While the barricade is still holding on, Hugo decides that this is his last chance to write about other barricades which he ordered to be taken by siege in June 1848. To make sense of what is going on, I read a chapter about Hugo in Jonathan Beecher’s Writers and Revolution: Intellectuals and the French Revolution of 1848 (2021). “Victor Hugo never forgot what he saw and did between June 22–26. Unlike our other writers, he participated in the fighting, and he did so on the side of the government.” Sigh.
This is where his lengthy explanations about the differences between uprisings and insurrections from 4.10.2 become relevant. He genuinely believed that everything that was going on in February 1848, before the abdication of Louise Philippe was revolution (insurrection), and what followed in June was uprising against the Republic. It was “a revolt of the people against itself.”  
The problem was: people had legitimate causes to rebel. “Once settled in the Assembly, Hugo was immediately confronted by the question of the National Workshops. Like many on both the right and the left, he believed the Workshops were a disaster. They produced nothing and were “an enormous waste of resources”… he urged that they be closed… He apparently believed that by voting to dissolve the National Workshops, he was not voting to shelve the question of unemployment. He was wrong.” Moreover, when workers erected the barricades and the confrontation began, “Hugo seems to have convinced himself that the best way to limit bloodshed was to defeat the insurrection rapidly. For the next three days he became a tiger, “haranguing insurgents, storming barricades, taking prisoners, and somehow remaining alive.”
According to an account from a member of the National Guard, Hugo was acting suicidally: “This man... was M. Victor Hugo, a representative for Paris. He was unarmed and nonetheless he led us; and while we took cover behind houses, he alone kept to the middle of the street. Twice I tugged at his sleeve, telling him: “You’ll get yourself killed!” “That is why I am here.”” But this was because he believed that he was acting under divine protection.
During these days, Hugo was not able to contact his wife and his mistress. He heard rumours that his house was burnt down, but finally found out that it was not true: “When he finally got back to the Place des Vôsges, he found fourteen bullet holes around carriage entrance, but everything in the house was intact: rugs, furniture, silverware, wall hangings, ancient swords and muskets, and above all his manuscripts. A leader of the insurgents, a school teacher and a reader of Hugo, had even led tours of the house for other insurgents.” The last detail is heartbreaking.
In this chapter, Hugo conveys his point of view on the events of June 1848, infusing them with symbolic images of two barricades: both quite eerie and ominous. He is exploiting his talent of horror writer again: “The Saint-Antoine barricade was the tumult of thunders; the barricade of the Temple was silence. The difference between these two redoubts was the difference between the formidable and the sinister. One seemed a maw; the other a mask.”
The sad thing is that after this chapter with its context in Hugo’s biography, it is hard to read his depiction of other barricades from other time without thinking of him as a hypocrite. This is Hugo — an embodiment of controversy.

Did Hugo try to suppress the 1848 Revolution? Because that would provide context for this very strange argument of the people “working against their own interests” and needing to be “suppressed.” His writing feels contradictory, with his horror at these barricades blending with divine elements of protest (and a three-story barricade is honestly just impressive in general). He tries to be respectful of the lower classes by insisting that he admires their spirit even if he disagrees with this protest, but he really just comes off as condescending, saying they fought against their own principles.
But it is still a barricade! He calls it a “sepulchre” but notes that it was filled with light – another “tomb flooded with dawn.”
Was that “some soldier/representative of the people” Hugo? He switches to the first person to recount the butterfly (which is a beautiful line, even if this isn’t my favorite digression).
I don’t know a lot about the 1848 Revolution, unfortunately, but I would love to hear the thoughts of someone with more context!

Brickclub 5.1.1 The Charybdis of the Faubourg Saint-Antoine and the Scylla of the Faubourg du Temple
Wow, Hugo. Fuck the fuck off.
We start off book five with.. I was going to say it’s the worst chapter in this book, but it’s been a while since the Argot digression so I’m having trouble saying that for certain.
It’s bad, though. It’s unbelievably bad.
Hugo, in a bout of pretty terrifying cognitive dissonance, explains, after all his talk about the necessity of revolt and revolution, why the revolt of 1848 was uniquely illegitimate and bad. Worse, he does it while praising the heroism of the poor stupid workers who had their hearts in the right place but were too deluded to realize they were standing against Progress and the True Revolution or whatever. It’s all very love the sinner hate the sin and how you have to admire and pity the revolting rabble for their spirit even as it’s obviously necessary to gun them down.
Because Hugo, of course, was on the government’s side in this fight. Rose’s footnote glosses breezily over what he actually did in it, but my understanding is that he was supposed to go and mediate with the rebels, but instead he gunned them down by the hundreds on his own initiative.
And yet, the only use of “I” in this chapter on the 1848 barricades is
There were a few corpses here and there, and pools of blood on the pavement. I remember a white butterfly flying back and forth in the street. Summer does not ab­dicate.
He’s rewriting himself as a mere observer in 1848, the way he legitimately was in 1832. Maybe he wishes he had been; I’d kind of hope so.
His politics evolved in the intervening years, but he never seems to have been able to say the workers in 1848 were in the right and he was in the wrong.
And, let’s be clear: the workers were in the right. They were responding to policies of the new republic that were designed to unemploy them and drive them out of Paris, because the reigning bourgeois liberals wanted to shut the working class left out of politics permanently. This all took place, of course, five months after the working class left fought on the barricades that put the bourgeois liberals into power.
The workers knew perfectly well what they were fighting for. It was their own survival against a hostile government.
But Hugo is grimly determined not to acknowledge any of that, so we get such shitty, demeaning, infantilizing, horrifyingly condescending takes as these:
Those are mournful days; for there is always a certain amount of right even in this madness, there is suicide in this duel, and these words, intended for insults-beggars, rabble, ochlocracy, populace-indicate, alas, rather the fault of those who reign than the fault of those who suffer; rather the fault of the privileged than the fault of the outcasts .
and
The exasperations of this multitude that suffers and bleeds, its misconstrued violences against the principles that are its life, its forcible resistance to the law, are popular coups d'etat and must be repressed. The man of integrity devotes himself to it, and out of the very love for that multitude, he battles against it. But how excusa­ble he feels it, even while opposing it; how he venerates it, even while resisting it! It is one of those rare moments when, in doing what we have to do, we feel something that disconcerts and almost dissuades from going further; we persist, we are compelled to; but the conscience, though satisfied, is sad, and the performance of the duty is marred by a pang.
June 1848 was, let us hasten to say, a thing apart, and almost impossible to classify in the philosophy of history. All that we have just said must be set aside when we consider that extraordinary emeute in which was felt the sacred anxiety of labor demanding its rights. It had to be put down, that was duty, for it was attacking the Repub­lic. But what basically was June 1848? A revolt of the people against itself.
and
it attacked in the name of the revolution--what? The revolution.
Fuck. This. Guy.
And it’s just. At odds with the entire rest of his own book? It feels like a Hugo who hasn’t READ the rest of this book? These barricades are a whole lot like the barricades we’ve been praising! Only these are Wrong, Deluded barricades, so they’re described as scary.
They weren’t deluded, they just disagreed with Hugo. For very good reasons.
Hugo’s truly horrifying “I had to do this for your own good” tone is making me think back to the other murdery revelations of this readthrough--the idea that Marius could have murdered Cosette if things had worked out differently.
And I can’t help but think Hugo deliberately spared his self-insert not only this experience of having fought on the wrong side of the barricade, but also the experience of murdering the republic herself. Like Hugo, Marius was profoundly capable of it--but unlike Hugo, fate or fatality or Providence intervened and stopped him.
And the bizarre and shocking part of that is--if it’s true, then some part of Hugo knows he was in the wrong, even as he claims here over and over that he wasn’t.
If this really is how these parts of the story fit together, some part of him knows that he murdered the Republic.

So today was the first day back for teachers (semester starts on Monday) and I was going over my notes from one of my classes and picking out things to share with another teacher who’s teaching the same class on one of our satellite campuses -
So anyway, does anyone want to read my lecture notes on thickening agents that I turned into a study guide (I wrote one up during the semester because we didn’t have any previously prepared materials because other instructors just skip or gloss over the chapter but I felt like it was worth the time to focus on the topic and also I’m a Nerd about stuff that makes things gooey).
You know what - I’m just going to post it under a cut below, because it’s fun and also an infodump.
**For context, even though my notes go into more specifics than the required reading, the book for the class is called How Baking Works by Paula Figoni (3rd edition, tbh needs an update but is a good reference), and the link I am telling them to refer to for more information on gelatin that includes conversion charts is here:
Thickening Agents Study Guide
1. Thickening vs. Gelling
1.1. Thickening = moving slowly, viscous, but still some movement while set
1.1.1. Either when sugars and proteins become loosely entangled or when water is absorbed and trapped by swollen starch granules, or when air bubbles in foams or fat droplets in an emulsion slow water movement.
1.2. Gelling = completely set, no movement whatsoever
1.2.1. When water and other molecules are prevented from moving around at all, usually when sugars and proteins bond or tightly entangle and form a larger network that entraps water and other molecules.
1.3. A number of thickening/gelling agents are interchangeable in different quantities.
2. Food-Grade Gelatin (Type A Gelatin) is produced by boiling or soaking pigskins in acid; the connective tissue breaks down into thick strands of collagen and thinner strands of gelatin
3. Powdered Gelatin is made from lower-grade pulverized sheets

5. Vegetable Gums = polysaccharides that absorb large quantities of water and swell to produce thick liquids and gels. Veg Gums are a nice source of dietary fiber (think fiber one Powder added to drinks)
5.1. Pectin = present in all fruits
5.1.1. LM (low Methoxyl) Pectin = Also comes from citrus peels or apple. Used in low-calorie jams and jellies, relies on calcium rather than sugar to solidify. Suitable for dairy-based products. Becomes increasingly firm as calcium is added until it reaches saturation point, at which time it begins to reverse in process and soften.
5.1.2. HM (high Methoxyl) Pectin = Comes as Rapid Set or Slow Set; extracted from citrus fruit peels. Rapid-Set for products that require suspension; Slow-Set for recipes that require a smooth texture with no suspension (such as a jelly)
5.1.3. NH (Thermal Reversible) Pectin = Modified LMP; Requires sugar and acidity to gel (and less calcium), and can be melted, set and remelted – requires heat to activate properly. ‘NH’ because of the Ammonia Hydroxide treatment it receives to modify (NH3(aq))
5.1.4. Apple Pectin = Derived from apples. Usually sold as a powder, can be used as a gelling and thickening agent, as well as a stabilizer. Is high in healthy carbs, dietary fiber, sodium, manganese, copper, and zinc – which is why it is a common ingredient in health supplements and pharmaceuticals. Additionally used in laxatives for natural purgative qualities.
5.2. Agar = Is a polysaccharide extracted from either of two varieties of red algae (ogonori and tengusa); has gelling/setting properties that behave remarkably like animal protein. Less agar is required than gelatin, and agar has the benefit of holding shape at room temperature. Cannot be used to stabilize aerated products, and does not whip well.
5.3. Carrageenan = a family of sulphated polysaccharides, name comes from variety of red seaweed found off the Irish Coast termed “Irish Moss”. Typically used in conjunction with meat and dairy products, for which they work particularly well, in large-scale production for stabilization, thickening gelling and texturing.
5.4. Guar and Locust Bean Gum
5.4.1. Guar Gum = Extracted from the endosperm of Guar Beans (legume); does not self-gel like LBG, but is more soluble. Requires high temperatures, high ph and longer times to cause gelling. Low-cost alternative to many other agents and starches, and is 8 times more effective than cornstarch. Used commercially, and stays stable when frozen/thawed.
5.4.2. Locust Bean Gum = Extracted from endosperm of bean on Carob Tree. Dispersible in hot and cold liquid, and converts to gel with addition of minimal amount of sodium borate. Is naturally sweet and is typically used to sweeten foods and as a replacement for chocolate.
5.5. Gum Arabic = Acacia/Senegal/Indian/Sudani Gum = Harvested from Sap of two Acacia Tree Species. Primarily used as a stabilizer (such as in sodas and cosmetics).
5.6. Gum Tragacanth = derived from several species of legumes in the genus Astragalus (Tragacanth, lit. “Goat + Thorn”, which is common name). Largely produced/exported from Iran. Is viscous, odorless, and tasteless water-soluble sap. Traditional binder for pigments in artist’s pastels, and main gum used in fabricated Gumpaste.
5.7. Xanthan Gum = derived from a species of bacteria, Xanthomonas Campestris (same bacteria which causes a variety of plant diseases, such as black rot in brassicas and bacterial wilt in turf grass). Produced via fermentation of glucose and sucrose. Is used to stabilize emulsions (is not an emulsifier in itself). Also helps suspend solid particles in liquids. Commonly used as a thickener in egg white substitutes and to build matrix in gluten-free products where there is no gluten-development.
5.7.1. Shear Thinning/Pseudo-Plasticity: Non-Newtonian behavior of fluids who’s viscosity decreases under ‘shear strain’. Examples Ketchup and Salad Dressing.
5.8. Methylcellulose = “Modified Vegetable Gum” an emulsifier and bulk-forming laxative. Unique property of Setting when Hot and Melting when Cold – commonly used in ice creams for this reason.
6. Starches = Starch molecules are polysaccharides that are arranged in one of 2 ways: either as long, straight chains or as short, but highly branched chains.
6.1. Amylose = long, straight chain starches
6.1.1.  Clouds when cooled
6.1.2.   Firm, heavy-bodied gel when cooled
6.1.3.   Not freezer stable
6.1.4.   Thicker cold than Hot
6.1.5.  Masks flavors
6.2. Amylopectin = short, branched chain starches
6.2.1.   High Clarity
6.2.2.   Thickens, but does not Gel
6.2.3.   Less Likely to weep over time
6.2.4.  Less likely to weep when thawed (more freezer-stable)
6.2.5.  Same thickness hot or cold
6.2.6.  Less likely to mask flavors
6.3. Cereal Starches = extracted from endosperm of cereal grains
6.3.1. Cornstarch
6.3.2. Rice Starch
6.3.3. Wheat Starch
6.3.4. Waxy Maize
6.4. Root Starches = Extracted from roots/tuber plants
6.4.1. Potato Starch
6.4.2. Tapioca Starch
6.5. Modified Food Starches = Starches treated with one or more chemicals to possess more desirable properties or results. (i.e. increased stability with excessive heat/acid, texture, speed of setting)
