5 ingredient, gluten, dairy and egg free pancakes to celebrate that he’s home! • • • Serves 2: 6 tbsp buckwheat flour, 2 tbsp linseeds, 2 tbsp cacao powder, 2 tsp psyllium husks, 1/2 tsp baking soda, 1/2 tsp salt- mix all the dry ingredients together in a medium mixing bowl. Add 2 tsp of vanilla essence (optional) and then slowly add water, stirring consistently until you have a delicious gloopy consistency. Heat a large pan with a tsp of coconut oil per batch of pancakes, and then scoop a tbsp of batter per pancake into the pan. Cape Cod Material

I was in Boston for an extended stay last month, the day before we left we made plans to go to Cape Cod for the day. I’ve never been and honestly at first the idea of going seemed so far fetched. People who go to Cape Cod don’t seem to include me. 

There is this scene in Knights Tale (a family favorite) where the “bad” guy visits the “hero” in a jail cell and says “You have been weighed and measured and found wanting”. That scene always takes my breath away because it is the visual and verbal representation of my deepest fear. That I will be weighed and measured and found without...found not worth it...found not enough...found too much....and discarded. 

I’m not Cape Cod material...I realized I have been living in the “I don’t deserve nice things” mindset. It’s why I sometimes am surprised when I have things or experiences I enjoy. I can’t tell you when this started all I can say is that its there...I think I try to keep moving fast and running so the situations and people around me can’t figure it out. I’ve told people I prefer to live like I’m drinking from a firehose...which would break my face and wouldn’t allow you to actually enjoy the water.....but it does keep me from noticing the thirst....

Interestingly enough, though I didn’t think I was Cape Code material, we still went and had a blast. Funny enough we went to look at 5 light houses and only actually saw 2. One was so far away it was basically the size of a toothpick and another one was being repaired so it was behind scaffolding. We had to laugh at the absurdity of it all, although another time in my life I would have been supremely disappointed and focused on what I didn’t experience instead of what I did. The second “lighthouse” was about a 2 mile walk up a dune and not really accessible to us, so instead we walked to the beach and took in the ocean.

Near the water is where I generally experience God’s presence and peace the thickest. As I stood there next to the water taking in the sounds, the wind and the breathtaking blueness of the scene I burst into tears. Just the day before I pleading with God for refreshing, I have been struggling a lot this season and just felt so empty. So here I was, “not Cape Cod” material standing on a beach in Cape Cod and God started speaking.

I felt it audibly as the Lord whispered this to me.....

I do see you

Joy is there for you too

Sacrifice isn’t always your birthright

I do hear you

I do love you

I see you exactly where you are

I hear your prayers

I honor you just as much as all my children

You are special

You are loved

You are mine

I rarely understand God’s ways and even less why he loves me so unconditionally. I’m so grateful that when he weighs and measures us, we are never found wanting. We are always found enough and worth it....and for today that feels like an amazing gift.
