Credits - @shaanthram #Repost @shaanthram (@get_repost) ・・・ #dailybrunch #shanthiskitchen #tambramcooking #mymomsrecipe #porichakozhambu #mixedvegetableporichakozhambu #recipe You can use the vegetables of your choice but avoid using onions,radish,beetroot ,etc. you can use vegetables like drumsticks, 🐍gourds,brinjals,potatoes,carrots,beans,peas, etc., Today I used 100 gm cabbage, 1 potatoe,2 carrots ,10-12 beans,one mdium sized 🐍 gourd,( all cut into small pieces) 1)Pressure cook the above veggies with 1 small cup tur dal half cup moong dal , a pinch turmeric with 2 cups of water for 3 whistles or till the veggies & dal are cooked ( as per your timings of cooker). 2)Meanwhile grind fresh grated coconut from one half of a small size coconut, 2 dry chillies, 2 tsp black pepper corns, 2 tsp jeera with some water to a paste but not very smooth. 3)Open the cooker after the pressure comes down , add the ground paste, required salt and cook again for just one boil or 1-2 minutes . 4)Remove from heat and temper with mustard urad dal & curry leaves in coconut oil.mix well & serve hot with rice , dal & ghee as a side dish or serve this along with more/thayir keerai as side dish.( The keerai recipe is given in the another post of today) 5) the hot rice & ghee mixed with this kozhambu & served with this keerai and plain salted 🍋 pickle will taste heaven! try and let me know as this preparation with the specified side dishes are tirunelveli specials! Tips: after adding the coconut paste should not be cooked for more time as anything with jeera gets medicinal taste if it boils for more time! After cooking the vegetables if you think the water is more strain that stock and use it either for rasam or soup. Coconut oil adds more flavour to the dish so use for tempering! Goes well with chapathis too!vegetables can be as per your choice except radish, ladies finger &beetroot!
