Memphis Cornmeal Battered Cod
Ingredients Batter: 1 cup all-purpose flour 1 cup cornmeal 1 teaspoon cayenne pepper 2 tablespoons sugar 1 (16-ounce) ice cold beer 2 tablespoon honey Peanut oil 6 (6-ounce) cod fillets Salt and freshly ground black pepper
Tartar Sauce, recipe follows
Tartar Sauce: 1 1/2 cups mayonnaise 2 tablespoons hot pepper relish, jarred 1/2 lemon, juiced 1 tablespoon freshly chopped parsley leaves Pinch cayenne pepper 1 teaspoon salt 1/2 teaspoon freshly ground black pepper
Directions
Batter: In a large bowl, add flour, cornmeal, cayenne and sugar and mix together. Whisk in cold beer and honey until well incorporated and free of lumps. Preheat deep-fryer to 375 degrees F. with peanut oil. Season cod with salt and pepper and dredge in batter. Allow excess batter to drip off and place gently into the deep-fryer. Fry for 6 to 8 minutes until golden, crisp and delicious. Drain on paper towels. Place cod on a large serving platter or individual places and serve with Tartar Sauce.
Tartar Sauce: In a small bowl, mix all ingredients together.

//Chicken wings and legs in Red wine//
•Serves 5 people
•Ingredients :
Chicken wings                - 5             
Chicken legs                  - 5
Garlic                             - 1 whole                    
Green chilli                    - 5           
Lemon juice                   - 1 tbsp          
Salt                                - according to taste            Colavita wine vinegar    - 2 tbsp     
Red wine                       -   50 gram                   
Chili flakes                   - 1 pinch       
Green onions              -  1 cup chopped         
Dried coriander          - 2 tbsp                  
Oregano                     -  1 tbsp               
Refined oil                 - 2 tbsp

• Marination :  
Take garlic, green chilli, red wine and grind them well.
After cleaning the wings and leg pieces properly let them dry.
Marinate all the pieces efficiently with the prepared paste
Leave it for around four good hours

•Procedure :
In a deep pan slowly heat the oil.
Roast 2 tbsp of  coriander lightly in the same pan.
Now, insert the marinated chicken pieces in the pan and stir it continuously.
Add 1 pinch of  chilli flakes and desired amount of  salt to the chicken.
Pour 2 tbsp of colavita wine vinegar in the pan and stir it slowly .
After 15 minutes, when the chicken has dried, add some green onions and mix it properly for 1 minute.
Finally, serve the chicken after garnishing it with oregano.

~Chef’s tip : this dish would go perfectly with green chutney. You can use it either as snacks or with a full meal.
