On today’s episode of the Coronavirus Cooking Diaries let’s talk about Branzino. Branzino is a mild white fish that gained popularity in Italian cuisine and cooking. Most often you will find it roasted whole but I picked up some nice filets and decided to cook them up. Branzino is also often referred to as European bass and provides a sweet tasting, flaky white meat. It is both fished and raised commercially, and is considered to be the most important fish currently cultured in the Mediterranean. I did a very simple preparation of the Branzino with some salt pepper and a quick fry in a pan with butter and oil for a couple minutes skin side down and about 45 seconds more on the meat side. A slash of lemon juice finished it off. I served it with some of the burst tomato sauce I made the night before. I also made some homemade French Fries for a little fish and chips action.
