This is a really interesting point and I think it is often resolved by people separating Sun and Moon out entirely (so giving them character arcs almost entirely independent of each other) or fiercely intertwining them into a kind of codependent “good one, bad one” dynamic like you said, especially if they like one of them more than the other.
I think if you want to focus on both equally while still keeping their combo role where it’s more canon-adjacent, it’s best to give them both a problem or a focus in their lives outside of the other one, even if they still have a complicated or messy relationship with each other on top of that too. So make Sun have other issues he’s working with aside from just Moon, and have Moon focus on other things aside from just Sun. Then it’s easier to focus on what might be a Sun centric plot or a Moon centric plot.
Like in a lot of cases I like to focus on how Sun and Moon both adapt socially to the daycare closing, or their roles changing, or how people and other characters see them both. Through that lens you can put them through the little things too, and give them a ton of interesting interactions. Or sometimes it can be fun to play on the age old dynamic of one of them thinking the other is “the troublemaker” they can easily blame for all their problems when really they’re both as bad as each other. It’s a fun dynamic to play around with, but also I like to think of how hard that might hit once they figure it out for themselves, because then their problems aren’t so easily solved. Or you can always play on the “protector and protected” dynamic by swapping the roles, or maybe making the protected one perhaps someone who doesn’t need to be protected. What if the “protected” one is the one with the virus and the other is really just trying to keep it all from going south?
Maybe it’s just me but I’ve noticed sun and moon have an interesting narrative problem where if you give more sympathetic or complex traits to one you inherently flatten the other
I find sort stories into two categories, a sun centric story or a moon centric story wherein depending on the format, one serves as a compliment to the other
Like in sun centric stories moon is more of a 1 dimensional bad guy that causes problems for sun and in moon centric stories sun is more a simple “good” force for moon and/or is a simple sweetheart that moon wants to protect
Of course narratives where they are completely separate people or where they are literally the same person don’t fall under this, but I notice in most “canon” adjacent stories you have a sort of continuous flip flop between these two styles
Plenty of authors are able to balance this but I find with my own writing it is very difficult to make both sun and moon equally complex and interesting without taking away from the other

To be honest and these are all personal interpretations but Sun has always read as kind of more on the sassy and short-tempered side to me, he’s never been fond of letting people move around too freely, from the start he’s always made sure things work a particular way and you go in a particular place and he’s always been super pernickety about how and where things should go and how they should work, he’s always been panicky like that for as long as we’ve seen him because he’s endlessly stressed and has a million things to take care of otherwise he’ll get in trouble and if he’s referencing keeping the lights on he has Moon to hold at bay too and has likely seen the terrible outcome of not keeping Moon in check given the way he panics so much in response to any chance the lights might go out. The implications that he knows how limited his ability to fix the problem is and yet so desperately wants to but is left basically helpless at the mercy of the lights going off at any given time is also pretty horrific and it’s no wonder he has some issues trusting others to keep themselves out of danger with that in mind.
I don’t think he’s massively different personality-wise between games, just the circumstances are different and he is under varying levels of stress in each setting which is contributing to how much or little he may be acting out or trying to control what’s going on around him (and if the daycare has been shut for a while in Security Breach he’s got an extra good reason to want to keep a new friend around despite the potential danger because he must be going stir crazy).
Also I don’t think Sun is particularly mean or a bully, I think he has his reasons to get snarky with people who are going out of their way to mess up in his space and he already has enough on his plate as it is, the guy is trying his best. I think his enthusiasm and creativity is genuine and he is sincerely trying his best but to be honest in the FNAF franchise not a single character has really been programmed perfectly to do their job in all scenarios and I don’t think he’s any exception to that. However I also think you can feel free to write anything off in fanon as being due to the virus, or due to circumstance, and basically end up with whatever version of the character sparks joy. Fanon is fanon after all, we’re all just guessing here and that isn’t a bad thing.

Love this take!
Sun being overstressed as all HECK is such an interesting trait of his to play with, in canon he has to be ever vigilant in keeping Moon at bay but also needs to keep everything clean and tidy which trips him up when he gets distracted! Does anybody else think he has a bit of a complex about keeping things tidy considering his room and all? Was it part of his and Moon’s design in the first place to keep them from running rampant or just to make them double as free cleaning staff since they’re working in a daycare? Or maybe it makes them feel more compelled to clean blood stains which works out pretty well all things considered? Then again, they probably aren’t perfect at it or perhaps it’s not as straightforward as that since so many of the cleaning supplies in the daycare live behind the security desk Sun and Moon can’t access. 🤔
About Sun’s emotions, yeah 100%, I bet he doesn’t get a lot of opportunities to share any with other people at all, always playing the role of a caretaker to the kids and probably not venturing far from the daycare at most times. That probably makes it extra hard for him to open up to others even if they take an active interest in how he’s feeling, right?
It probably would be frightening for Sun if someone just came along and suddenly took an interest in him on that level. I think he likes control, he likes to keep the daycare just so even if he says there’s just one rule because he has to stay in control, because the alternative is Moon taking over and causing mayhem. I bet that makes him super afraid of letting people like y/n in!
I can totally see where you’re coming from, Sun having a complex reaction to what’s been going on with Moon is really interesting to explore, I mean he’s not acting desperate at the prospect of Moon taking over for nothing! I’d love to see Sun finally able to be more emotionally open like that, I bet it would be extremely cathartic for him.
Man, Sun could use a hug in every universe like so bad.

I see Sun as an overstressed worker, who has extreme anxiety problems. He is not speaking about emotions. Like "he is a robot, he can't have emotions, right?" "what a silly thing to consider to speak about this with someone"
If something goes wrong, he beats himself up internally and blames himself for it.
But he is also very kind to the ones who respect him, and give him a bit of kindness. Also, very likely to get attached to those who treat him right.
But like with my YN, he would not tell his feelings at any cost. And he also had a phase where he just straight up lived in denial and was really scared that YN struck such chords in him that he didn't know about before.
Other than that, I agree with the others who said, that he masks himself like.... ALWAYS, and that's why he is deeply afraid of what YN did to him and his feelings.
Aaaaand, he also has massive anger issues. So I personally would be more scared from Sun snapping than Moon overall... and not be around if he snaps...
He has massive PTSD from "Moon's antics" and hates the color red for a reason...
He had to make peptalk with himself every morning and basically gaslight himself into thinking that everything is gonna be ok.
If Moon's antics would not worry him, he would gladly go and stay in the headspace longer and willingly. But he would never admit this to Moon or anybody else. He bottles up all of his emotions, and he keeps it inside. If he has a very stressful day, his mask tends to crack sometime with talking to the children more harshly or handling a parent passive agressively. ... Who am I kidding? He is a master of passive aggressiveness.
So, after he goes vulnerable with YN, he tends to cry a lot. But I don't see him as a cry baby for that. He has enough emotions bottled up inside for a whole army, so crying is the most harmless way to give it out, I think.

If Sun and Moon could eat or drink they would eat your coffee cups the moment you’re not looking, they’d “confiscate” items only to hide them in a little space somewhere in their miserable room (they’d look so smug about taking them just to hide them for later), I think caffeine would make Moon a little loopy because I think Moon is a bit of a spider. Have you seen what happens to spiders on caffeine?
Like, this is Moon on caffeine, he’s made his web and now he has to lie in it.
I like to think if Sun could get hyped up on caffeine the effect would stick when they switched and Moon would not be happy about it.
I think if Sun could like a drink he would like those summery drinks like frappuccinos the most, I bet if he could drink caffeine he’d have an extreme response like either he’d be restless for DAYS or he’d unexpectedly short circuit and actually run out of energy. Maybe both.

(Like, that is the face of a playmate, right?)

I have solved the lore - Moon was in fact rallying against the Moon nightlight all this time. We are not the enemy - the Moon nightlight has always been the enemy. That’s why he kept telling us “No light” in Ruin and Help Wanted 2. He was in fact here to warn us about the Moon nightlight. “What makes you so special” he was mad at the Moon nightlight. “Hidey hide, hide away” what he’s going to do when the Moon nightlight gets released.

The way Sun and Moon have experienced so much hurt and so much horror but in a way they may never be able to fully address because they just may not quite have the full understanding or the drive to unpack all of what’s happened to them in any sort of context beyond just seeing it as another part of their lives as silly jesters performing at the whims of other people as a small fragment of a dying franchise. That denial and where that understanding escapes them makes it even more tricky for them to heal because they can’t even begin to come to terms with the way the virus and their repurposing has affected them both, but the horrors keep on coming and they’re slowly unraveling and they know - they’ve known from the start - that something is wrong, and yet they can’t quite figure out what for the longest time.
When the virus hits, they just carry on as normal because that’s all they’ve ever known. They notice the other one is acting differently and it alarms them but they aren’t listened to. Perhaps they don’t openly voice their concerns, or maybe no one is there to hear them. Perhaps they don’t even stumble upon the answer until a long time has passed, sitting in denial, just blocking out the changes and the concerns, and the other one whose existence has now thrown their lives into turmoil.
Sun carries on like everything’s fine and dandy - that is, until he can’t anymore. What a life. Always on. Always acting. He’s a good actor, sure, but when you’re meant to play one half of a day-night cycle I bet it wears at you when you now have to cover both shifts. The fact that he’s even trying to - he’s desperate not to be pulled back into the abyss so Moon can come out because he knows how broken Moon is right now. And I’m guessing that even if he did have a clue how to fix them (which, maybe he honestly didn’t, or simply wouldn’t come to terms with until he saw the faz-wrench in Cassie’s hand in Ruin), he couldn’t leave the daycare at most hours because he’d be at work, entertaining the kids, or not supposed to be out if the daycare was out of order. And then when the pizzaplex was closed, there were the blackouts all over, keeping him locked in where the generators were, where he’d have a chance to retreat into the light (and we can’t forget how useful Moon was to Afton and co as a retrieval bot, so he’d be out and about of course, they’d make sure of that, but not as himself).
The alternative would have been knowingly risking unleashing Moon upon more potentially innocent victims, and getting both of them in even more trouble when he should have been out. He should have been making sure things stayed working at least a little bit. And we see Sun fighting Moon with everything he has in the Ruin jumpscares just so they won’t do something they’ll regret. How long has he been fighting? How many times might he have tried and failed to stop Moon and woken up with blood on his hands?
How exhausting that must have been. Did he blame Moon at all? Any animosity between them could only have hurt more. And even if he didn’t give in to that frustration, the fact is, he was keeping Moon away that whole time, not letting him out to play. For his own good or not, that can’t have felt nice, and it certainly can’t have been easy.
And then Moon on the other hand expresses little clear awareness that something is wrong in Security Breach itself, at least none that’s addressed to Gregory or any of the others, simply going about his business, but it’s heavily implied he knows - and maybe he always knew - that there is something pulling from beneath the surface from the things he says in Ruin. “It won’t work!” He knows at that point at least that Sun (or perhaps Cassie) has a plan, of sorts. But he denies it. He doesn’t trust in that plan to fix them. He knows Sun is there, fighting to come out the moment the lights come on. He’s determined not to stay locked away anymore.
Imagine that frustration too. He wants Sun gone - he has to - because he’s in pain as long as the lights are on. And we can tell from Sun’s sad little song that he feels every bit of emptiness when he’s not active as well. And yet, being active feels like a desperate struggle on both sides as well. They’re in a constant battle with themselves, and there can be no victor.
Now imagine if Moon’s awareness - or his relative resignation at the state of the virus - had extended way back to the main game, when they first became afflicted by it. Knowing there was nothing he or Sun could do to stop it - because he (because they?) tried, and failed? Or just (optionally, if we’re considering the novels) because he was always the “villainous” appendix FazCorp couldn’t cut out of the otherwise comparatively “functional” working daycare attendant? Because then maybe Moon knew all along that there wasn’t a version of events where he was actually supposed to be here anymore.
(When he was infected by the virus, on the other hand? Moon had a purpose. Not a nice one, exactly, but a purpose nonetheless. Something Sun still had in the daycare that he wasn’t allowed. It’s not surprising that they ended up at odds with each other at all no matter how you look at it.)

A worthy quest if ever there was one
If you’re talking about my Moon in particular, he deals in dreamscapes - lures you into a beautiful dream, hooks you in deep as you chase after your greatest desires, conjures moments from your subconscious you might have never seen before but deep down you realise you always wanted …(for those less passionate about particular things in their own lives, the lure of escapism also does the trick nicely) …and before you know it, there you stay. Still alive, but just barely, your life force draining slowly as you unknowingly become a part of the dreamscape he’ll then use to lure others.
He’s aware and in control of what he’s doing, but it’s complicated in that he essentially thinks he’s giving you sweet dreams, just …permanent. I mean, from his perspective, he’s letting you live the life of your dreams, and he does let you leave - it’s just that the lure of the dreamscape tends to perpetually pull people back into its orbit. And it’s not like he himself doesn’t prefer the lure of a good story over the reality of his own obsolescence as a daycare attendant. Nope, he just lives vicariously through those who dream, and he watches as the dreams flicker and burn out, eventually becoming one with the scenery.
Canon Moon? Hm, I think he has a kill count, if not at least having caused severe injuries to people before. Children or adults - whoever was unfortunate enough to fall in his path first after the virus struck. Don’t think he’s fully in control, I think it’s more like an instinct gone wrong kind of deal where his impulses and directives are screaming at him to put the naughty children to bed so they can rest (like he’s supposed to do) but due to the virus he’s mistakenly labeling everyone and everything as “naughty children” virtually non-discriminately and he won’t rest until he’s fulfilled that need to put them to bed. Whether that means something permanent or not.
Moon’s worldview I think is a little skewed and limited by design. He sees blips of daily events when he’s finally active, and he’s been made redundant in his role, and so he longs to fulfil some sort of purpose. I think the virus causes him no end of stress and pain, isolating him from everybody and everything even more than he ever has been before. The Glamrocks at least hunt together. Moon does no such thing. He’s left to his own devices, and even Sun seems to think the best solution would just be for him to NEVER come out for the longest time (he changes his perspective in Ruin but his attempts to keep Moon away before that can’t have helped their relationship any, I think they both spent the longest time not seeing eye to eye and just badly wanting it to be their turn, to the detriment of their collective wellbeing). Poor guy just wants it to be his turn and really really thinks you should be in bed. Maybe you’d get a shot at talking things through with him if he got stuck in the play tunnels like he tends to do in my game. Just try to avoid the grabby Moon claws. I hear they’re laced with sleepy dust.
(Also got an AU where Moon’s confused pseudo-resentment at being no longer wanted and having had people actually want to delete him and leave only Sun runs kind of deeper than that and he’s trying to keep them both safe from perceived threats while simultaneously feeling like Sun’s shadow and almost living his life vicariously through him until he can’t anymore but that’s quite literally another story for another time)
