Since my morning always sets the tone for the rest of my day, it鈥檚 important that I start it off right! After playing around in my kitchen, I created the perfect recipe to get my day going. This year, summer plans may be different from what it normally is for many people. If you had to cancel your vacation, let's use this time to learn more about that country/region! For us, one of the most important factors when traveling is food! We love going to local grocery stores and farmers' markets. We love going to restaurants that local people go to, and sometimes we even take cooking classes while traveling. Today, let's try making some #NasiLemak - a Malaysian dish! Here is the recipe: in a skillet, add oil and fry 1 cup peanuts. Drain on a paper towel. Fry 4 oz anchovies with the remaining oil and drain on a paper towel as well. In a separate skillet, saute 2 medium shallots (minced), 3 garlic cloves (minced), and 1 onion (sliced) for 5 minutes. Add 2 tsp chili paste and cook for another 10 minutes. Add 4 oz anchovies (not the ones you fried already), stir, and cook for another 5 minutes. Mix in 2 tbsp sugar, 3 tbsp tamarind paste and salt to taste. Cook while stirring for 5 minutes. Add the fried peanuts and anchovies. In a large pot, add 1 1/2 cup water, 2 cups coconut milk, 1/4 tsp ground ginger, 1 inch fresh ginger (minced), 1 bay leaf and 2 cups long rice. Once the mixture boils, lower the heat and cook for 20 minutes. Slice 1 cucumber. On a plate, add some cooked rice and top with sauce and sliced cucumbers.
