Carabassons plens (stuffed zucchini) is a typical recipe from Menorca (Balearic Islands). It’s a very simple vegetarian dish that used to be made by farmers. It can also be made replacing the zucchini with eggplant or tomato.
Ingredients:
10 zucchinis
for the sofregit: 2 big onions, 2 tomatoes, green bell pepper and 5 garlics
bread
2 eggs
thyme or parsley
olive oil
salt
Recipe:
Cut the zucchini in half and boil them in salt for 10-20 minutes.
Drain the zucchini and empty them with a spoon.
Grind an egg and mix it with the inside of the zucchini, bread crumbs, tomato sofregit and salt. Fill the empty zucchinis with this mix. (Variation: the bread crumbs can be dipped in a bit of milk).
Add a little bit of bread crumbs, and parsley or thyme on top of the zucchinis. Add olive oil and salt.
Bake it in the oven for 30 minutes at 180ºC.
You can eat them either hot or cold.
