutas, vegetales, legumbres y semillas (Hayley et al., 2015; UNEP, 2016; The Lancet Commissions,2019). Diversos estudios revisados por Pérez y Vargas en 2018 prueban que dietas sustentables como la mediterránea, vegetariana y vegana -con una mezcla adecuada y suficiente de proteínas vegetales- suplen los requerimientos nutricionales básicos del ser humano, disminuyendo la posibilidad de padecer hipertensión, diabetes tipo II, obesidad, enfermedades coronarias y varias formas de cáncer. También, se ha encontrado que las personas que eligen estas dietas tienen la posibilidad de considerar cuestiones como la responsabilidad social, preferencias del sabor, precio, comodidad y contenido nutricional de los alimentos que consumen debido a que sus condiciones sociales y económicas les permiten tomar decisiones en pro de un mundo diferente.
Springmann, Rayner, y Scarborough (2016) proyectaron para el año 2050 que la transición hacia dietas sustentables podría reducir entre el 45 al 55% las emisiones de gases de efecto invernadero y entre un 6 a un 7% la mortalidad global. Sin embargo, cuestiones demográficas y socioeconómicas como el sexo, el ingreso económico, el acceso a información y conocimiento, los recursos, hábitos y contextos impiden que las personas visibilicen que sus decisiones finales de alimentación tienen efectos sobre las condiciones ambientales (Pérez y Vargas, 2018). Es ahí, en nuestra alimentación donde reconectamos con lo que nos rodea, con nuestra salud y la posibilidad de alcanzar la sustentabilidad, al menos en el sentido alimentario y desde condiciones específicas de accesibilidad.
