Big big feast with many friends! Shout out to @pooty2t for manning the bread and @scuba-spaghetti for being a great general sous chef and rib sourcer!

Used the same crab and egg flavors as the barometz. I liked it, but I didn't have enough sauce to go around! The bread was buttery and fluffy and the sauces salty and the eggs poached so soft.

The vegetables were more flavorful than I expected with the vegetable broth used for the gelatin. I know they were supposed to be bland but I didn't want to do that to feed my friends. It's a Ukrainian recipe I found and the fresh basil really makes it pop.
The fish loaf did not set properly so I didn't get a good picture of it. It was also kind of meh.
I didn't get a good pic of the soup before it got demolished, but it was a lot of people's favorite! Very Thanksgiving mess of a flavor. The husbando found an exotic meats shop where I was able to get rabbit legs and I could break it down on my own! Browned in butter and slow cooked, with onions and with potatoes added later.

And the ribs oh the ribs. Slow roasted for 2.5 hours, glazed with a impromptu glaze (mainly hoisin, with some sugar, ketchup, soy, vinegar, sesame oil) and broiled for like 15 mins. Tender and fatty. Absolutely decadent.

lacquered spam, egg and rice

if you see a spelling error in the image.. no you didn’t..
spam is a constant in my kitchen. it keeps forever and it’s so versatile. this an originally Hawaiian or Japanese recipe with Korean flavours in the glaze.
recipe:
dice the spam then fry over medium- high heat. it will not need additional oil as spam ‘naturally’ (?) has fat in it.
once nicely brown pour in a mixture of equal parts gochujang, sugar, ketchup, soy sauce and a splash of vinegar. the ketchup is really the key ingredient for this one.
once sticky, serve with rice, a fried egg and optionally kewpie mayo and nori.

I was never a big brisket fan. Soft, wet, brown meat just isn’t my thing. My mother, who was a very good cook, and every other woman in the family, served the meat with pan juices and overcooked onions and carrots.
It was one of the only recipes of my Mom’s that I didn’t like.
So when it was my turn as woman of the house this was not a dish I ever cooked for the holidays.
Then my sons-in-law came along and wanted to know “where’s the brisket?”
I had to find a way that satisfied the whole crew.
After a while I discovered Texas style barbecued brisket: tender meat glazed with thick, tangy sauce and crispy ends and outsides. It was a transformative moment, gastronomically speaking
I wish my Mom was here to try it!
Brisket is expensive, so I don’t make it often, but when I do I always pre-cook it to tenderness this way, then glaze it with barbecue sauce (instructions for when to do what are in that post too).

This year, this is the sauce I am using:
TEXAS STYLE BRISKET
2 tablespoons olive oil
1 large onion, finely chopped
1 medium clove garlic, chopped
1 teaspoon finely chopped chili pepper
2 cups ketchup
1/2 cup apricot jam
1/2 cup orange juice
1/4 cup honey or maple syrup
1/2 cup apple cider vinegar
1/2 cup brown sugar
pinch of ground cloves
pinch or two of freshly grated nutmeg
Pour the olive oil into a saucepan over medium heat. Add the onion and cook for about 2 minutes or until slightly softened. Add the garlic and chili pepper and cook briefly. Add the ketchup, jam, orange juice, honey or maple syrup, apple cider vinegar, brown sugar, cloves and nutmeg and stir to blend them. Bring the mixture to a boil, reduce heat to simmer. Cook uncovered, stirring frequently, for about 15 minutes or until thick.
Makes about 2-1/2 cups

I am plotting, planning, prepping for a Family Road Trip, a Bro Trip - In General PTO/Vacation, a Short Term Meal/Diet Challenge, Next Year's Challenge (52 in 24), Possible Birthday Party for Myself, and What my First Real Cheat Meal is going to look like January 1st, 2024...
That's what's rolling through my head - helps me pass the time.
Beyond that - I don't feel like much is going on - Feel like I am in a limbo. I definitely feel better than I did last week - teetering back to neutral - hopefully moving towards the "positive".
Found a new respect/passion for reading comics... I've enjoyed them in the past but found some nice trades recently that have increased the flame.
Movie-wise - I am fizzling out. Nothing looking good - sitting good lately. Hopefully Barbie can rekindle my love.
In other news I've been taking naps during my work lunch. They have been greatly needed and cherished but haven't cured my sleep pains.
Had another plateau in weightloss - no sweat - been feeling good about my body lately.
Basically... been just a chill week.

Ingredients List – Baked Chicken Wings 
Chicken Wings 
Ginger, grated 
Garlic, grated 
2-4 tbsp. soy sauce
1 tbsp. sesame oil
Salt and pepper as per taste 
Sriracha or chili garlic sauce
Hoisin sauce
Oyster Sauce (optional)
Chinese Cooking Wine (optional)
Honey or Ketchup 
Vinegar or Lemon Juice
White Sesame Seeds (for garnish)
Thinly sliced red chilies (for garnish)
Thinly sliced spring onions (for garnish)
Steps to the recipe 
For the baked version of this recipe, start with preparing your asian chicken wings marinade. Coat the chicken wings properly with a simple marinade of grated garlic, grated ginger, soy sauce, sesame oil, salt and pepper.
Let the raw chicken wings sit in this marinade for at least 2 hours. To get more enhanced flavours from these asian chicken wings, you can also keep it overnight. 
Meanwhile, in a small-sized non-stick pot, heat some sriracha, hoisin sauce, soy sauce, oyster sauce, honey and vinegar. Once this tempting sauce mix comes to a bowl, turn off the burner and add chinese cooking wine.
Preheat the oven and then bake your asian chicken wings for at least 20-25 minutes. Once the chicken is cooked, take it out from the oven and use your prepared sauce as glaze and brush it over the wings. 
Bake the wings again for a few minutes, preferably for 8 to 10 minutes. Lastly, finish your asian chicken wings recipe with a generous sprinkle of sesame seeds, red chilies and spring onions.
