We put an awesome couple of days on the books this week, Sweet Thangs! 🥳 Today Mz Honey's 🍯Angels, Lilly, Asha, and Jing Wei 😇and I cooked up quite a feast. We made an incredible Ramen bowl 🍜with miso honey chicken, garlic and black vinegar kale, a soft boiled egg, and crispy radish matchsticks. Then we baked the simple classic Devil's food🧁 cupcakes. (Can't stop thinking devilish thoughts! What a show) But I digress... We are about to be on Spring break and L&J both have a birthday so we partied a lil bit today. This week we also spoke about 😰anxiety, 😓loneliness, and when someone you love let's you down. They are feeling their way through big emotions 😮‍💨and heavy concepts. As we worked each of us confided and shared. I'll never get over having their trust 💝 so implicitly. On a lighter note, yesterday my💪🏽 Legends and I made vegan 🌮nachos. We made the salsa, the chili paste, the beans and brought it all together they loved them. All but 2 children all day didn't have a second or third portion. I even had takers for the leftover vegan 🌶️ chili. One of the many hilarious moments was when he Alex asked me not to tell his mom he loves the Vegan food I make. 🤣 He said she's not a good cook but she's jealous and would make him eat her attempts.🤣. These little nutty humans made an Amazing already month, unforgettable. 🧇Miss Honey Toasted Coconut Oatmeal Waffles🧇 1-2/3 cups all-purpose flour 1 cup quick-cooking oats 1 cup shredded (NOT dessicated) coconut 3 teaspoons of baking powder 1/2 teaspoon ground cinnamon 1/4 teaspoon salt 2 large eggs, lightly beaten, room temperature 1 cup whole milk 1/2 cup Greek yogurt 6 tablespoons brown butter, melted 2 tablespoons dark brown sugar To eat with ... We like malted yogurt, lemon curd, sliced bananas, berries, or butter & maple syrup Directions In a large bowl, combine flour, oats, coconut, baking powder, cinnamon and salt; set aside. In a small bowl, whisk eggs, milk, butter and brown sugar. Add to flour mixture; stir until blended. Pour batter into a lightly greased waffle iron (amount will vary with size of waffle iron). Close lid quickly. Bake according to manufacturer's directions; do not open during baking. Use fork to remove baked waffle. This week's 🏫classes were some of the best yet!!! Yesterday we made over 12 liters of cauliflower and 🥦 cheese 🍲 and 5 dozen buttermilk 🥐 biscuits. The classes were so great yesterday. We laughed🤣 so hard at the boys "roasting" each other and being cheeky. Then I had to showcase my own 👑"Roasting Mastery" by giving each boy a gentle funny little ribbing. We were literally in stitches that carried into today when I took some🍿 popcorn to them in the Library. I'll never forget them laughing so hard together, it was awesome!! It's the tail end of 🥶🌨️ Winter here in Tassie and it has been raining heavily since Saturday. Lots of indoor recess and no garden lunches had my Homies bumming so today we made Vegan taco meat for killer bowls, tacos, and quesadillas. 🌮🌯🥗 We even had a sweet baking session where we made Double chocolate chip and pepita🍪 cookies. My kiddos really needed some fun, and I can safely say the giggles proved we found the fun zone! These 3 Legends did all the taco prep and cookies portioning for both classes today. 😇They wanted to help get everything done, so they skipped eating to cater for their schoolmates! Hey Good People!!! It's been a minute hasn't it. I've been recovering from pneumonia and I've missed sharing Miss Honey adventures with y'all. 🥰 This pic is a shot of the epic🎃 Pumpkin Preppers. Thibaut grew us some huge Kent pumpkins that were more than ready. So we peeled, diced, and roasted over 5 kilos of pumpkin. We then made a killer pumpkin and lentil chili and a smoky pumpkin chowder.🥣 The leftover pumpkin was seasoned and roasted and frozen for future soups, stews, and lasagna. We had 3 groups of eager 5/6 grade helpers. They were awesome. Really capable and excited to be helpful. We had some really great talks about ♥️Juneteenth, America's gun issues, and what it feels like to watch the school 🏫shootings on the news. It's the first time since taking this job that I couldn't answer their questions. 😢 It also was the first time I cried at school. These Legends hugged me and told me they were glad I'm safe and with them. Well Sweet Thangs, Miss Honey🍯 is officially on Summa Vacation! My gorgeous kiddos and I really pushed through our Broad Bean extravaganza to make 10k of roasted Broadies that were gobbled up before we could even think of putting them up! We them went through another 15 kilos that we pickled for the Holiday Hampers the kiddos got to take home. We also shared our Roasty Toasty Broadies recipe with the Community (pic of toasties taken by A.Mills). We also made 3 different herb salts, hot cocoa mix, and candied peels that went home for the holidays with the Kiddos. I have not the words or skill to describe what has happened inside my heart through the work with these children. It seems as a spring of ebullient joy has manifested. The babies were all so incredibly great at teaching me so much about my hopes for tomorrow. They trusted me so fully by the time we got to these final lessons. They tried so many far away tastes. They shared. They worked. They cleaned. They told me their deepest thoughts and most felt emotions. They gave so freely and unselfishly. I was unprepared for the wisdom of Innocence. I'll never forget this first batch of Farmies. They planted such verdant promises of hope and legacy. Tomorrow really will be great. These children are on track to lead in a more inclusive, empathetic, open-hearted style than we ever were. 💓 Have a great holiday season and a great Summer. This little number was the new favorite of my school chums. It's Pineapple Chicken Teriyaki on coconut rice with sesame cucumbers. To keep to the budget I used ground chicken. It made the meal stretch to satisfy every kidlet that wanted a bowl full. The joy of the day was how they mowed through the cucumbers. I even made a few jars of dressing for the kiddos to take home. 😊 It was so well received I made it for dinner.
