...you have opened my eyes to a vast universe of VintageBeef lore that I was unaware of. I knew about the New Hermit Order, of course, and the UHC invention, and I've watched a few of his CTM things but -- I will take all the info and lore you feel like giving out because Beef is amazing and my knowledge is so small.

So the thing is, right, until about 2016 I only watched two (2) youtubers- Vintagebeef for Minecraft and aDrive for Pokemon (and funnily enough both of them are named Dan irl). So I've watched most of Beef's videos over the years and have a general knowledge of most of his stuff, except because it's been like a decade I don't remember where most of the lore comes from XD
The thing with him is that he doesn't do Lore tm the way other mcyters often do lore- he doesn't have an extensive RP series to draw from like Grian, doesn't have a solo world with steadily increasing amounts of lore like Etho or Zisteau, and while he's played on SMPs and been involved in storylines before it's not really the focus of his episodes unlike with Evo or Legacy or Empires
So where does that leave us?
IRL, Beef always has multiple series running at the same time. Often he's playing on an smp while doing a singleplayer, often modded, series as well as a CTM or modpack with a group of friends. For example, right now he's playing on Hermitcraft, doing weekly Pixelmon and Building a Zoo episodes, and a CTM map with Slip. And to me, this translates to one thing: Beef is an adventurer. He travels frequently- he explores a world and when he decides he's done, he leaves for the next one. That's the basis of my personal interpretation of his series and his character for my writing.
Ok so reading this back, this got extremely long and didn't explain much in the way of lore, somehow? If anyone has any additions to add please do so, I am very definitely leaving out a lot and would love to see what other lore people remember and are using for Beef! I didn’t include the Hermitcraft stuff since my memory of season 4 is blurry (his base was themed after the Martian, that much I know, and he and Iskall were buddies :D) and most of the s5 NHO lore is best watched from Bdub’s perspective from what I remember, and the only s6 stuff is a single line in Hermitgang and then the Area 77 arc with its possibility of an NHO reunion which we did not get rip. And s7 of course had the cloning machine and also the Podzol Party as the main lore. So all the original rambling is still below the cut though it is very long, and I'm gonna bullet point the main stuff here instead:
Actual canonical things:
Invented UHC and was the only survivor of the first ever uhc (Mindcrack UHC s1)
Married to an ender dragon (one of the UHCs I think), later father to a different dragon (Mindcrack season 3? I think?)
Might not have legs if you choose to take that joke as canon (Mindcrack s2)
Was a wizard (RAD)
is a zookeeper (Building a Zoo) 
Had a wife and kids (Sims in Minecraft)
Part of the Trial of the B Team court case (Mindcrack)
NHO founder, founder of the Podzol Party (Hermitcraft)
Created a cloning machine that sort of works (Hermitcraft)
Played the Forest which is I believe the first time he and Keralis played together (look up the trigger warnings for this one, it's a horror game)
Was the creator/owner of Sourceblock SMP (featuring some familiar faces if you know Legacy, Empires, or MCC) and there is literal magic from a mysterious sourceblock of water that teleports people and summons mobs and probably more stuff that I haven't seen yet since I'm still watching it myself
Things you can infer:
Good with animals (Life in the Woods, Pixelmon, Ark)
Is a car nerd (irl and all of the car games he's played)
Is a highly experienced adventurer who has traveled through dozens of worlds both vanilla and modded, across multiple dimensions (Twilight Forest, the Aether, the Betweenlands, Limbo), completed dozens of monuments, fought in blood sports, survived apocalypse after apocalypse, tamed dinosaurs, and played a lot of prop hunt and golf with your friends
If you're looking for what to watch for lore purposes, I'd say the Mindcrack UHCs and Team Canada's RAD series are pretty good, definitely Sourceblock and HC s5, plus the Diversity CTM maps and Ruins of the Mindcrackers maybe? And Mindcrack Prank Wars for the chaos and the origin of Team Canada. And if you can handle horror than the Forest is fun and if you don't do horror you can watch the Pojkband play golf or prop hunt they're hilarious I love them sm I want a Pojkband reunion So Bad 
Beef's first series was a singleplayer series in beta 1.4_01 though he had played the game extensively before that, and was a big fan of Guude, having watched his own Minecraft videos. The series was functionally a hardcore one where if he died Beef would delete the world and start again! I haven't actually Watched this series so idk if he died or how often lmao. When Guude made Mindcrack, which was btw one of the very first Minecraft SMPs, he also hosted a competition for people to join, and Beef submitted a video (which is still viewable on his channel I believe!) and won, and was added to Mindcrack in season 2 :D (fun fact, Guude said that even if Beef hadn’t won he would have added him anyway) 
Two running jokes emerged from Mindcrack- pulling a Vintagebeef and Beef doesn't have legs. The first is a reference to Beef dying of fall damage (I believe the exact instance was him trying to jump into his swimming pool and failing spectacularly) and after the incident, every time someone died of fall damage they were pulling a Vintagebeef. The second joke comes from Guude, who joked that the reason Beef wasn't going to a convention was because he didn't have legs, and then he pranked Beef's base by building a giant pair of legs at the entrance to his castle so you had to walk between them to get into the base. This joke has long since died and both Beef and Guude feel pretty bad about it iirc because there were people who genuinely thought Beef was disabled and were emailing him supportive messages and stuff oops. So if you go looking on the Salad or find old Mindcrack fics, you might see references to Beef having prosthetic legs!
Mindcrack also brought about the creation of several Player groups- Team Nancy Drew, Team Canada, and GOB to name a few relevant to Beef. Team Nancy Drew consists of Beef, Pauseunpause, Guude, and Baj, who formed to investigate a prank on one of the members but I forget who. They're named Nancy Drew after the detective! Team Canada also formed in retaliation to pranks, with it consisting of Beef, Etho, and Pause, the three Canadian members on the server (not including Adlington who moved to Canada but never joined the group). There was also a Team America who pranked them with American flags everywhere. GOB is Guude, OMGChad, and Beef, who played stuff like the Ragecraft, Pantheon, and Monstrosity ctms together but that's way down the line lol
Team Nancy Drew is also notable for inventing UHC. It was Beef's brainchild but it was the four of them who first played it! The first UHC had the four of them working to kill the dragon with no natural regen, with everyone dying but Beef, who "won" the UHC. The second uhc was still dragon focused and iirc is where Beef married the dragon? Memories are hazy but they do kill the dragon in this one I think. UHC was then revamped as a pvp event and became a regular Mindcrack game every few months, featuring most of the Mindcrackers and several special guests, including Dinnerbone, who as we know Thanos-snapped Doc's arm out of existence as a result of Doc killing him in one of them
In one of the seasons of Mindcrack, Beef invited swedish Mindcracker and good friend Anderzel to go caving with him and invented ABBA Rules caving, where the winner takes it all. ABBA Rules is a game where each ore (and also dungeon loot like nametags) is assigned a point value and the person with the most points at the end wins and gets to keep all the stuff collected from the game.
In Mindcrack season 3?, Beef punched the ender dragon in an... awkward area, so when the dragon died and left the egg behind, Guude said Beef was the father of the egg XD I don't remember if I watched s3 so I have no idea if anything Happened with this concept but *history of the world voice* you could make lore out of this!
So Team Canada has played a Lot of CTM maps (which fun fact were pretty much invented by another Mindcrack member, Vechs, with his Super Hostile series! Super Hostile has a bunch of things called "Zistonian", which are references to another Mindcrack member Zisteau, who has a very wild singleplayer series with even wilder lore but I digress). In Ruins of the Mindcrackers, they had a running joke that Beef was Etho and Pause's mom, which is a joke we can leave in the past actually /lh. They also played all the Diversity maps, Sky Factory, Terra Restore, Uncharted Territory uhhh and a couple more ctms and adventure maps! Each map kinda has its own story so in Diversity 3 for example they were trapped in a simulation? I think? Team Canada also recently played the Roguelike Adventures and Dungeons modpack, aka RAD, in which Beef was a wizard with a magic staff that could do anything from summon lightning to control hostile mobs.
Sourceblock SMP is a vanilla survival 1.14 series that ran for one season and the series starts with each of the Players being drawn to a strange sparkling water source that, once they touch it, brings them to the Sourceblock world. It also summons a giant zombie at one point. There's probably more lore for this series but like I said I haven't watched it all the way through yet 
He has a Patreon server called VintageCraft and has done a series or two on there as well, and played a few UHCs with them, so lore that how you will! 
Beef also played a few popular mods, notably Pixelmon, Life in the Woods, and Feed the Beast, with LitW being singleplayer and the other multiplayer. He's also recently played the Zoo and Wild Animals mod a lot. He did a short series with the Minecraft Comes Alive mod where he married one of the villagers and had two children, so that's canon now :D he’s played a Lot of Pixelmon starting when the mod first came out iirc (he chose Turtwig in his first series and built a Grass gym, then made a Normal gym in another series in uhh 2016) and he still plays to this day. Quite a few Hermits played on his Pixelmon servers with him, like Wels, Etho, Iskall, Stress, Slip, Zueljin, and also Guude and Phedran (a Mindcrack adjacent player and creator of the LitW modpack) and a few Mindcrackers on the older servers 
Mindcrack and friends played a lot of other games too- 7 Days to Die, Ark Survival Evolved, Unturned, to name a few, so you can pull a lot of lore out of these as well. Speaking of friends and non-Minecraft games, Beef teamed up with Pause, Keralis, and Slip (a former Hermit) to play the horror game the Forest, which saw them stuck on an island trying to survive against terrifying mutated human... things. They played it a few times as the game updated but as afaik it's the first time Beef played with Keralis and possibly Slip and since the game starts with the Player's airplane crashing, that could totally be how Beef first met them in-universe 
I... think? that’s everything I mentioned in the tags? There is probably way more stuff I’ve forgotten that stems from inside jokes and things that happen within each series, but I hope that was a) helpful and b) at least somewhat comprehensible lmao

I know this is like the third ask you've gotten from me in like the past week, but I'm also a sucker for y'all's art and headcanons.

I have let this sit in my inbox for like at least 2 months and it's because I did not know where to go I'm so sorry lol.
This is gonna be really long because I'm gonna be getting into Vex headcanon territory. It also has my Scar headcanons sprinkled in because it's hard to talk about Cub without talking about Scar.
Most of this is lore since I don't watch Cub nearly enough to form more headcanons for him. That's not to say I don't watch him because I do just, I watch other Hermits more ya know

Vex Lore
So to begin. The Vex we see in MC aren't the true Vex. They are more like henchmen, or even true Vex split up into smaller forms. 
The Vex have servants, dubbed "ConVex", and there are a few ways they obtain these servants. Sometimes the ConVex come to the Vex, seeking knowledge and getting nothing in return.
Other times, the Vex will kidnap unsuspecting players and force them into the role. Players who try to escape usually end up killed. Players who are resistant deal with severe memory removal. Other Players can be bought for diamonds and cake as if they're nothing but an object.
ConVex can use Vex magic, but most aren't allowed to. Vex and ConVex can also have a mental bond which leads to sharing magic, among other things(this comes back).
Vex can also have Player disguises(like Scar), which makes luring away and kidnapping unsuspecting Players easier.
Pre-Hermitcraft
Long before Hermitcraft, or even before meeting Scar, Cub was a ConVex with no memories of his life before. He was completely human at the time, and he was in a state where he couldn't really do anything for himself.
Then Scar showed up, offering to serve the same Vex that Cub had served. At the time, Cub thought Scar was a regular Player like himself, and Scar presented himself as such.
The two didn't talk a lot at first, but whenever they did, the conversations were initiated by Scar, who was trying to learn more about Cub.
For the start of this, Cub's answers tended to not be his own, but eventually he did start opening up to Scar and eventually Scar started using healing magic on Cub's wounds(the Vex punished him a lot). 
Now, Cub had never seen a Player with magic, let alone a ConVex. And he could tell it was definitely Vex magic, which confused him because Vex don't teach ConVex about their magic.
Scar claimed that his Vex did teach him, though. They wanted him to be able to defend himself. He shows off some of his magic and Cub is in awe because he never imagined that Players could access this kind of magic.
He asked Scar if he could teach him, and Scar said he would one day, but he couldn't yet. 
The two eventually get into a conversation about Scar's Vex and it leads to him talking about how they let him leave the mansion and that he could come back if he wanted to.
This led to discussing the free will that most ConVex aren't allowed and that's when the Vex intervened, angry that their newer ConVex was ""tainting"" Cub. 
Of course, Cub was actually terrified for what felt like the first time in a while(he just doesn't remember the previous times). Scar ran over and held him close, and accidentally revealed his true form due to the raw emotions that came from seeing his new friend hurt.
This leads to Scar paying for the Vex to leave Cub alone.
At this point, Scar takes Cub to his mansion, and heals him up. 
Cub does remember Scar's true form, and how he saved him despite being a Vex. 
The two pretty much become roommates, living together in the mansion and talking about whatever. Scar teaches Cub how to use magic and it's really sweet.
Eventually, Scar admits that he's struggling with splitting ways with Cub. He doesn't want to force him to stay, he'd be no better than the Vex, but he also doesn't wanna lose his first real friend.
The two come to a mutual decision for Cub to become Scar's ConVex, but unlike how it had been with the last Vex, this relationship was only to be mutually beneficial.
Due to the mental link the two shared doing this, they started slowly becoming more like the others' species. Scar needed to eat and sleep like a Player, and Cub was getting a better hold of magic + a pair of Vex wings.
It was apparent that the two of them were also beginning to share magic. As in, if one of them has more magic, the other has less.
Eventually the two of them decide to leave the mansion and explore, hoping to find a home that actually suits them. 
This leads to Cub having to help Scar adjust to being a Player, and Scar having to help Cub stabilize his magic. This also leads to their duo becoming a trio, as Scar finds and befriends a cat. Yes that cat is Jellie.
Eventually they decide to try and explore a different world, which leads them to realizing they don't have communicators and are going to need some. 
Cue them ending up at a world hub(portal at spawn, no need for comm) and trying to find someone who can help them get new comms.
This results in them meeting one of the soon to be Kingdomcrafters. Aka, this is how the two of them meet Iskall. The two ask Iskall if they know how to make communicators, and they do but they can't make new ones. 
This leads to the duo getting temporary comms until they can get more permanent ones. 
Iskall notices how their outfits are rundown and offers to show them around and take them to a shopping area to get new clothes.
This may or may not lead to them meeting a few of the other soon to be Kingdomcrafters, specifically Ren and Wels. 
(This part is kinda blurry in my mind but the 5 of them end up becoming friends and end up being all part of KC together until they go to HC)
Hermitcraft
(I have only watched HC7 and have vague knowledge of HC6 n HC5 so we are skipping a lot here, I will only list the notable stuff)
There’s a reason the two of them forgot what they did in S5, and it’s because Scar used his magic to put a curse on the Vex masks. It pretty much locked their memories of what they did in S5 behind said masks, and they only remembered it if they put it on. This was mostly to keep a balance on their magic. 
The two’s power imbalance makes certain magic take a weird toll on their bodies. This explains the reason Cub appeared more Vex like during Demise while Scar didn’t. Scar had less of the shared magic at the time and thus it did not mess with him as negatively.
General
Despite his Vex trauma, Cub has definitely coped better with it then most would. He finds comfort in being able to use the magic of the very things that tormented him. It's like reclaiming a part of himself that was stolen.
He's definitely the only one of the mayoral trio that had an office that was properly cleaned. 
When Scar needs a break from things, Cub tends to become Jellie's prime caregiver. To be fair she wanders around a lot even when Scar isn't taking a break, but Cub knows he'd freak if Jellie was left unattended.
During the base swap, Cub temporarily grew in goat horns. Sadly they're gone now, but he still has fluffy ears! And they're blue because of his magic so that's even better!!

The s/o being an idol(who's theme gravitates around their shiny Charizard) from another region, participating with special endorsement from Rose(for mutual exposure), earning them some scorn from locals? But then proving they actually deserve said endorsement and even manage to snatch a draw against the Champion's Gigantamax Charizard with their own Mega Charizard X! 💖💖💖

Raihan
Chances are Raihan already followed the Kanto idol on social media long before they came to Galar.
He probably found out about you because of your shiny Charizard. He’s low key kinda jealous - a shiny Charizard would look really cool on his team.
He’s pumped to meet you. Raihan wants at least three selfies with you. He’d probably love an idol s/o. He’s also a bit of a celebrity who likes being in the public eye, so Raihan would enjoy dating someone with similar popularity status (he’s not trying to social climb, he just likes the relatability) (plus y’all would be a power couple).
Despite his internal excitement, he tries to play it cool (keyword: tries). Raihan accidentally lets it slip that he’s been a follower for quite a while (like bringing up some small detail only a long time fan would know).
Raihan’s pretty irritated with the mixed reviews on a foreign idol participating in some Galar exhibition matches and tournaments. Raihan feels like the Galar trainer scene should be open to anyone, especially if it’s some strong competition.
Types up a couple of posts expressing his enthusiasm that a Kanto superstar is participating and that any opposition can shut up about it.
Raihan likes intense battles. So if your fighting style is dramatic, Raihan will be captivated by it.
Obviously, Raihan wants to win any battle he’s in. But if you beat him (he finds himself oddly more attracted to you because of it) or he doesn’t get matched up against you - Raihan’s rooting for ya.
But he’s a little torn when you fight Leon. The applin of his eye against his greatest rival? Raihan isn’t sure who he’s rooting for but he’s on the edge of his seat.
When your battle against Leon ends in a draw, Raihan is floored. Raihan will rewatch the fight several times (mostly because he’s smitten by you but also he’s trying to pick up tactics to beat Leon with).
If you have to return back to your home region, Raihan visits you at least once a month. He’s your biggest fan after all.
Piers
Piers might have no idea who you are. Despite being a gym leader, Piers has big hermit vibes. He’s from a somewhat unknown and rundown town, he doesn’t follow the status quo, and occasionally he misses big events. In short - Piers does his own thing
So unless your music is grunge or rock, Piers probably hasn’t heard of you.
That’s not to say he isn’t interested! But the first thing that catches his eye is your use of mega evolutions. Piers doesn’t dynamax, so when he watches a trainer send out a mega evolution to fight a Gigantamax Pokémon, he’s intrigued and a little impressed.
From then on out he tries to get some info on you. Piers asks Marnie and some Team Yell members if they’ve heard of you.
If you sing, Piers downloads a few of your albums. He’d love to talk about music with you. If you offer to do a duet with him, Piers will be become uncharacteristically bashful. But then he’ll tell you he’d like to.
Compliments you on your aesthetic. Piers appreciates trainer fashion that mimics the Pokémon they train.
Piers won’t publically get involved with negative press you receive for being an “outsider” (mostly because the press don’t really talk to him) but he will do his best to comfort you. Piers is used to negative critiques and had built up a thick skin because of it. Piers tells you not to worry about it and shut them up by taking down the other gym leaders.
If you take the gym challenge and make it to Piers’ gym, he’s a little embarrassed of his gym “arena”. He knows as an idol you probably spend your days in glamorous venues and hopes you don’t critique his dingy little town.
Despite budding romantic feelings, Piers won’t take it easy on you. He’s eager to see if your Charizard is just for show or if it’s as strong as it looks.
Piers seems like he isn’t the biggest fan of Leon, so it’s easy for him to root for your victory over Leon.
“Stick it to him, Y/N.”
He’s slightly pessimistic so he isn’t too certain you’ll win but when the battle results in a tie (your mega Charizard X evenly matched with Leon’s famous Gigantamax Charizard no less), Piers is so proud of you.
Leon
Love at first sight
Just kidding! But from the moment he watches you battle, Leon is ready to meet you.
In fact, you probably piqued Leon’s interest before that. A challenger sponsored by Chairman Rose must be good.
He loves the Charizard aesthetic. He’ll ask if you think he’d look good in a similar get up.
Leon looks forward to fighting you. He’s especially excited to test his own Charizard’s strength against your shiny Charizard.
Puts to rest any arguments about a Kanto idol competing in Galar. Leon wants Galar trainers to be the strongest in the world, what better way to test that then with some friendly foreign competition?
Because you and Leon have matching starters, some fans start shipping you two. Leon acts oblivious to this information, but the fan art makes his heart swell. He hoped your fan base would like him. It gives him even more confidence to make a move.
Leon’s a lot more flirtatious with you than he is the other challengers and it does NOT go unnoticed.
Nevertheless, Leon isn’t going to go easy on you. For his title, Galar pride, and perhaps in hopes to impress you - he holds nothing back.
Leon coyly asks you out before you fight him. He tells you winner buys dinner.
So when the dust settles and both Charizards faint? He later chuckles and offers to split the bill.
But in moment? Leon’s stunned. He can see why you have such a large following. Going toe to toe with Leon’s Charizard is no small feat. But to whip out a Mega Charizard X against Leon’s Gigantamax Charizard? Unprecedented.
Leon’s completely engrossed in the battle and dazzled by your style and tactics.
Afterwards, he asks you to stay for a while in Galar. Leon knows you probably have responsibilities to return back to in Kanto, but he wants to keep you to himself for a little bit longer.
