When the classroom comes to life...

Throughout my time at WAC so far, I’ve done a ton of interesting things in class. We do a lot of hands on learning, which is amazing because class never gets boring. Some of my favorite activities so far have been experiments during my Environmental Studies and Biology labs. However the most amazing assignment so far is in my Freshman Year Seminar: Food, People, and the Planet. In the class we learn about the history of human’s relationship with food, and how it directly affects us today. We discuss dietary history and the large disconnect that now exists between humans and the food they consume. The food industry has distanced us from our dinner tables, and we can see the effects in our lives every day, in the form of increased allergies and overall decline in the health of people worldwide.

The class comes with a unique final assignment. Our class of fifteen students will plan, cook, and serve a meal entirely from scratch. We will know where the grain for our bread comes from, ferment cheese from local dairy, and forage for berries and herbs. The entire meal will be made by us, with nothing bought from a grocery store. Each course will represent a different era of human history. We will begin even before the advent of fire, about 5 to 7 million years ago, and work our way up to present day by the dessert course. Each student will specialize in an area, prepare the food and give a short presentation explaining the course to our dinner guests (some board members of the school) as they begin to eat. My group will be concentrating on making cheese, baking bread, and fermenting butter. The final meal will be served sometime during the first week of December, in the brand new Eastern Shore Food Lab in Chestertown, about a ten minute walk from the main campus. ☀️Lets call this 👹Bad Solar/ 😇Good Solar☀️ There is a reason why it’s so important to have a qualified/experienced roofer on your solar team. Putting silicone on a through roof penetration is a huge no no (Pic 1). The proper way to go through a roof is with a roof designed flashing that is specifically for solar called a Soladeck! (Pic 2). In general, silicone isn’t compatible with shingles anyway.
