KHICHDI – AN ALL TIME FAVOURITE

 India’s super-food!

My earliest memory of Khichdi is my Dadi telling us a story, Ek tha Kauaa (Crow). Ek thi Chiriya (Sparrow). Kauaa laya Chawal. Chirya layi daal. Dono ne milke Khichdi banayee.

Before eating, the crow went to bathe. The khichdi was so yummy that the sparrow gobbled up all of it. When the angry crow slapped her, she cried out, “Hai mai mar gayi Ram duhaayi!” The fuming crow admonished her saying, "Chirya mayee, Chiriya mayee, kyun parayee khichdi khaayi?" And we would all clap in glee! Ah! The innocent joys of childhood! 

As I grew up, I started identifying khichdi with illness. When I became a mother, I realised that khichdi was perhaps the most nutritious food to give to my babies. Readymade baby food wasn't a patch on homemade Khichdi! Presently, I think Khichdi is a super-food. It’s easy to cook and easy on the stomach; tops in nutritive value and is delicious too. 

Folk lore says, “Khichdi ke hain chaar yaar –Dahi, Papad, Ghee aur Achar!" If you have a loose tummy, your best bet is Khichdi with dahi, to soothe inflamed intestines. If you want to make it crunchy, have it with Papad.  If you have stomach ache have it with aged lemon pickle. Adding ghee makes it great for serving to the old and infirm. The regular Khichdi is made with broken rice and Moong-dal. One can add red masoor dal or jawar or bajra too. Finely chopped veggies convert this humble dish into a balanced, highly nutritious meal. A little innovation goes a long way! 

I remember seeing 'Khichdi' on the Menu of a restaurant for the first time, while on holiday in Jaipur. Everyone was gorging on Dal baati churma and Ghevar. After days of travelling and eating heavy and oily food, my tummy felt terrible. Khichdi on the menu was like ambrosia. That’s perhaps the first time I appreciated its availability in a restaurant. 

My husband recalls a ten day stint in his childhood when his family was away and he was alone. The dinner menu for him every day was Khichdi and Caramel pudding! 

My mother used to make chana dal khichdi on Maaghi; the day after Lohri. She would make it for breakfast and make sure we all added ghee to it. I really thought it was just a tradition till one day she mentioned that it was meant to be eaten because we usually eat a lot of Gachak, Rewari and Til items on or in the run up to Lohri and this causes heat in the stomach. Khichdi topped with raw ghee, cools down the stomach! 

The yummiest Khichdi I ever had is the Bajre ki Khichdi that my Nani used to make in winter. It had pounded Bajri and Moth-dal in it. It was cooked in a pressure cooker and then left unopened in the courtyard all night, for the 'heat' element in it to escape. In the morning she would put ghee and red chilli tarka and give it to us with dollops of curd! Oh! Heavenly it was! 

Truly, simple fare is the best! The humble Khichdi made it to the Guinness Book in 2017 when India set the world record by preparing about 918 kg of Khichdi at the World Food India event. Chef Sanjeev Kapoor cooked and promoted it as a Brand India superfood. Yoga Guru Baba Ramdev, put 'tadka' into the Khichdi! 

Is your mouth watering? It requires minimal culinary skills and is ready in a jiffy! Try it … even Birbal the courtier of Akbar used to make it! Yeah!!!
