"the knife" in Spanish is el cuchillo so if you wanted to specifically make it diminutive it would be el cuchillito
[your version would sound like the diminutive of cucho/a... my understanding is that in some places cucho/a means "old person", so cuchito/a would sound like a "little old person"... I'm not sure if it would mean that everywhere though; usually the standard is viejo/a and the diminutive of that is either viejito/a or even more diminutive viejecito/a "little old man/lady" which is like calling some old person "gramps" or "granny"]
