Who or what is Jane?
You don't expect me to believe that Jane is just a 'maid'?

These are just my thoughts about who she might be. Meh ¯\_(ツ)_/¯ I thought I might tell you that I think some very ridiculous theories so- let's start :)
A spy (pftttt what a way to start) . But yeah, I have a suspicion that she plays a spy role for who? Probably Scotland Yards or other sources. But then again, why would they even suspect the Baron?
Jane might not be an entirely normal human being. Mei Rin said herself that she couldn't sense her presence. First of all, how did she even managed to sense someone approaching the Baron's room? There's no doubt that she already suspected Mey Rin and Ran Mao the first day they came to the place.
She works with Undertaker. Could be a possibility too, you know? It seems that she knew about the Baron more than the other maids who simply wants to bed him. She doesn't look like she wants it anyway. Maybe she was given a task and that is to protect the Baron's dirty work (blood transfusion and all that Sphere Music Hall yada yada) from getting known. Thus why she starts to be more cautious with the two newcomers.
A demon. YUP THIS IS BEYOND RIDICULOUS let's just skip this.
Baron's ACTUAL wife. This is crazy. But still can be true. But I couldn't really understand why she'd act as a maid and even lets her husband to sleep with other women. So this is a no from me, but the thought still occured anyway.
I find it very suspicious when she explained what the Baron tries to find in a women that resembles his late wife

May I just say that Jane has the dead anime mom hair so I’m thinking she won’t make it through this sub arc
The “mom hairstyle of death” does tend to be a red flag. However, Yana likes to keep us on our toes, so it’s anyone’s guess how this arc will turn out. At this point, we’re also not certain how closely Jane is meant to parallel Angela. She might be a mortal woman, but she might be something more.
That being said, if I were a betting woman, I’d place good money on the prediction that several people will probably die before the new maid drama is over. Let’s just hope that Mey Rin and Ran Mao stay safe!

Crack Theory: Who is Jane?
Okay, so after reading the latest chapter I got an idea. This is surely just a crack theory but why not share my thoughts? ;) So, what if Jane is actually Heathfield’s daughter?
I know this is far-fetched but hear me out. What made me wonder while reading this chapter is that Jane was talking all about how Heathfield is trying to find a woman resembling his dead wife...

...but she doesn’t really mention whether Heathfield also misses his daughter like that. His daughter died in that carriage accident as well and I would assume that a father misses his daughter at least as much as his wife. Yet from what Jane said Heathfield only seems to care about finding a substitute for his wife. Maybe that’s because his daughter has already been brought back?
We don’t know exactly how long ago that carriage accident happened, only that it was “several years ago”. But we do know that Undertaker managed to make a perfect Bizarre Doll of real Ciel, four years after his death. So it wouldn’t be impossible for him to have done the same for Heathfield’s daughter. And like he did with real Ciel, he might have also changed the child’s appearance a bit (like making her age according to how she should look today). The child in the picture (Heathfield’s daughter) certainly looks younger than Jane but so did real Ciel compared to how he looks now (and at least the hair color of the child resembles that of Jane).

As I’ve mentioned in this post, Jane knows suspiciously much about Heathfield and about what’s happening in the manor. This is knowledge that seems quite private. And while all the other maids are excited about Heathfield choosing one of them during the morning greeting, Jane seems quite relaxed and carefree about all that as if she knows that she won’t be chosen anyway. Also, she naturally seems to walk around in the manor after lights-out and I think the time she caught Mey-Rin wasn’t the first time she did that (note how tired she was the morning after Heathfield returned home).

Maybe after Heathfield’s wife and daughter died, Heathfield came to Karnstein Hospital because of the rumors about their experiments in hopes of reviving his loved ones. He probably met some of his current maids there but he may have also met Undertaker who later -- when he was able to do so -- revived his daughter first and promised to revive his wife as well if he finds a suitable blood source. And in exchange Heathfield provides the sect with the blood he gets from the maids who aren’t good enough for his wife. And in order to not reveal the truth he hid his daughter as the maid “Jane” so she can still live with him in his manor.
So even if it’s far-fetched, maybe Jane actually is Heathfield’s daughter.

I finally got around to reading Kuroshitsuji chapter 155. Before I try to catch up on everyone's thoughts and theories about what is happening, I want to give my quick take on the situation and this chapter...
My current theory is that Jane is telling the truth, the Baron loved his wife (perhaps child too) so much that he couldn't accept her death. He became one of the wealthy donors supporting the Aurora Society and eventually a supporter of UT and rCiel. I don't think the Baron and Jane's mission is just gathering blood for UT and rCiel. I think he is helping UT in his final step to perfecting the bizarre dolls, that would be replacing their souls. That is why he doesn't care what the maid look like as much as her compatibility and the "shape of her soul." I'm also guessing they haven't perfected the process yet either, which is why so many maids are disappearing.
As for Jane, I don't think she is any sort of supernatural being, as some have proposed. It could be possible Jane was once one of the nurses helping Rian at the hospital and that is how they met. But there is something about that that seems off to me. Then this panel has given me an idea for a new possibility for how Jane fits in to all of this...

I think it is very likely that Jane is a bizarre doll version of the Baron's wife. There is something about the sweep of the hair, the shape of the face, and the carriage of her body that seems similar to the faceless Baroness. It would explain why she does not act like a servant and her protectiveness to the Baron's secrets. It would also explain her obvious familiarity and affection for the Baron. And it would be the reason why she is still around after being the Baron's favorite when it seems that most disappear. Plus by being disguised as a maid means she can get more information about possible subjects. Not to mention that the tragic story of a widower baron looking for a new baroness amongst his maids is better honey trap than your average lecherous nobleman.
Edited to add: I've felt for a while that Undertaker final goal is to save OCiel's soul by merging it with rCiel body. Bring the twins together forever.

What About His Daughter?
Jane tells Mey-Rin that Baron Heathfield lost his wife and daughter in an accident several years ago.

Yet, there’s zero talk about his searching for a replacement to his lost daughter. He could easily be out there adopting children and giving them a better home, but he’s not. He’s focused solely on sleeping with all the maids. 
This is one reason that I pause that his sole purpose is replacing a lost loved one.

I think it’ll be interesting if it turns out that Chris is working for R!Ciel only because Undertaker promised him that if he begins to collect blood for R!Ciel, Undertaker could try to use some of it to bring back to life Chris’s wife or/and daughter
